Günümüzde turizm, döviz girdisini arttırıcı, istihdam yaratıcı, bölgeler arası ekonomik dengesizliğin giderici özellikleriyle ulusal ekonomiye katkıda bulunan, uluslararası kültürel ve toplumsal iletişimi sağlayıcı ve bütünleştirici etkisi ile dünya barışının korunmasında büyük payı olan sektörlerden birisi durumundadır. Turizm, ilgili ülkelerde yarattığı ekonomik sonuçlar açısından değerlendirildiğinde, özellikle ödemeler dengesine olan katkısı ve doğurduğu ekonomik canlılık, pek çok ülke için turizmi cazip bir hale getirmiş olup kalkınma planlarında geniş bir yer verilmesini sağlamıştır. Ülke ekonomisi üzerinde olumlu etkilere sahip olan turizm sektörü içersinde konaklama işletmeleri önemli bir yere sahiptir. Konaklama işletmelerinde belirli pansiyon tipleri uygulanmaktadır. Özellikle sayfiye bölgelerinde faaliyet gösteren konaklama işletmelerinde yoğun bir şekilde uygulanan pansiyon türlerinin başında her şey dahil (All inclusive) sistemi gelmektedir. Her şey dahil pansiyon sisteminin konaklama işletmelerindeki yiyecek içecek bölümleri ve bu bölüm ile ilişkili birimlerin faaliyetleri üzerinde önemli etkileri olduğunu söylemek mümkündür. Bu bağlamda, hazırlanan bu tez çalışmasında, konaklama işletmelerinde kullanılan her şey dahil sisteminin yiyecek içecek yönetimi üzerindeki etkilerini belirlenmeye yönelik araştırma ve sonuçlarına yer verilmiştir. Bu amaçla, Türkiye'nin önde gelen turizm çekim merkezlerinden birisi olan Bodrum ve çevresinde faaliyet gösteren 4 ve 5 yıldızlı otel işletmeleri ve 1. sınıf tatil köylerinde araştırma gerçekleştirilmiştir. Araştırmanın evrenini; Bodrum ve çevresindeki her şey dahil sistemini uygulayan dört ve beş yıldızlı oteller ve birinci sınıf tatil köylerindeki yiyecek ve içecek departmanlarından sorumlu yöneticiler oluşturmaktadır. Araştırmada veri toplama yöntemi olarak anket tekniği kullanılmıştır. Anket uygulaması, ilgili departman yöneticileriyle yüz yüze görüşme tekniği ile gerçekleştirilmiştir. Tourism is one of the sectors that significantly contribute to national economy through boosting foreign currency inflow, generating employment and removing the economic imbalances among the regions while it also plays a significant role in maintaining world peace through providing international, cultural and social communication grounds and its unifying impact. Considering its economic outcomes that it created in relevant countries, its contribution to balance of payments and the economic boom that it caused made it quite attractive for a number of countries and these countries involved tourism investments in their development plans widely. Accommodation enterprises have a significant place in the tourism sector which has positive effects on the country's economy. Certain hostel types are applied in the accommodation business. The all-inclusive system is at the forefront of the types of hostels that are heavily used in accommodation enterprises operating in the resort areas. It is quite possible to mark the influence of all-inclusive system on food and beverages departments of enterprises and on operations of affiliated departments with food and beverages. This study, thus, involves the research conducted to ascertain the impacts of all-inclusive system in hospitality enterprises on food and beverages management as well as the outcomes of the research. The study has been conducted in several 4 and 5 star hotels as well as 1st class holiday village located in Bodrum and its close vicinity marked as one of the most outstanding holiday attractions of Turkey. The population of the study is formed by the managers managing the food and beverages departments of 4 and 5 star hotels as well as 1st class holiday camps located in Bodrum and its close vicinity offering all-inclusive system. Interview technique has been used as data collection tool. Face to face interviews with related department managers have been conducted.
