Bu tez çalışmasında, Antalya Körfezi'ndeki tekir balığının (Mullus surmuletus, L., 1758) kimyasal kompozisyonu, amino asit ve yağ asidi bileşiminin aylık değişimi incelenmiştir. Çalışmada boyları 13,83-17,33cm, ağırlıkları 28,50-67,70g, olan toplam 80 adet tekir balığı kullanılmıştır. Kimyasal analiz sonuçlarına göre nem içeriğinin % 75,25 (Ocak) -79,64 (Mart), ham protein içeriğinin % 18,04 (Nisan)-19,60 (Ekim), yağ içeriğinin % 0,81 (Nisan)-3,38 (Ocak), kül içeriğinin % 1,31 (Nisan)-1,71 (Ocak) aralığında değiştiği belirlenmiştir. Sonbahar-kış döneminde protein değerinin yükseldiği tespit edilmiştir. Tekir balığında 17 adet amino asit bulunmuş ve glutamik asit Ocak ayında en yüksek değerle (2556,25mg/100) tespit edilmiştir. M. surmuletus'un temel amino asitlerin tümünü içerdiği, lizin ve lösin değerinin diğerlerine göre daha yüksek olduğu tespit edilmiştir. Tekir balığı valin, lösin ve izolösin temel amino asitlerini de içermesi nedeniyle beslenme, sağlık ve ticari açıdan önem taşımaktadır. Tekir balığından elde edilen temel amino asit sonuçlarının günlük alınması gereken amino asit miktarının bir kısmını karşıladığı belirlenmiştir. Yağ asidi analizleri sonucu palmitik asit (C16:0), oleik asit (C18:1n9c), dekosahekzaenoik asit (C22:6n3) ve stearik asit (C18:0) en yüksek seviyede belirlenmiştir. Tekir balığında ortalama n-3/n-6 oranı 2,69; ortalama n-6/n-3 oranı 0,39, ortalama DHA oranı % 26,99 ve ortalama EPA+DHA oranı %20,53 olarak tespit edilmiştir. Bu çalışma, tekir balıklarının yüksek miktarlarda içerdiği temel amino asitler, yüksek oranda EPA, DHA ve n-3 içermesi nedeniyle beslenme değerinin yüksek olduğunu göstermektedir. In this study, aminoacid and fattyacid contents of striped red mullet (Mullus surmuletus, L., 1758), in gulf of Antalya were investigated depending on the months. All analysis of striped red mullet meat was conducted separately. It was used of total 80 striped red mullet which length 13,83-0,535 -17,33-0,434 cm weight 28,50-4,624-67,70-6,815 g According to chemical analyse results, moisture content 75,25% (January)-79,64% (March), crude protein content 18,04% (April)-19,60% (October), fat content 0,81% (April)-3,38% (January), ash content 1,31% (April)-1,71% (January) range was determined. It has been found that during the autumn-winter period, the protein content is higher and lower fat content and it contained more fat in pre-ovulation. Seventeen amino acids were identified in striped red mullet, and glutamic acid was the most predominant (2556.25-209.840 mg/100g in January). M. surmuletus was found to contain the whole of the basic amino acids and to have a higher lysine and leucine value than the others. It is important for nutrition, health and commercial because it contains essential amino acids of valine, leucine and isoleucine. It has been determined that the basic amino acids obtained from striped red mullet meet some of the basic amino acid amount required to be taken daily reported. Acording to fatty acid analysis, the major fatty acids were palmitic acid (C16:0), oleic acid (C18:1n9c), docosahexaenoic acid (C22:6) (DHA) and stearic acid (C18:0). The mean ratio of n-3 / n-6 in the striped red mullet was 2.69-0.755%, the mean DHA ratio was 26.99-1.230%, and the mean EPA + DHA ratio was 20.53-3.942%. This study shows that high nutritional value of Striped Red Mullet is due to the basic amino acids contained in high amounts of EPA, DHA and n-3 content.
