Bu çalışmanın amacı starter kültür kullanılmadan üretilen geleneksel fermente Türk sucuklarından izole edilen 51 adet koagülaz-negatif Staphylococcus ve 10 adet Macrococcus caseolyticus suşlarında enterotoksin yapısal genlerinin varlığının tespit edilmesidir. Bu amaçla, toplam 61 adet sucuk izolatında 18 adet enterotoksin yapısal geninin (sea, seb, sec, sed, see, seg, seh, sei, selj, selk, sell, selm, seln, selo, selp, selq, selr ve tst1) varlığı multipleks polimeraz zincir reaksiyonu (multipleks-PZR) ile araştırıldı. PZR denemeleri sonucu izolatların hiçbirinin enterotoksin yapısal geni içermediği tespit edildi. Bu çalışmadan elde edilen sonuçlar sucuktan izole edilen koagülaz-negatif Staphylococcus ve Macrococcus caseolyticus suşlarının enterotoksin üretimi bakımından güvenilir olduklarını gösterdi. The aim of this study was to detect the presence of enterotoxin structural genes in 51 coagulase-negative Staphylococcus and 10 Macrococcus caseolyticus strains isolated from traditional fermented Turkish sausages produced without using starter culture. For this purpose, the presence of 18 enterotoxin structural genes (sea, seb, sec, sed, see, seg, she, sei, selj, selk, sell, selm, seln, selo, selp, selq, selr and tst1) were researched by multiplex polymerase chain reaction (multiplex-PCR) in a total of 61 sucuk isolates. The PCR results showed that none of the isolates contain enterotoxin structural gene. The results of this study showed that coagulase-negative Staphylococcus and Macrococcus caseolyticus strains isolated from sucuk were safe in terms of enterotoxin production.
