Bu tez çalışmasında Isparta ilinde satışa sunulan bazı su ürünlerinin biyojen amin düzeylerinin belirlenmesi amaçlanmıştır. Çalışmanın gerçekleşmesi için gerekli olan materyaller donmuş hamsi, taze palamut, donmuş halka palamut, ton balığı konservesi, sardalya konservesi, konserve limon soslu uskumru, uskumru konserve sade, taze levrek, taze uskumru, soslu çipura filetoları ticari olarak satılan ve Isparta ilinde bulunan süper market ve taze olarak satış yapan balıkçılardan temin edilmiştir. Soğuk zincir kuralına uyularak Süleyman Demirel Üniversitesi, Su Ürünleri Fakültesi Gıda laboratuarına getirilip taze örneklerin iç organları uygun koşullar altında kontaminasyona izin verilmeden temizlenmiştir. Daha sonra örnekler mikrobiyal bir degredasyona uğramadan -18 derecede çalışan derin dondurucu konmuştur. Elde edilen bu örnekler biyojen amin analizleri yapılmak üzere Çukurova Üniversitesi, Su Ürünleri Fakültesi İşleme Teknolojisi ve Analitik Kimya laboratuvarlarına gönderilmiştir. Çalışmada elde edilen sonuçlara göre taze balık örneklerinde biyojen amin oluşumu daha düşük seviyelerde iken konserve balık türlerinde bu oranın daha yüksek olduğu belirlenmiştir. Örneklerde saptanan en yüksek histamin seviyesinin 8,16±0,39 mg/100g ortalama değer ile sardalya konservesinde bulunduğu görülmüştür. Amonyumun gruplar arasındaki değişimi önemli bulunmuştur.(P<0.05) Putresin biyojen amininin sardalya konservesinde en yüksek değere ulaştığı belirlenmiş ve gruplar arasında önemli (P<0.05) bir değişim gösterdiği saptanmıştır. Sonuç olarak tüm Biyojen amin değerlerinin gruplara göre değişimleri önemli (P<0.05) bulunmuştur. Belirlenen biyojen amin seviyelerine bakıldığında TMA değeri dışında örneklerin çoğunda insan sağlığı için risk oluşturabilecek bir seviyeye rastlanmamıştır. In this thesis, it was aimed to determine the level of biogenic amines of some fishery products those have been offered for sale in Isparta. The materials needed for the realization of the study are commercially frozen anchovy, fresh bonito, frozen bonito ring, canned tuna, canned sardines , canned mackerel with lemon sauce, pure canned mackerel, fresh sea bass, fresh mackerel, sauced bream fillets. They were supplied from supermarkets and fishmongers who sells fresh fishery products in Isparta. They were taken to the Faculty of Eğirdir Fisheries's food laboratory in Süleyman Demirel University by complying with the cold chain rules and internal organs of fresh samples were removed under appropriate conditions is not allowed to contamination. And then, these samples were put in a deep freeze that works at -18°C without microbial degradation. The obtained samples were sent for being biogenic amine analysis to Faculty of Fisheries's Processing Technology and Analytical Chemistry laboratories of Çukurova University. According to the results of this study, biogenic amine formation is lower in fresh fish products however this ratio appears to be higher in canned fish. Upon analyzing the results obtained from analysis, the highest histamine level detected in the samples is average value of 8,16±0,39mg/100g that belongs to canned sardines. The change of amonium between the groups was significant. It was determined that Biogenic amine of Putrescine have reached the highest value in the sardine canning and it has shown an important change (p<0.05) between the groups. As a result, the changes of all of the biogenic amines according to the groups was found important (p<0.05) and a level not seen in the examples pose a risk to human health according to these biogenic amine levels except for TMA.
