Bu çalışmada, Eğirdir Gölü tatlı su ıstakozlarının cinsiyet ve boy gruplarına göre; toplam karotenoid miktarları, et verimleri ve etlerinin kimyasal kompozisyonları belirlenmiştir. Araştırmada, 2009 yılı Ekim ayı içerisinde Eğirdir Gölü.nden avlanan, farklı boy ve cinsiyet gruplarına ait 49 dişi ve 51 erkek olmak üzere toplam 100 adet tatlı su ıstakozu kullanılmıştır. Toplam karotenoid miktarı spektrofotometrik yöntemle, et verimi ise taze örneklerde yüzde olarak belirlenmiştir. Kimyasal kompozisyonun belirlenmesi kapsamında, nem, ham yağ, ham protein ve ham kül analizleri yapılmıştır. Tatlı su ıstakozunun; et kısmındaki toplam karotenoid miktarı, 3,59 mg/kg (90-100 mm, .)- 5,22 mg/kg (131-160 mm, .); kabuk kısmındaki toplam karotenoid miktarı; 19,43 mg/kg (90-100 mm, .)-22,20 mg/kg (131-160 mm, .) aralığında bulunmuş olup gruplar arasında istatistiki fark önemsiz çıkmıştır (p>0,05). Tatlı su ıstakozu etinin, nem oranı %79,02 (131-160 mm, .)- %81,04 (101-130 mm, .); ham yağ oranı %0,70 (90-100 mm, .)- 0,85 (101-130 mm, .); ham protein oranları %15,97 (90-100 mm, .)-%17,01 (131-160 mm, .); ham kül oranı %1,23 (101-130 mm, .)- %1,33 (90-100 mm, .) aralığında bulunmuş olup gruplar arasında istatistiki fark önemsiz çıkmıştır (p>0,05). Farklı boy ve cinsiyet gruplarının et verimleri arasındaki farklılık, istatistiki açıdan önemli bulunmuştur (p<0,05). Tatlı su ıstakozunun, kabuk ve et kısmının önemli oranda karotenoid içerdiği belirlenmiştir. Ayrıca etinin düşük oranda yağ ihtiva ettiği ve bundan dolayı diyet gıda olarak tüketime uygun olduğu düşünülmektedir. Bu nedenle özellikle son yıllarda azalan popülasyonlarının ve ülkemizdeki tüketiminin artırılmasına yönelik çalışmaların artırılması gerektiği düşünülmektedir. This study is a Eğirdir Lake of freshwater crayfish according to the gender and lenght, the total amount of carotenoids, meat yields and meat in the chemical composition was determined. Study, in October of 2009, is in the Eğirdir Lake fishery, and gender groups belonging to different lengths to 49 females and 51 males were used a total of 100 freshwater crayfish. Total carotenoid content by spectrophotometric assay, the yield was determined as a percentage of the fresh samples. Determine the chemical composition within the scope of the moisture, crude fat, crude protein and crude ash were analyzed. Freshwater crayfish.s meat section in the total carotenoid content, 3.59 mg/kg (90-100 mm, .) - 5.22 mg / kg (131-160 mm, .); shell along the total carotenoid content, 19.43 mg / kg (90-100 mm, .) - 22.20 mg / kg (131-160 mm, .) in the interval between the groups had increased statistically insignificant difference (p> 0,05). Freshwater crayfish meat, the moisture content 79.02% (131-160 mm, .)- 81.04% (101-130 mm, .), crude fat content 0.70% (90-100 mm, .) - 0.85% (101-130 mm, .), crude protein ratio 15.97% (90-100 mm, .) - 17.01% (131-160 mm, .), crude ash ratio, 1.23% (101-130 mm, .) - 1.33 (90-100 mm, .) in the interval between the groups had increased statistically insignificant difference (p>0,05). The meta yield of different size and sex differences between groups, statistically significant (p <0,05). Crayfish's shell and meat contains the carotenoid was determined in significant part. Also contain the meat of low fat diet and therefore is considered suitable for consumption as food. Therefore, especially in recent years, declining populations and efforts to increase consumption of our country are thought to be enhanced.
