Bu tez çalışmasında Starking delicious (Malus communis L.) meyvesinin farklı kurutma koşulları altında ultrases ön işlemli ve ön işlemsiz olarak kurutulması ve kurutma işlemlerinin ardından değişen kalite parametreleri incelenmiştir. Dilimlenen elmalar konveksiyonel hava akımlı fırın ve mikrodalga fırın sistemlerinde meyve nemi literatürle uyumlu olarak % 5'in altına düşene kadar kurutulmuş olup kuruma davranışları, etkin difüzyon katsayıları ve kuruma matemetiksel modelleri oluşturulmuştur. Konveksiyonel fırında 65°C'de kurutulacak meyvelerden kontrol grubu ayrılarak 15 ve 30 dak. ultrasonik su banyosu ön işlemi uygulanmıştır. Ultrases ön işlemsiz kontrol grubu elma dilimlerinin kurutulma süresi 180 dak. sürerken ultrases ön işlemli elma dilimlerinde bu sürenin 120 dak. sürdüğü, kurutma süresinde %33,3'lük bir azalma oluştuğu görülmüştür. Çalışmanın diğer kolu olarak mikrodalgada kurutulacak meyvelere ise hava akımlı fırında yapılan işlemlerdeki gibi kontrol grubu ayrılarak 15 ve 30 dak. US ön işlemi uygulanmıştır. Mikrodalga fırında 180W, 360W ve 600W olmak üzere 3 farklı güç modunda uygulanan kurutma işlemlerinin sonucunda; 180W MW uygulamasında ortalama olarak %7'lik; 360W MW uygulamasında ortalama %10'luk kuruma süresinde kısalma hesaplanırken 600W MW uygulaması neticesinde önemli düzeyde bir kısalma görülmemiştir. Serbest nem miktarı-zaman grafikleri kurutma deneylerinin ön işlem koşulları ve kurutma tipleri dikkate alınarak ayrı grafikler üzerinde incelenmiştir. Başlangıç nem miktarları US ön işlemine bağlı olarak değişkenlik gösteren örneklerde bile kuruma eğrilerinin kurutma yöntemine göre karakteristik benzerlikler gösterdiği kaydedilmiştir. Kuruma hızı birbirine yakın olan deneylerde serbest nemin kuruma hızı ile korelasyonunun çizildiği grafiklerde çok benzer davranışları sergiledikleri belirlenmiştir. Kuruma hızı ve zaman grafiklerinde ise MW uygulamalarında önce artan, sabit ve azalan kuruma hızlarında olduğu; konveksiyonel kurutma fırınında ise sabit ve azalan hız peryodunda kuruma eğrileri verdiği görülmüştür. Ultrases ön işleminin serbest nem miktarı üzerinde önemli bir etki yaratmadığı ve zaman içinde azalma gösterdiği görülmüştür. Kuruma hızlarının krtitik nem değerine eriştikten sonra güçleştiği tespit edilmiştir. Kurutma işlemleri öncesinde pH, ağırlık, çap, kalınlık, sıcaklık ve briks ölçümleri, kurutma sonrasında su aktivitesi (aw), nem miktarı (% rutubet), organik asitler (malik, sitrik, tartarik, okzalik), fenolik maddeler (klorojenik ve kafeik asit), şekerler (fruktoz, glikoz, sakkoroz, toplam şeker), HMF (hidroksimetilfurfurol), rehidrasyon kapasitesi, büzülme miktarı, Hunter L, a, b değerlerine bağlı olarak toplam renk değişimi, esmerleşme indeksi, chroma, hue açısı parametreleri ile duyusal analizlerine ait puantajları belirlenmiştir. Meyvelerin kuruma davranışını açıklayan en uygun kurutma modeli tüm konveksiyonel hava akımlı fırın koşullarında yapılan uygulamalar ile 360W MW kontrol grubu kurutma deneylerinde Page-Modifiye Page kuruma modeli diğer MW ortamında kurutulan deneylerde Midilli-Küçük modelinin kuruma davranışlarını tanımlamada en uyumlu modeller olduğu tespit edilmiştir. Yapılan hesaplamalar sonucunda en yüksek etkin difüzyon katsayısı sırasıyla 600W MW kontrol, 15 ve 30 dak. US ön işlem uygulamalı kurutma deneylerinde tespit edilmiştir. Etkin difüzyon katsayısının en hızlı kuruyan gıda maddelerinde en yüksek değerde olması gerektiği literatür bilgilerinde yer alırken uygulanan deneylerde en yüksek değerler literatürle uyumlu olarak en kısa sürede, en hızlı kuruyan deneylerde bulunmuştur. Kurutma sonrası deney tiplerinin tamamında suda çözünen kuru madde miktarlarında (aw) düşüş kaydedildiği benzer şekilde düşük güç seviyesinde ya da yavaş kurutma proseslerinde bu değerin diğerlerine kıyasla daha düşük olduğu hesaplanmıştır. Aynı ön işlem gören kurutma deneylerinin bir arada incelenmesi sonucunda US ön işlem uygulamasının deneylerin aw değerlerinin artmasına neden olduğu sonucu görülmüştür. Toplam kuru madde miktarlarında hem ön işlem hemde kurutma metotlarının sonucu etkilediği anlaşılmıştır. İlaveten kurutma deneylerinin en hızlı sonuçlandırıldığı 360W ve 600W güç modlarında yapılan ölçümlerde hızla nem kaybeden bu kurutma deneylerinin denge nem davranışında kararlı olamadıkları ve ortam nemini absorbladıkları anlaşılmıştır. Elma meyvesinin kendine has organik asitler ihtiva etmesi bu organik asitlerin esansiyel besin öğelerinden olması ve kurutma proseslerinde kayba uğradıkları bilinmesinden dolayı organik asit tür ve miktar tayinleri yapılmıştır. Hammadde de en fazla miktarda tespit edilen malik asit 86,821 g/kg olarak; uygulanan kurutma işlemlerine en hassas