Bu çalışmada, sıcak dumanlanmış gökkuşağı alabalığı (Oncorhynchus mykiss W., 1792) filetolarının katkısız kitosan film, % 0,2 kekik (Origanum minutiflorum) ve % 0,2 biberiye (Rosmarinus officinalis) uçucu yağı ile zenginleştirilmiş kitosan filmlerle kaplanmasının 4±1 ºC’de bazı kalite özelliklerine etkisinin belirlenmesi amaçlanmıştır.Çalışmada gruplar içerisinde en yüksek nem içeriği; sıcak dumanlanmış filetolarda (Kf) 0. günde (% 72,52±0,91), kitosan filmle kaplanmış filetolarda (Kt) 0. günde (% 75,56±0,86), biberiye uçucu yağı ile zenginleştirilmiş kitosan filmle kaplanmış filetolarda (By) 7. günde (% 75,85±0,20) ve kekik uçucu yağı ile zenginleştirilmiş kitosan filmle kaplanmış filetolarda (Kk) 56. günde (% 74,20±0,69) belirlenmiştir.Kf, Kt, By ve Kk örneklerinin depolama süreleri sonunda sırasıyla, pH değerleri 6,38±0,01 (42. gün), 6,21±0,05 (42. gün), 6,19±0,03 (49. gün) ve 6,31±0,07 (63. gün) olarak, TVB-N (Toplam uçucu bazik azot) değerleri 31,93±0,84 mg/100 g, 27,73±0,00 mg/100 g, 28,57±0,84 mg/100 g ve 31,09±0,84 mg/100 g olarak, TBA (Tiyobarbitürik asit) değerleri 1,72±0,22 mg MDA/kg, 1,26±0,05 mg MDA/kg, 1,84±0,11 mg MDA/kg ve 1,72±0,11 mg MDA/kg olarak tespit edilmiştir.Yapılan mikrobiyolojik analizlere göre tüm örnek gruplarında toplam mezofilik aerobik bakteri (TMAB) ve toplam psikrofilik aerobik bakteri (TPAB) sayıları depolama sonunda önemli (P<0,05) oranda artarken koliform (K) bakteri tespit edilememiştir.Duyusal açıdan değerlendirilen tüm örnek grupları panelistlerce beğenilmiştir. Örnek grupları içerisinde, panelistlerce en çok beğeniyi kekik uçucu yağı ile zenginleştirilmiş yenilebilir kitosan filmle kaplanmış Kk örneklerinin aldığı belirlenmiştir. Duyusal analiz sonuçlarına göre renk, görünüm, tat, koku ve tekstür parametrelerinde bütün örnek gruplarında depolama süreci sonunda önemli (P<0,05) değişimler saptanmıştır. Kf ve Kt örnekleri 42. günde, By örnekleri 49. günde, Kk örnekleri 63. günde tüketilemez olarak tespit edilmiştir.Yapılan analiz sonuçlarından da anlaşılacağı üzere, uçucu yağlarla zenginleştirilmiş kitosan filmle kaplamanın ürünün beğeni ile tüketilmesinde ve raf ömrünün arttırılmasında etkili olduğu düşünülmektedir. In this study, it has been aimed to determine the effects of coating chitosan films enriched with thyme (Origanum minutiflorum) and rosemary (Rosmarinus officinalis) essential oil (0.2 % added) on some quality properties of hot smoked rainbow trout (Oncorhynchus mykiss W., 1792) during storage at 4±1 ºC.The highest moisture content was determined in hot smoked fillets (Kf) (72.52±0.91 %) and fillets coated with chitosan film (Kt) (75.56±0.86 %) on initial day, for fillets coated with chitosan film (By) (75.85±0.20 %) enriched by rosemary essential oil on 7th day, for fillets coated with chitosan film (Kk) (74.20±0.69 %) enriched by thyme essential oil on 56th day.At the end of storage period for Kf, Kt, By and Kk groups, pH values were determined as 6.38±0.01 (42nd day), 6.21±0.05 (42nd day), 6.19±0.03 (49th day) and 6.31±0.07 (63rd day) respectively, TVB-N (Total volatile basic nitrogen) values were found as 31.93±0.84 mg/100 g, 27.73±0.00 mg/100 g, 28.57±0.84 mg/100 g and 31.09±0.84 mg/100 g respectively, TBA (Thiobarbituric acid) values were found as 1.72±0.22 mg MDA/kg, 1.26±0.05 mg MDA/kg, 1.84±0.11 mg MDA/kg and 1.72±0.11 mg MDA/kg respectively.According to result of microbiological analysis, the numbers of total mesophilic aerobic bacteria (TMAB) and total psychrophilic aerobic bacteria (TPAB) in all groups were increased significantly (P<0.05) at the end of the storage period. But coliform (K) bacteria was not found in same groups.All sample groups were appreciated by panelists in terms of sensory characteristics. The highest appreciation was determined in Kk group which were coated with chitosan film enriched by thyme essential oil. According to the result of sensory analysis, it has been seen that significant (P<0.05) changes in all groups in terms of all parameters (colour, appearance, taste, odour and texture) at the end of the storage period. In the sample groups were determined as inconsumable for Kf and Kt on 42nd day, for By on 49th day, for Kk on 63rd day. According to result of the study, it has been thought that coating with chitosan enriched essential oils are effects on appreciated by consumer and increasing of shelf life.
