Bu araştırma, 3 farklı gelişme döneminde 'Hicaznar' nar çeşidi ve beyaz meyveli bir mersin genotipinin bazı fiziksel özellikleri ile biyokimyasal içeriklerinin belirlenmesi amacıyla yürütülmüştür. Bu amaçla nar meyveleri 15 Ağustos (tanelerde renk dönüşümünün başladığı dönem), 6 Eylül (tanelerin pembe renk aldığı dönem) ve 3 Ekim (tanelerin koyu kırmızı renk aldığı dönem, ticati hasat zamanı), mersin meyveleri ise 3 Ekim (meyvelerin yeşilden beyaza dönmeye başladığı dönem), 1 Kasım (meyveler beyaz renk aldığı dönem) ve 29 Kasım (tam olgunluk dönemi) tarihlerinde hasat edilmiştir. Meyvelerde meyve eni, meyve boyu, meyve ağırlığı, meyve rengi gibi fiziksel özelliklerdeki değişimler değerlendirilmiştir. Yine meyvelerde suda çözünebilir toplam kuru madde (SÇKM), titre edilebilir asit (TEA) toplam fenolik madde (TFM), organik asit (malik, sitrik ve tartarik asit) ve bazı fenolik bileşenlerdeki değişimler incelenmiştir. Çalışmada meyve ağırlığı, meyve eni ve meyve boyu gibi fiziksel özellikler olgunlukla birlikte her iki türde de önemli oranda artış göstermiştir. Meyvelerinin kabuk renk değerlerinden L* ve b* değerleri olgunlukla birlikte değişmezken, a* değeri olgunlukla birlikte artarak narda -1.28 (15 Ağustos)'den 30.49'a (3 Ekim), mersinde ise -8.21 (3 Ekim)'den 4.40'a (29 Kasım) yükselmiştir. Her iki türde de meyvelerin SÇKM içeriği olgunlukla birlikte artarken, TEA içeriği azalmıştır. Nar meyvelerinin TFM miktarları 15 Ağustos, 6 Eylül ve 3 Ekim tarihlerinde sırasıyla 80308, 5896 ve 5696 mg/l iken, mersin meyvelerinin TFM miktarları 3 Ekim, 1 Kasım ve 29 Kasım tarihlerinde sırasıyla 1408, 794 ve 757.6 mg/kg olarak bulunmuştur. Narda fenolik bileşenlerden gallik asit ve ellajik asit, mersinde ise kuersetin içeriği olgunlukla birlikte önemli oranda azalmıştır. Buna göre nar meyvelerinde gallik asit ve ellajik asit içerikleri 15 Ağustos tarihinde sırası ile 97.2 ve 13.6 µg/g, iken, ticari hasat zamanında (3 Ekim) sırasıyla 29.47 ve 4.46 µg/g'a düşmüştür. Mersinde ise guersetin içeriği 3 Ekim tarihinde 10.20 µg/g iken, 29 Kasım tarihinde 6.33 µg/g'a düşmüştür. Mersin meyvelerinde tanik asit içeriğinin de olgunlukla birlikte önemli oranda azaldığı tespit edilmiştir. Narda organik asitlerden malik asit olgunlukla birlikte önemli oranda artarak 317.23 µg/g'dan (15 Ağustos) 545.2 µg/g'a (3 Ekim) yükselmiştir. Nar meyvelerinin sitrik asit içeriği olgunlukla birlikte önemli oranda azalarak 25323 µg/g'dan (15 Ağustos) 12666 µg/g'a (3 Ekim) düşmüştür. Tartarik asit ise sadece 3 Ekim tarihinde hasat edilen meyvelerde 466.8 µg/g olarak tespit edilmiştir. Mersin meyvelerinde malik asit ve sitrik asit içerikleri olgunlukla birlikte önemli oranda artarak, 3 Ekim tarihinde sırası ile 790.5 ve 86.6 µg/g, iken, ticari hasat zamanında (29 Kasım) sırasıyla 1037.6 ve 219.8 µg/g'a yükselmiştir. Mersin meyvelerinde tartarik asit içeriği ise olgunlukla birlikte önemli oranda azalarak 2063.3 µg/g'dan (3 Ekim) 754.1 µg/g'a (29 Kasım) düşmüştür.
This research was carried out in order to determine some physical properties and biochemical contents of fruits of pomegranate cultivar 'Hicaznar' and a myrtle genotype having white fruit in 3 different developmental periods. For this purpose, pomegranate fruits were harvested on August 15 (the time of the beginning of the color change in arils), September 6 (the time of the pink color of arils) and October 3 (the time of the red color of arils, commercial harvest time) and myrtle fruits on October 3 (the time when the fruit colour start turning from green to white), November 1 (the time of the white color of fruits) and November 29 (commercial harvest time). Variations in physical properties such as fruit weight, fruit width, fruit height and fruit color were evaluated. Changes in total soluble solids, titratable acidity, total phenolics, organic acids (malic, citric and tartaric acids) and some phenolic components were also investigated. In the study, physical characteristics such as fruit weight, fruit width, fruit height showed significant increase with the progress of maturity in both species. As the values of L* and b* did not significantly change with the progress of the maturity, the a* value significantly increased with maturity and reached to 30.49 (October 3) from -1.28 (August 15) in pomegranate and to 4.40 (November 29) from -8.21 (October 3) in myrtle. In both species, the content of total soluble solids of fruits significantly increased with maturity, while the content of titratable acidity significantly decreased. The amounts of total phenolics of pomegranate juice were 80308, 5896 and 5696 mg/l on August 15, September 6 and October 3, respectively, whereas the amounts of total phenolics of myrtle fruit were found to be 1408, 794 and 757.6 mg/kg on October 3, November 1 and November 29, respectively. The contents of gallic acid and ellagic acid in pomegranate and quercetin content in myrtle decreased significantly with the progress of the maturity. Accordingly, the content of gallic acid and ellagic acid in pomegranate juice decreased from 97.2 and 13.6 μg/g on August 15 to 29.47 and 4.46 μg/g on commercial harvest time (3 October), respectively. On the other hand, the quercetin content of myrtle decreased from 10.20 μg/g on October 3 to 6.33 μg/g on November 29. It has been determined that the content of tannic acid in the myrtle fruit decreases significantly with the progress of maturity. The malic acid content of pomegranate increased significantly with the progress of maturity, rising from 317.23 μg/g (August 15) to 545.2 μg/g (October 3). The citric acid content of pomegranate juice decreased considerably with the progress of maturity and decreased from 25323 μg/g (August 15) to 12666 μg/g (October 3). Tartaric acid was found to be 466.8 μg/g only in fruits harvested on October 3. The contents of malic acid and citric acid in myrtle fruit increased significantly with the progress of maturity and reached to 1037.6 and 219.8 μg/g at commercial harvest time (29 November), from 790.5 and 86.6 μg/g, respectively (3 October). The content of tartaric acid in myrtle fruits decreased significantly with maturity and decreased from 2063.3 μg/g (3 October) to 754.1 μg/g (29 November).