olan sitrik asit miktarı 33,86 g/kg olarak bulunmuştur. Kurutma deneylerine göre tartarik asit %75-82, malik asit %67-79, sitrik asit miktarları ise %76-95 arasında kayba uğradığı tespit edilmiştir. Okzalik asitin ise dönüşen asitleri taklit ettiği ve ısıya dayanıklılığının daha yüksek olduğu belirlenmiştir. Yapılan deneylerde aynı koşullarda ısıl işlem uygulamasının yanı sıra US ön işlem uygulamasının meyve içindeki organik asitlerin suda çözünen kuru madde sınıfından olması sebebiyle bir miktarının uygulama suyuna geçişini arttırdığı sonucunu göstermiştir. Kurutulan elma dilimlerinin HMF (hidroksimetilfurfurol) miktarlarının kurutma süresine koralasyonlu olarak artış gösterdiği görülmüştür. Ultrasonik banyo ön işleminin ise kuruma sürelerini kısaltıcı yönde sonuç verdiği bu etkisi ile HMF oluşumunu azaltıcı yönde etki ettiği anlaşılmıştır. Hesaplanan HMF miktarı analizinde hava akımlı fırında kontrol, 15 ve 30 dak. US ön işlemli gruplarında sırasıyla; 18,52-6,27-5,40 mg/kg olarak bulunmuştur. US uygulaması ile HMF miktarı arasında ters orantı geliştiği sonucuna varılmıştır. En yüksek hmf değeri 1047,82± 57,45 mg/kg olarak 600W MW kontrol grubu kurutma deneyi neticesinde bulunmuştur. Starking delicious cinsi elmada en çok miktarda bulunan fenolik maddelerden klorojenik asit ile kafeik asit miktarlarının kurutmaya dayanımı araştırılmıştır. Yapılan tüm kurutma deneylerinde hammaddeye kıyasla klorojenik asit miktarında yaklaşık 1/5 oranında; kafeik asit miktarında 1/10 oranlarında azalma hesaplanmıştır. Elde edilen sonuçlara bakıldığında, yapılan deneylerde hammaddenin kuru maddesi bazında hesaplanan toplam 55,07±0,89 g/100g şeker miktarlarının deney türüne göre farklı oranlarda azalma ve yaklaşık seyirde kalma sonuçlarının oluştuğu görülmüştür. Uygulanan analizlerin tümünde baskın şeker olarak fruktoz bileşeninin olduğu belirlenmiştir. Toplam şeker miktarında en yüksek değere 49,24±1,14 g/100g miktarı ile ön işlemsiz konveksiyonel kurutma deneyinde rastlanırken, en düşük toplam şeker miktarına 38,65±0,12 g/100g ile 30 dak. US 600W MW uygulamasında rastlanmıştır. Hunter L, a, b tayini sadece dilim yüzeylerinde yapılmıştır. L, a, b değerlerindeki değişim gruplar arası farklılık göstermiştir. Esmerleşme indeksi, ΔE değeri, hue açısı ve chroma değerleri kuruma süresi sonunda belirgin değişime uğramıştır. Esmerleşme indeksi ve chroma değerleri artarken hue açısı ile toplam renk değişimi azalmıştır. 65 °C'de ve mikrodalgada kurutulan örneklerde en fazla büzülme konveksiyonel tip kurutma işlemi uygulanan gruplarda meydana gelmiştir. Tüm grupların ortalama değerleri arasında çap değerlerinde %7-17, kalınlık değerlerinde %37-45 aralığında büzüşme hesaplanmıştır. En yüksek rehidrasyon kapasitesi MW ortamında yapılan kurutmada %391,3 oranıyla 30 US 600W grubunda en düşük kapasiteye ise %210 oranıyla 15US 360W grubunda rastlanmıştır. Renk, koku, lezzet, tekstür, şekil, sertlik, çiğnenebilirlik, yapışkanlık, karamelize tat, genel beğeni parametreleri ile yapılan duyusal analiz sonuçlarına göre 65 °C'de kurutulan örneklerde 30 US grubu ve mikrodalgada ise 15 US 180W grubu en fazla beğeniyi almıştır. In this study, drying of Starking delicious (Malus communis L.) fruit in different drying conditions by pre-processed and non-processed ultrasound and the quality parameters that change after the drying process were investigated. Samples that were ultrasound preprocessed and that were used as control group in the processes were dried until moisture content of samples decreases lower than 5% and the active diffusion coefficient and drying mathematical models were constituted. The control group was separated from the fruit to be dried at 65 ° C in the convection oven, and 15 and 30 min. ultrasonic water bath pre-process was applied. It is observed that drying time of control group, which was not preprocessed, was 180 min. while drying time of control group, which was preprocessed with ultrasound, was 120 min. and so that there was a 33.3% decrease in the drying time. As the other line of the study, microwave-dried fruits were separated from the control group as in the processes carried out in the air flow oven, and 15 and 30 min. US pre-process was applied. As the result of the drying processes applied in 3 different power modes of 180W, 360W and 600W in the microwave,; in the 180W MW processing, it was observed that there was %7 decrease in the drying time and in the 360W MW processing it was also observed that there was 10% decrease in the drying time while there were no changes in the drying time of the 600W MW process. Free moisture-time graphs were examined on separate graphs, taking into account the pre-treatment