Bu tez çalışmasında tuzsuz hindi dönerleri üretiminde mikrobiyal transglutaminaz enzimi (MTG) ve bu enzimin yağsız süt tozu (YST) ve sodyum kazeinat (SK) ile kombinasyonlarının kullanım imkanları ve ürünün fizikokimyasal özellikleri üzerindeki etkileri araştırılmıştır. Ayrıca bu çalışma ile tuz miktarının düşürülmesine bağlı olarak oluşabilecek kalite problemlerinin (örn: pişirme kayıpları, tekstürel değişim) giderilmesi amaçlanmıştır. Bu amaca ek olarak, kanatlı eti dönerlerinin kesimi sırasında oluşan küçük et kırıntıları müşteriler tarafından tercih edilmeyen bir görünüm oluşturmakta ve ürün satışını olumsuz yönde etkilemektedir. Bu araştırma ile, kanatlı etlerinden üretilen dönerlerde kesim sırasında oluşan kırıntı et probleminin de giderilmesi amaçlanmıştır. Bu amaçlar doğrultusunda tuzsuz hindi döneri üretiminde % 1 MTG, % 2 MTG, % 1 MTG + % 0.5 SK, % 1 MTG + % 0.5 YST kullanılmıştır. Kalite kriterlerinin karşılaştırılması amacıyla % 1 ve % 2 tuz içeren iki ayrı hindi döner grubu da üretilmiştir. Yapılan analizler sonrasında uygulamaların etkinliği tespit edilmiştir. Araştırma sonuçları tuzsuz hindi döneri üretiminde MTG kullanılmasının özellikle tuz katılmamasına bağlı oluşan tekstür problemini giderebildiğini göstermiştir. Özellikle enzimin SK ile beraber kullanılması en iyi sonucu vermiştir (p<0.05). Tekstür probleminin giderilmesinde sırasıyla % 1 MTG + % 0.5 SK, % 2 MTG, % 2 tuzlu grup ve % 1 MTG + % 0.5 YST uygulamaları etkili bulunmuştur (p<0.05). Ayrıca enzim ve enzimin SK veya YST ile hazırlanan kombinasyonlarının son ürünün pişirme kaybı, nem miktarı ve duyusal özelliklerini olumlu yönde etkilediği; pH ve renk üzerine ise herhangi olumlu veya olumsuz bir etkisinin olmadığı tespit edilmiştir. Sonuç olarak tuzsuz hindi dönerinde oluşabilecek özellikle tekstürel kalite problemleri MTG tek başına veya MTG'nin SK ve YST ile beraber kullanılarak giderilebileceği tespit edilmiştir. In this thesis, possible usage of microbial transglutaminase (MTG) and its combinations with sodium caseinate (SK) and Skim milk powder (YST) in quality of turkey döner kebab production without using salt and their effect on physicochemical parameters of final product were investigated. The purpose of this study was to prevent quality deteriorations (e.g. cooking loss, textural problems) caused by a lack of salt in the product. In addition, when cooked döner kebab surface is shaved off, turkey meat is easily broken into small, non-uniform shaped meat pieces and these pieces are not desired by the consumer. Therefore the sale of the product is negatively affected. Thus, the research aimed to overcome this problem. To accomplish purposes mentioned above, turkey döner without salt was produced and each batch marination formulation was incorparated with 1 % or 2% MTG or 1 % MTG + 0.5% SK, or 1 % MTG + 0.5% YST. To compare quality charecteristics, turkey döner included 1% and 2% salt were also manufactured. Effectiveness of treatments on quality were determined. The results of this study indicated that the use of MTG can minimize textural quality loss caused by lack of salt in turkey döner manufacture. It has been observed that if the enzyme is combined with SK, or YST, its positive effect on texture is enhanced (p<0.05). Effectiveness of other treatments on textural improvement was ordered as follows: 1% MTG + 0.5 %SK, 2% MTG, 2% salt and 1% MTG + 0.5 %YST (p<0.05). Application of the enzyme and its combinations with SK or YST had a positive effect on cooking loss, moisture and sensory properties, however, there was no significant positive or negative effect on pH and color. As a result, the possible textural problems which may occur in turkey döner produced without salt can be overcome by the use of MTG and its combinations with SK or YST.
