Günümüzde gıda kaynaklı hastalıklar, genellikle patojenik mikroorganizmalar veya kanserojen toksinler içeren gıda ürünlerinin tüketilmesinden kaynaklanmaktadır. Yüksek toksik bileşenler grubunda yer alan aflatoksinler, incir, mısır, kırmızıbiber ve fındık gibi tarımsal gıda ürünlerinin büyük bir çoğunluğunda bulunan kanserojen bileşenlerdir. Gıda ürünlerindeki aflatoksin bulaşığının tespiti için yaygın olarak uzman analizi veya mikrobiyolojik yöntemler kullanılmaktadır. Mikrobiyolojik analizler, tahribatlı ve zaman alıcı süreçler içermekte olup oldukça maliyetlidir. Uzman analizi yaklaşımında aflatoksinli örneklerin Ultraviyole (UV) ışık altında göstermiş oldukları parlak yeşilimsi-sarı ışımadan (BGYF) yararlanılmaktadır. Ancak bu yaklaşım büyük oranda uzman tecrübesine bağlı öznel bir analiz olmakla birlikte, UV aydınlatma insan sağlığını tehdit etmektedir. Bu nedenle, gıda güvenliği problemlerinin çözümünde bilgisayarlı görmeye dayalı tahribatsız çözüm yöntemleri önemli bir gerekliliktir. Bu tez çalışmasının temel amacı, hiperspektral görüntüleme teknolojisi kullanarak aflatoksin ve yüzey küf kontaminasyonuna sahip incirlerin yüksek başarımla tespit edilmesine yönelik özgün yöntemler geliştirmektir. Tez çalışmasının ilk bölümünde, hiperspektral incir görüntüleri kullanılarak BGYF, aflatoksin bileşeni ve yüzey küf bileşeni arasındaki korelasyon analiz edilmiştir. Yapılan analizlerde, UV ışık kaynağı, aflatoksin bileşeni ve yüzey küf bileşeni arasında yüksek bir korelasyon tespit edilmiştir. Gerçekleştirilen çalışmanın ikinci bölümünde, aflatoksin ve yüzey küf yaklaşımı için hiperspektral görüntülerin sınıflandırılmasına yönelik etkili algoritmalar geliştirilmiş ve her iki yaklaşım içinde yüksek başarımlı sonuçlar elde edilmiştir. Son bölümde ise, örneklerin etiketleme ve sınıflandırma maliyetini düşüren yeni ve özgün bir maliyet tabanlı aktif öğrenme (mAÖ) yöntemi sunulmuştur. Önerilen mAÖ yöntemi ile eğitim kümesi için gerekli olan etiketli örnek sayısı minimum düzeye indirgenerek etiketleme maliyeti düşürülmüştür. Etiketleme maliyetinin azaltılmasına ek olarak, geliştirilen mAÖ yöntemi ile kontamine örneklerde yapılan sınıflandırma hatasının sebep olduğu yüksek sınıflandırma maliyeti minimum düzeye indirgenmiştir. Bu tez çalışması süresince geliştirilen algoritmalar farklı modalitelere sahip iki adet hiperspektral incir görüntüleri üzerinde test edilmiştir. Deneysel çalışmalarda elde edilen yüksek başarımlı sonuçlar, önerilen yöntemlerin gıda güvenliği problemlerinin tahribatsız tespitine yönelik güçlü potansiyelini göstermiştir.
The foodborne diseases are usually caused by the consuming of foods infected with variety of pathogenic microorganisms and cancerogenic toxins. Aflatoxins are group of toxic carcinogenic compounds, and many of the food commodities such as fig, corn, chili pepper and nuts may expose with these cancerogenic compunds. Traditionally, the expert analysis or microbiological methods are used to detection of aflatoxin contamination in food commodities. The microbiological analyzing methods are invasive, time consuming and highly expensive. The expert analysis approach exploits the bright-greenish-yellow fluorescence (BGYF) signal of contaminated commodities under Ultraviolet (UV) light. However, the expert analysing is subjective due to the highly depends on the experience of expert, as well as UV lights threats to expert health. Therefore, the computer vision based non-invasive solutions are very reasonable requirements to food safety problems. The main goal of this thesis is developing novel and efficient methods that are non-invasive and highly accurate by using hyperspectral imaging technology to inspect aflatoxin and surface mold contaminated figs. In the first part of the thesis, pairwise correlation analysis is performed among the BGYF, aflatoxin compound and surface mold compound. The analysing results notified the strong correlation between surface mold concentration, BGYF and aflatoxin concentration. In the second part of the thesis, effective algorithms are developed to classification of hyperspectral images on the basis of the aflatoxin and surface mold approaches and, high accurate classification results are obtained for both approaches. In the last part, a novel cost sensitive active learning method (mAÖ) is presented to decrease the cost of instanse labeling and classification. The labeling cost of training samples is decreased by using the proposed mAÖ approach. In addition to the decreasing of costs of the instance labeling, the proposed mAÖ approach decreases the cost of the classification error which causes by the error of the contaminated class. In this thesis, the developed algorithms are tested by two different hyperspectral fig datasets which posses different modalities. The obtained high accurate experimental results demonstrate that the proposed methods have strong potential to non-invasive solutions for food safety problems.
