Bu tez çalışması kapsamında havuç mayşesi ve posasından elde edilen pektinlerin bazı özellikleri araştırılmıştır. Bu amaçla asit ekstraksiyon metodu seçilmiş, mayşe ve posa kullanılarak mayşe ve posa pektini üretimi gerçekleştirilmiştir. Elde edilen pektinler ile ticari pektin modifikasyon işlemine tabi tutularak modifiye mayşe, modifiye posa ve modifiye edilmiş ticari pektin elde edilmiştir. Çalışmada mayşe ve posadan elde edilen pektinler ve ticari pektin ile bunların modifikasyonu sonucu elde edilen modifiye mayşe, modifiye posa ve modifiye edilmiş ticari pektin ile ticari modifiye turunçgil pektinlerinde nem, kül, renk, esterleşme derecesi, amidasyon derecesi, galakturonik asit miktarı, FT-IR ve Cu (II) ve Pb (II) ağır metal adsorbsiyon kapasiteleri belirlenmiştir. Yapılan çalışma neticesinde posa pektininin esterleşme derecesinin mayşe pektinine göre düşük olduğu belirlenmiştir. Ayrıca elde edilen mayşe ve posa pektinleri ile ticari pektinin modifiye edilmesi ile esterleşme derecelerinin azaldığı tespit edilmiştir. Çalışmada ağır metal adsorplama kapasiteleri incelendiğinde mayşenin posaya işlenmesi sonucu elde edilen pektinde Cu (II) ağır metal iyonu adsorblama kapasitesinin arttığı, Pb (II) iyonu adsorplama kapasitesinin ise azaldığı belirlenmiştir. Ayrıca elde edilen pektinlerin modifiye edilmesinin pektinlerin adsoplama kapasitesini artırdığı tespit edilmiştir. Mayşe, posa ve ticari pektin ile bunların modifikasyonu sonucu elde edilen modifiye pektinlerde yapılan FT-IR ölçümleri sonucunda pektinler arasında bantlarda meydana gelen frekans değişikliği ile pektinlerde modifikasyon işleminin gerçekleştiği tespit edilmiştir. Yapılmış olan çalışma insan sağlığına olumlu etkileri bulunan pektinin üretiminde havuç mayşesi ve posasının kaynak olarak kullanılabileceği belirlenmiştir. In this thesis, some properties of pectin obtained from carrot mash and pomace was investigated. For this purpose, the selected method of acid extraction, using carrot mash and pomace, mash pectin and pomace pectin was produced. Pectins obtained from mash and pomace and commercial pectin was modified and modified mash pectin, modified pomace pectin and modified commercial pectin was obtained. In this study, moisture, ash, color, degree of esterification, degree of amidation, galacturonic acid content, the FT-IR and Cu (II) and Pb (II) heavy metal adsorption capacities was determined in mash pectin, pomace pectin, commercial pectin, modified mash pectin, modified pomace pectin, modified commercial pectin, modified commercial citrus pectin.The degree of esterification of pomace pectin were lower than according to the mash pectin. Also, the degree of esterification of mash pectin, pomace pectin and the commercial pectin was decreased by the modification. In this study, Cu (II) heavy metal adsorption capacitiy of pomace pectin was higher than mash pectin but Pb (II) heavy metal adsorption capacitiy of pomace pectin was lower than mash pectin. Also, the modification of pectins increased the heavy metal adsorption capacitiy. Mash, pomace and commercial pectin, and their modification as a result of the modified pectins, FT-IR measurements of pectins of bands occurring frequency change pectin modification process occurs have been identified. This study, found positive effects on human health has been the production of pectin carrot mash and pomace were used as the source of pectin. Keywords: pectin, carrot, mash, pomace, extraction.
