Bu araştırmada ülkemiz içsularında bulunan dağ alabalığı {Salmo trutta macrostigma, DUMERÎL 1858)'nm sıcak dumanlama, tuzlama ve dondurulmuş ürün teknolojilerine uygunluğu ile işleme sonrası kimyasal yapısındaki değişimler araştırılmıştır. Sıcak dumanlanmış ve 4±0,5 °C'de depolanmış örnekler 1, 7, 14, 21, 28, 36 ve 51. günlerde; diğer örnekler 1, 7, 14, 21, 28, 36, 60, 90, 120, 150 ve 180. günlerde analize alınmıştır. Her analizde örneklerin; su, toplam lipit, toplam yağ asitleri, pH, TBA ve TVB-N analizleri ile yağ asitlerinin gaz kromatografîk analizleri yapılmıştır. Dumanlanmış ve tuzlanmış örneklerde aynı zamanda inorganik madde ve tuz tayini belirli aralıklarla gerçekleştirilmiştir. Taze ve işlenmiş balık örneklerinin fire oranlan ile genel kimyasal bileşimleri de incelenmiştir. S. trutta macrostigma' mxı işlenmiş örneklerinde en yüksek fire oranının (%24,923±0,234) kuru tuzlanmış örneklerde bulunduğu belirlenmiştir. Balıklara uygulanan tüm teknolojiler içerisinde en fazla su kaybının DS grubunda görüldüğü, toplam lipit değerindeki en yüksek oranın DS grubu örneklerde olduğu, toplam yağ asitleri değerinin tüm gruplarda düzensiz değiştiği, en yüksek inorganik madde (%21,470±0,009) ve tuz içeriğinin (%19,878±0,010) KT grubunda (180. gün), maksimum pH değerinin S grubu örneklerde (7,635±0,005) görüldüğü belirlenmiştir. TBA ve TVB-N bileşikleri tüm gruplarda depolama günlerine bağlı olarak artış göstermiştir. Gaz kromatografîk analizler sonucunda taze S. trutta macrostigma 'nın 316,3 ug/g miktarında doymamış yağ asitleri (SDmYA), 127,2ug/g miktarında doymuş yağ asitleri (EDYA) içerdiği saptanmıştır. Tuzlanmış (KT-S), sıcak dumanlanmış (DS-DF) ve dondurulmuş (F) ürünlerin depolanması sırasında genel olarak doymuş yağ asitlerinde artış, doymamış yağ asitlerinde azalış tespit edilmiştir. EBDmYA içeriğindeki en yüksek azalış 51. güne kadar DS grubu örneklerde (135,3 ug/g), 180. güne kadar DF grubunda (140,2 ug/g) saptanmıştır. Depolama süresi boyunca 2D YA değerindeki en yüksek artış F grubunda (145,5 ug/g), 51. güne kadar EADmYA değerindeki maksimum düşüş DS grubunda (150,8 ug/g) görülmüştür. S. trutta macrostigma' ya. uygulanan işleme teknolojileri sonucu, 4±0,5 °C'de depolanan sıcak dumanlanmış örneklerin 51 gün, diğer ürünlerin 180. gün tüketilebilirlik özelliğini koruduğu ortaya konulmuştur. Changes in the chemical composition of the mountain trout (Salmo trutta macrostigma, DUMERIL 1858), living in our inland waters, were determined after applying hot smoking, salting (brine solution and dry salting) and freezing technologies to find out the suitability of these processing techniques for mis species. Samples that were hot smoked and stored at 4.0±0.5 °C were analysed 1, 7, 14, 21, 28, 36 and 51 days after the experiments started, while all the other samples were analysed after 1, 7, 14, 21, 28, 36, 60, 90, 120, 150 and 180 days. At each analysis session, samples were analysed for their water, total lipid, total fatty acid, TBA and TBV-N contents and for their pH levels. Fatty acids were analysed gas chromatographically. Inorganic matter and salt contents of the smoked and salted samples were determined at given intervals. General chemical compositions and the weight loss in fresh and processed samples were also studied. Maximum weight loss (24.923±0.234 %) was measured in dry salted samples (KT) of & trutta macrostigma whereas maximum water loss was in hot smoked (DS) fish samples. Lipid values were higher in hot smoked samples while total fatty acid levels changed irregularly in all the groups studied. Maximum inorganic matter (21.470±0.009 %) and salt contents (19.878±0.010 %) were found in dry salted samples (KT ; 180 *) and the highest pH values (7.635±0.005) were measured in brine salted samples (S). TBA and TVB-N compounds increased with increasing storage time at all groups. Results of the gas chromatographic analysis revealed that fresh S. trutta macrostigma contained 316.3 ug/g unsaturated (XUFA) and 127.2 jig/g saturated (2SFA). In general an increase in the quantity of saturated and a decrease in unsaturated fatty acids were observed during the storage of all the processed products. Maximum decreases in SMUFA (Mono unsaturated fatty acids) content were determined in DS samples upto day 51 (135.3 ug/g) and in DF samples (hot smoked and stored at - 18±1 °C'de) upto day 180 (140.2 ug/g). The F group (applied freezing technology) showed the highest increase in XSFA level (145.5 ug/g) during the storage time and the maximum decrease in 2PUFA (Poly unsaturated fatty acids) level was observed in DS group (150.8 ug/g ). According to results of the present study it can be concluded that among the processing technologies applied in this study to S. trutta macrostigma hot smoked lamples could be stored safely at 4 °C for 51 days and that samples treated with other technologies for 1 80 days Keywords: Mountain trout, Salmo trutta macrostigma, Processing Technology, Chemical Contents, Storage, Fatty Acids.
