Ayran geleneksel olarak tuz ve suyun yoğurtla karıştırılmasıyla üretilen fermente bir içecektir. Bu çalışmada, ayrana bal katılarak tüketici için alternatif sunmak ve ayranın fonksiyonel özelliklerini geliştirmek amaçlanmıştır. Ayran üretiminde iki çeşit bal (çiçek ve çam balı) ve karışımı ile iki ayrı oran (%10 ve %20) kullanılmıştır. Depolama süresince (1., 10. ve 21. gün) ayran örneklerinin fiziksel, reolojik, mikrobiyolojik, kimyasal ve duyusal analizleri yapılmıştır. Elde edilen istatistiksel verilere göre ayran örneklerinde örnekler arasında %toplam kuru madde, %yağ, %laktik asit, %protein, pH arasındaki fark önemli bulunmuştur (p<0,05). Ballı ayran örnekleri Newtoniyen olmayan psödoplastik akış davranışı göstermiştir. Ayran örneklerinde asetaldehit aroma maddesi, en çok %13,1 ile %10 çam ballı ayranda en az ise %3,66 ile %20 çiçek ballı ayranda tespit edilmiştir. 2,3-butanedion, asetaldehit ve asetoin aroma maddeleri ballı ayranlarda ortak olarak belirlenmiştir. Çam ve çiçek balı örneklerinin L* değeri sırasıyla; 59,62, 65,11, a* değeri; 4,56, -0,46 ve b* değeri; 43,52, 40,97 olarak bulunmuştur. Ayran örnekleri duyusal olarak görünüş, yapı, koku ve tat özelliklerine göre değerlendirilmiştir. Ayranların %10 bal ilave edilenleri diğerlerine göre panelistler tarafından daha çok beğenilmiştir. En çok tat olarak çiçek balı ilavesinin tercih edildiği bunu çam ve karışım balın takip ettiği anlaşılmıştır. Anahtar Kelimeler: Ayran, bal, viskozite, aroma
Ayran is traditionally a fermented beverage produced by mixing salt and water with yogurt. The purpose of adding was to present a new alternative for consumers who don't like salty and sour taste, to enrich the functional properties of ayran. In this study, two different rates of honey (10% and20%) were added to manufactured ayran. And, two type of honey (pine, flower honey) were used to produce ayran. Rheological, microbiological, sensory, chemical and physical analyses were carried out on the1, 10 and 21th days. According to the statistical data obtained, the difference between total dry matter (%) fat (%) lactic acid (%) protein (%) pH value in ayran samples was found to be significant.(p<0,05). And according to Power Law model, ayran samples showed non-Newtonian behavior, pseudoplastic. In the ayran samples, the acetaldehyde flavor was determined as maximum 13,1% to ayran of added10% pine honey and minimum 3,66% to ayran of added 20% flower honey. 2,3-Butanedione, Acetaldehyde and Acetoin aroma substances were determined all ayran samples. Pine honey and flower honey's L*, a* and b* values found 59,62 and 65,11; 4,56 and -0,46; 43,52 and 40,97, respectively. Ayran samples were evaluated sensitively according to their appearance, structure, odor and taste properties. The addition of 10% honey to ayran was more appreciated by the panelists.
