Türkiye'de karabuğday tarımı son yıllarda gelişme göstermektedir. Ürün ile ilgili istatistikler yetersizdir. Bu çalışmada üretici düzeyinde karabuğday üretim faaliyetinin teknik ve ekonomik durumunun belirlenmesi ile geliştirilebilmesi yönündeki eğilimlerin tespiti amaçlanmıştır. Buna göre çalışmanın amaçları; (i) karabuğday üretim faaliyetinde bulunan yöredeki işletmelerin sosyo-ekonomik yapısının belirlenmesi, (ii) karabuğday üretim faaliyetinin teknik yapısının saptanması, (iii) karabuğday üretim faaliyetinin ekonomik yapısının saptanması, (iv) sorunların saptanarak çözüm önerilerinin geliştirilmesidir. Çalışmanın ana materyalini, Türkiye'de karabuğday üretim faaliyetinde bulunan işletmelerden anket yöntemi ile elde edilen veriler oluşturmuştur. Gıda, Tarım ve Hayvancılık Bakanlığı Çiftçi Kayıt Sisteminde ürün ile ilgili kayıtlara rastlanılmamış, dolayısıyla Konya, Karaman, Çankırı illerinde İl Müdürlükleri ile görüşülerek anakitle hacmi 47 işletme olarak tespit edilmiştir. Bu illerde karabuğday yetiştiriciliği yapan 47 işletme ile görüşülmüştür. İşletmeler ortalamasında toplam arazi varlığı 457.59 dekardır. Karabuğday ekilen arazinin büyüklüğü ise 27.01 dekardır. Bu alanın toplam işletme arazi varlığı içindeki payı %5.90'dır. Karabuğday tarımı yapan işletmecilerin yaşı 45.57 yıl, eğitim düzeyi 8.38 yıl, aile genişliği 4.49 kişi, tarımsal deneyimleri 24.26 yıl olarak belirlenmiştir. Karabuğday üreticilerinin işletme dışı tarımsal işe sahibi olma oranı yüksektir (görüşülen işletmelerin %48.94'ü). Karabuğday üretiminde deneyimleri ise 1.70 yıldır. Dolayısıyla işletmecilerin karabuğday üretimi konusunda deneyimleri oldukça düşüktür. Bu durum karabuğday ürününün Türkiye'de yeni yeni üreticiler tarafından bilinmeye başlaması anlamına da gelmektedir. İşletmelerin temel tarımsal faaliyet bitkisel üretim olmakla beraber, büyükbaş hayvan yetiştiriciliği, küçükbaş hayvan yetiştiriciliği ve arıcılık faaliyetine de yer vermişlerdir. İşletmelerde Gayrisafi Üretim Değeri (GSÜD) 138745.99 TL'dir. Karabuğday üretim faaliyetinden elde edilen GSÜD, toplam GSÜD'nin %17.15'ini oluşturmaktadır. Araştırma kapsamında yer alan işletmelerin maliyet kalemlerinin hesaplanmasında tek ürün bütçe analiz yöntemi kullanılmıştır. İşletmeler ortalamasında dekara karabuğday üretim maliyetinin 491.31 TL olduğu hesaplanmıştır. Karabuğday üretim maliyeti %69.69'unu değişen, %30.31'ini sabit maliyetler oluşturmaktadır. En önemli maliyet kalemleri makine kirası ile arazi kirasıdır. Üreticiler ortalamasında karabuğday üretiminden elde edilen brüt kâr değeri 23793.14 TL, mutlak kâr 10522.63 TL olarak hesaplanmıştır. Nispi kârın ise 1.79 olduğu tespit edilmiştir. Karabuğday yetiştiriciliğinde en önemli sorunun başında, bu ürünün yetiştirme tekniğinin üreticiler tarafından yeteri kadar bilinmemesi gelmektedir. Özellikle toprak hazırlığı, ekim zamanı, ekim sıklığı, gübre uygulama miktarı, gübre uygulama zamanı, sulama zamanı gibi konularda üreticilerin bilgi eksikliği bulunmaktadır. Nitekim bu eksiklikler üreticilerin uygulamalarına da yansımıştır. Ürünün pazarlama aşamasında da çeşitli sorunlar bulunmaktadır. Bunların en önemlilerini; ürünün kabuk soyma gibi işlemesinde yaşanan sorunlar ile ürün fiyatındaki istikrarsızlıktır. Türkiye'de karabuğday üretimi son yıllarda yaygınlaşma göstermiştir. The main material of the study is the data obtained from the buckwheat producers in Turkey by questionnaire method. No records were found for the crop in the Ministry of Food, Agriculture and Livestock Farmer Registration System, so Konya, Karaman, Çankırı were interviewed with Provincial Directorates and the main mass volume was determined as 47 producers. In these cases, 47 producers of buckwheat were interviewed. In the average of the farms, the total land assets were 457.59 decares. The size of the buckwheat field was 27.01 decares. The share of this area in total operating land was 5.90%. The operators of buckwheat agriculture were 45.57 years old, education level were 8.38 years, family size were 4.49 persons, and agricultural experience were 24.26 years. The rate of buckwheat producers having non-business agriculture employment was high (48.94% of the farmers interviewed). Their experience in producing buckwheat was 1.70 years. Therefore, operators have very low experience in buckwheat production. This also means that the buckwheat product will start to become unknown by new producers in Turkey. The main agricultural activities of the enterprises included plant breeding, cattle breeding, small cattle breeding and beekeeping activities. The Gross Production Value (GPV) in the farms was 138745.99 TL. GPV obtained from buckwheat production activity was constituted 17.15% of total GPV. A single product budget analysis method was used to calculate the cost items of the surveyed farms. It was calculated that the production cost of buckwheat at the average of the farms was 491.31 TL. Fixed cost was calculated to be 30.31% and variable cost was accounted as 69.69% of total buckwheat production costs. The most important cost items were lease of machinery and lease of land. The gross profit value obtained from buckwheat production in the average of producers was calculated as 23793.14 TL, absolute profit was 10522.63 TL. The relative profit was determined to be 1.79. One of the most important problems in buckwheat cultivation was that the breeding technique of this product was not known by the producers as competently. Especially, there was lack of knowledge of producers in subjects such as soil preparation, sowing time, sowing frequency, fertilizer application amount, fertilizer application time, irrigation time. Indeed, these deficiencies were reflected in the implementations of the producers. There were also various problems in the product marketing stage. The most important of them were the problems in the process of product crusting and the instability in the product price. Buckwheat production in Turkey has been widespread in recent years. In order to increase the sustainability of buckwheat production, it is necessary to increase the knowledge of the producers about the product production technique, to formulate the experiments in terms of technical issues and to reflect this to the producer.