conditions and drying types of the drying experiments. It was noted that the drying curves exhibit characteristic similarities to the drying method even in the samples with varying initial moisture content depending on the US pre-process. It was also noted that in experiments where the rate of drying is close to that of the drying, the graphs correlated with the rate of drying of the free base exhibit very similar behaviors. In drying speed and time graphs, it was observed that in MW applications it was in first increasing, constant and decreasing drying rates; whereas in the convection-drying oven, it gave drying tendency in constant and decreasing speed period. Ultrasound pretreatment did not have a significant effect on the amount of free moisture and decreased over time. It was found that drying speeds became difficult after reaching the critical humidity level. Prior to drying, pH, weight, diameter, thickness, temperature and ºBrix measurements were done. After drying, water soluble dry matter (ºBrix), water activity (aw), moisture content (%MC), organic acids (malic, citric, tartaric, oxalic), phenolic compounds (chlorogenic acid, cafeic acid), sugars (fructose, glucose, saccarose, total sugar), HMF (hydroxymethylfurfural), rehydration capacity, shrinkage values, Hunter L, a, b values with total color changes, browning index, chroma and hue angle parameters were determined. The most suitable drying model which expresses the drying behavior of the fruit was determined as the most compatible model in describing the drying behavior of the Midilli-Küçük model in the experiments performed in all convection air flow oven conditions and in the experiments of 360W MW control group drying experiments in the page-Modifiye page drying. As a result of the calculated calculations, the highest effective diffusion coefficient is 600W MW control, 15 and 30 min, respectively. US pre-treatment was detected in applied drying tests. While the effective diffusivity coefficient was required to be the highest value in the fastest drying foodstuffs in literature, the highest values were found in the fastest drying experiments as soon as possible in accordance with the literature. It was calculated that all of the experimental types after drying had a lower value of water-soluble dry matter (aw), similarly at low power levels or slow drying processes this value was lower than the others. A concurrent review of the same pre-process drying experiments concluded that US pre-process resulted in an increase in the aw values of the experiments. It was understood that both pre-process and drying methods affect the total dry matter quantities. In addition, measurements were made at 360W and 600W power modes, where drying dies were the fastest, and it was understood that these drying experiments were not stable in equilibrium moisture behavior and absorbed ambient moisture. Because of the fact that apple fruit contains unique organic acids, these organic acids are essential nutrients and they are lost in drying processes, organic acid species and quantity are determined. The highest amount of malic acid in the raw material was found to be 86,821 g / kg and the amount of citric acid that was most sensitive to the drying processes was found to be 33,86 g / kg. It was determined that tartaric acid was lost between 75-82%, malic acid 67-79% and citric acid amount between 76-95%. It has been determined that oxalic acid mimics the transformed acids and their heat resistance is higher. In addition to heat treatment application under the same conditions, it has been shown that the application of US pretreatment increases the transfer of an amount of water to the application water because the organic acids in the fruit are in the water-soluble dry matter class. The amounts of HMF (hydroxymethyl furfural) of dried apple slices were found to increase correlated with the drying time. Ultrasonic bath pre-process was found to have an effect on reducing HMF formation with this effect which shortened the drying time. In the analysis of calculated HMF amount, in the air flow flush control, in 15 and 30 minute US pre-process groups, respectively; 18,52-6,27-5,40 mg/kg. was found. The result is an inverse relationship between the amount of US application and the amount of HMF. The highest HMF value was found to be 1047,82 ± 57,45 mg/kg as a result of the drying test of 600W MW control group. The amount of chlorogenic acid and caffeic acid in the most phenolic substances in the Starking delicious apple type was examined. Compared to the raw material in all the drying experiments performed, a reduction of 1/5 in the amount of chlorogenic acid; a reduction of 