Bu çalışmada meyve sebzelerin kalitesini artırmak, besin değerini daha iyi korumak ve artırmak, raf ömrünü uzatmak, duyusal özelliklerini geliştirmek amacıyla maydanoz depolamada ışık yayan diyot (LED) uygulamalarının bazı kalite özellikleri üzerine etkisi araştırılmıştır. Maydanoz taze tüketiminde besinsel değerlerinin korunması önemlidir. Çeşitli renk LED ışıklar sayesinde maydanozun besinsel değerlerini korumak, duyusal özelliklerini geliştirmek amaçlanmıştır. Sistemimizde yeşil, mavi, sarı, kırmızı, beyaz olmak üzere 5 renk şerit LED ışık ve 1 karanlık ortam kullanılmıştır. Maydanozlar 0 °C' de muhafaza edilmiştir. Yapılan uygulamanın kalite kriterleri üzerine etkileri depolama boyunca belirli aralıklarla ( 0, 5, 9, 13, 17, 21, 25. günler ) izlenmiştir. Depolama boyunca maydanozların kuru maddesi artarken, askorbik asit, antioksidan kapasite, fenolik madde, klorofil madde miktarları azalma göstermiştir. Askorbik asit miktarının en yüksek değeri yeşil ve mavi ışığa maruz kalan örnekte belirlenmiştir. Depolamanın 9. gününde askorbik asit miktarı başlangıç değerinin yarısına düştüğü gözlemlenmiştir. Yeşil ve mavi LED ışık 5. gün depolamasında askorbik asit sentezini artırdığı gözlemlenmiştir. Toplam fenolik madde içeriğine bakıldığında; en yüksek fenolik madde miktarı mavi ışığa maruz kalan örneklerde bulunurken, kırmızı ve yeşil ışıkta onu takip etmiştir. En düşük miktar karanlıkta muhafaza edilen örneklerde bulunmuştur. Antioksidan kapasite üzerine bakıldığında en yüksek IC50 değeri 17,02 ile karanlıkta ki örneklerde olup, LED ışığa maruz bırakılan tüm örneklerde IC50 değeri istatistiksel olarak karanlıktaki örneklerden düşüktür. Mavi ve kırmızı ışığa maruz kalan örnekler en düşük IC50 değerine sahip bulunmuştur ve aralarında istatistiksel olarak fark bulunmamıştır. Mavi ve kırmızı ışığa maruz kalan örneklerde antioksidan kapasitesi yüksektir. En düşük antioksidan kapasitesi karanlıktaki örneklerde bulunmuştur. Antioksidan kapasitesi bakımından karanlığa en yakın değer beyaz ışığa maruz kalan maydanoz olmasına rağmen istatistiksel olarak karanlıkta ki örneklerden üstün bulunmuştur. Depolama süresi boyunca L* değerinin artması, yeşil rengin yaşlanma ile beraber azalmasıyla açıklanabilmektedir. a* değeri en yüksek karanlıkta -13,19 ortalama ile en düşük -14,58 ortalamayla yeşil ışıkta bulunmuştur. Duyusal analiz kapsamında maydanozlar yüzey dokusu ve renk olarak incelenmiştir. Renk özelliği açısından bakıldığında kırmızı ışığa maruz kalan örnekler en yüksek puanları gösterirken, yüzey dokusu özelliğine bakıldığında yeşil ışık en yüksek bulunmuş olup, kırmızı ve sarı ışıktaki örneklerden istatistiksel olarak fark bulunmamıştır. Yapılan analizler sonucunda maydanoz muhafazasında LED ışık kullanımı uygun görülmüştür. Farklı LED ışıkların askorbik asit miktarı ve antioksidan kapasitesi gibi özelliklerin sentezini artırdığı gözlemlenmiştir. Yapılan analizler sonucunda farklı LED ışıklar karanlıktaki örneklere göre üstün bulunmuştur. Maydanozun hasattan sonra ilk 10 gün içerisinde tüketilmesi hem kimyasal bileşenler hem de tazelik açısından önemli olduğu ve bu süre sonunda bozunmaların arttığı gözlemlenmiştir. In this study, the effects of light emitting diode (LED) applications on parsley storage in order to increase the quality of fruit and vegetables, to protect and increase nutritional value better, to extend shelf life and to improve sensory properties, were investigated. Preserving nutritional values is important in fresh consumption of parsley. With the help of various color LED lights, it is aimed to protect the nutritional values of parsley and improve the sensory properties. Green, blue, yellow, red, white 5 color LED strip light and 1 dark environment are used in our system. Parsley was stored at 0 °C in controlled refrigerator. The effects of the application on quality criteria were monitored periodically (0, 5, 9, 13, 17, 21, 25) during storage. During storage, dry matter of parsley increased, ascorbic, antioxidant capacity, phenolic and chlorophyll content decreased. The highest amount of ascorbic acid was determined in the sample exposed to green and blue light. On day 9 of storage, it was observed that the amount of ascorbic acid decreased to half of the initial value. Green and blue LED light has been observed to increase ascorbic acid synthesis at day 5 storage. When the total phenolic content is examined; the highest phenolic content was found in the samples exposed to blue light, followed by red and green light. The lowest amount was found in the samples stored in the dark. When the antioxidant capacity is examined, the highest IC50 value is in the dark samples with 17.02, and the IC50 value is statistically lower in all samples exposed to LED light than the dark samples. The samples exposed to blue and red light had the lowest IC50 value and there was no statistical difference between them. The samples exposed to blue and red light have high antioxidant capacity. The lowest antioxidant capacity was found in dark samples. Although the closest value to darkness in terms of antioxidant capacity was parsley exposed to white light, it was statistically superior to the samples in the dark. The increase in L * value during the storage period can be explained by the decrease of green color with aging. a * value was found in the highest darkness -13.19 average and lowest -14.58 average green light. Within the scope of sensory analysis, parsley was examined as surface texture and color. In terms of color characteristics, the samples exposed to red light showed the highest scores, while surface texture showed the highest green light and no difference was found between the red and yellow light samples. As a result of the analysis, it was found appropriate to use LED light in parsley cold storage. It has been observed that different LED lights increase the synthesis of properties such as ascorbic acid content and antioxidant capacity. As a result of the analysis, different LED lights were found superior to the dark samples. It is observed that the consumption of parsley in the first 10 days after harvest is important for both the chemical components and freshness and the degradation increases after this period.
