Bu tez çalışması kapsamında, döner kebap üretiminde gökkuşağı alabalığı (Oncorhynchus mykiss), mavi yüzgeçli orkinos (Thunnus thynnus) balığı ve Atlantik somon (Salmo salar) balığının kullanım imkńları araştırılmıştır. Çalışmada gökkuşağı alabalığı, mavi yüzgeçli orkinos balığı ve atlantik somon balıklarından döner üretimi gerçekleştirilmiş ve döner örnekleri 4oC.de 30 gün, -18oC.de 60 gün süre ile depolanmıştır. Depolanma süresince döner örneklerinde pH, renk, tekstür, pişirme kaybı, test paneli, nem miktarı, protein, yağ, yağ asidi kompozisyonu, TBARS ve mikrobiyolojik analizler gerçekleştirilerek ürünlerin kimyasal, mikrobiyolojik ve duyusal özellikleri belirlenmiştir. Yapılan araştırma neticesinde, tüketicilere sağlıklı et ürünlerinin sunulması kapsamında duyusal özellikler, protein miktarı ve yağ asidi kompozisyonu bakımından alabalık, orkinos ve somon balık etlerinin döner üretiminde kullanılabileceği tespit edilmiştir. Balık döner üretiminde lipid oksidasyonu ve mikrobiyal yükü sınırlandırmada 18oC.lik depolama sıcaklığının 4oC.lik depolama sıcaklığına oranla daha etkili olduğu tespit edilmiştir. In this thesis, the use of rainbow trout (Oncorhynchus mykiss), bluefin tuna (Thunnus thynnus) and atlantic salmon (Salmo salar) in ready to eat döner kebab production was investigated. In this study, döner kebabs were manufactured by using rainbow trout, bluefin tuna and atlantic salmon, and döner kebab samples were stored at 4 ʻ C and -18 ʻ C for 30 and 60 days respectively. pH, color, texture, cooking loss, the test panel, measurement of the amount of moisture, protein, fat, fatty acid composition, TBARS and microbiological analysis were conducted to determine chemical, microbiological and sensory properties of döner samples during storage of the products. As a result of this study, it was determined that rainbow trout, bluefin tuna and atlantic salmon can be used for döner kebab production according to their sensory properties, protein content and fatty acid profile to provide healthy meat products to consumer. It was found that 18oC of storage temperature was more effective than 4ʻC for inhibition of lipid oxidation and microbial growth in the production of fish döner kebab.