1/10 of in the amount of caffeic acid was calculated. According to the results obtained, it was observed that the amounts of total sugar of 55.17 ± 0.89 g / 100g calculated on the basis of the dry matter of the raw materials in the experiments made decreased, increased or stayed in the approximate process in different ratios according to the type of the experiment. It was determined that the fructose component is the predominant sugar in all of the analyzes performed. The highest value in the total sugar amount was found in the pre-process convection drying experiment with the amount of 72.04 ± 1.14 g / 100 g, while the lowest total sugar amount was found in the application of 45.97 ± 0.40 g / 100 g and 15 min US 600W MW. The Hunter L, a, b determination was done only on the slice surfaces. The change in L, a, b values varied between groups. The browning index, delta E value, hue angle and chroma values at the end of the drying period, while the browning index and chroma values increased, the hue angle and the total color change decreased. At 65 °C and microwave drying, the maximum shrinkage occurred in groups subjected to convection type drying The shrinkage of the average values of all groups was calculated between 7-17% in diameter values and 37-45% in thickness values. The highest rehydration capacity was found in 30US 600W group with 391,3% in MW environment, while the lowest capacity was found in 15US 360W group with 210% rate. According to the sensory analysis results with color, smell, taste, texture, shape, hardness, chewiness, stickiness, caramelized taste, general taste parameters, 30 US group in samples dried at 65 °C and 15 US 180W in microwave received the most liking. En yüksek rehidrasyon kapasitesi MW ortamında yapılan kurutmada %391,3 oranıyla 30 US 600W grubunda en düşük kapasiteye ise %210 oranıyla 15US 360W grubunda rastlanmıştır. Renk, koku, lezzet, tekstür, şekil, sertlik, çiğnenebilirlik, yapışkanlık, karamelize tat, genel beğeni parametreleri ile yapılan duyusal analiz sonuçlarına göre 65 °C'de kurutulan örneklerde 30 US grubu ve mikrodalgada ise 15 US 180W grubu en fazla beğeniyi almıştır. In this study, drying of Starking delicious (Malus communis L.) fruit in different drying conditions by pre-processed and non-processed ultrasound and the quality parameters that change after the drying process were investigated. Samples that were ultrasound preprocessed and that were used as control group in the processes were dried until moisture content of samples decreases lower than 5% and the active diffusion coefficient and drying mathematical models were constituted. The control group was separated from the fruit to be dried at 65 ° C in the convection oven, and 15 and 30 min. ultrasonic water bath pre-process was applied. It is observed that drying time of control group, which was not preprocessed, was 180 min. while drying time of control group, which was preprocessed with ultrasound, was 120 min. and so that there was a 33.3% decrease in the drying time. As the other line of the study, microwave-dried fruits were separated from the control group as in the processes carried out in the air flow oven, and 15 and 30 min. US pre-process was applied. As the result of the drying processes applied in 3 different power modes of 180W, 360W and 600W in the microwave,; in the 180W MW processing, it was observed that there was %7 decrease in the drying time and in the 360W MW processing it was also observed that there was 10% decrease in the drying time while there were no changes in the drying time of the 600W MW process. Free moisture-time graphs were examined on separate graphs, taking into account the pre-treatment conditions and drying types of the drying experiments. It was noted that the drying curves exhibit characteristic similarities to the drying method even in the samples with varying initial moisture content depending on the US pre-process. It was also noted that in experiments where the rate of drying is close to that of the drying, the graphs correlated with the rate of drying of the free base exhibit very similar behaviors. In drying speed and time graphs, it was observed that in MW applications it was in first increasing, constant and decreasing drying rates; whereas in the convection-drying oven, it gave drying tendency in constant and decreasing speed period. Ultrasound pretreatment did not have a significant effect on the amount of free moisture and decreased over time. It was found that drying speeds became difficult after reaching the critical humidity level. Prior to drying, pH, weight, diameter, thickness, temperature and ºBrix measurements were done. After drying, water soluble dry matter (ºBrix), water activity (aw), moisture content (%MC), organic acids (malic, citric, tartaric, oxalic), phenolic compounds (chlorogenic acid, cafeic acid), sugars (fructose, glucose, saccarose, total sugar), HMF (hydroxymethylfurfural), rehydration capacity, shrinkage values, Hunter L, a, b values with total color changes, browning index, chroma and hue angle parameters were determined. The most suitable drying model which expresses the drying behavior of the fruit was determined as the most compatible model in describing the drying behavior of the Midilli-Küçük model in the experiments performed in all convection air flow oven conditions and in the experiments of 360W MW control group drying experiments in the page-Modifiye page drying. As a result of the calculated calculations, the highest effective diffusion coefficient is 600W MW control, 15 and 30 min, respectively. US pre-treatment was detected in applied drying tests. While the effective diffusivity coefficient was required to be the highest value in the fastest drying foodstuffs in literature, the highest values were found in the fastest drying experiments as soon as possible in accordance with the literature. It was understood that both pre-process and drying methods affect the total dry matter quantities. In addition, measurements were made at 360W and 600W power modes, where drying dies were the fastest, and it was understood that these drying experiments were not stable in equilibrium moisture behavior and absorbed ambient moisture. Because of the fact that apple fruit contains unique organic acids, these organic acids are essential nutrients and they are lost in drying processes, organic acid species and quantity are determined. The highest amount of malic acid in the raw material was found to be 86,821 g / kg and the amount of citric acid that was most sensitive to the drying processes was found to be 33,86 g / kg. It was determined that tartaric acid was lost between 75-82%, malic acid 67-79% and citric acid amount between 76-95%. It has been determined that oxalic acid mimics the transformed acids and their heat resistance is higher. In addition to heat treatment application under the same conditions, it has been shown that the application of US pretreatment increases the transfer of an amount of water to the application water because the organic acids in the fruit are in the water-soluble dry matter class. The amounts of HMF (hydroxymethyl furfural) of dried apple slices were found to increase correlated with the drying time. Ultrasonic bath pre-process was found to have an effect on reducing HMF formation with this effect which shortened the drying time. In the analysis of calculated HMF amount, in the air flow flush control, in 15 and 30 minute US pre-process groups, respectively; 18,52-6,27-5,40 mg/kg. was found. The result is an inverse relationship between the amount of US application and the amount of HMF. The highest HMF value was found to be 1047,82 ± 57,45 mg/kg as a result of the drying test of 600W MW control group. The amount of chlorogenic acid and caffeic acid in the most phenolic substances in the Starking delicious apple type was examined. Compared to the raw material in all the drying experiments performed, a reduction of 1/5 in the amount of chlorogenic acid; a reduction of 1/10 of in the amount of caffeic acid was calculated. According to the results obtained, it was observed that the amounts of total sugar of 55.17 ± 0.89 g / 100g calculated on the basis of the dry matter of the raw materials in the experiments made decreased, increased or stayed in the approximate process in different ratios according to the type of the experiment. It was determined that the fructose component is the predominant sugar in all of the analyzes performed. The highest value in the total sugar amount was found in the pre-process convection drying experiment with the amount of 72.04 ± 1.14 g / 100 g, while the lowest total sugar amount was found in the application of 45.97 ± 0.40 g / 100 g and 15 min US 600W MW. The browning index, delta E value, hue angle and chroma values at the end of the drying period, while the browning index and chroma values increased, the hue angle and the total color change decreased. The highest rehydration capacity was found in 30US 600W group with 391,3% in MW environment, while the lowest capacity was found in 15US 360W group with 210% rate. According to the sensory analysis results with color, smell, taste, texture, shape, hardness, chewiness, stickiness, caramelized taste, general taste parameters, 30 US group in samples dried at 65 °C and 15 US 180W in microwave received the most liking.
