Günümüzde yaşanan yoğun rekabet ve ekonomik koşullar işletmeleri üretim araçlarını etkin kullanmaya itmektedir. İşletmelerinin ekonomik amaçlarına ulaşabilmeleri için çalışanların, kendilerinden beklenen verimi göstermeleri gerekmektedir. Bir hizmet sektörü olan turizmde, insan kaynakları işletme amaçlarına ulaşmada önemli bir etkiye sahiptir. İşlerin istenilen kalitede ve zamanda bitirilmesi çalışanların verimliliğinin göstergesidir. Çalışanların verimliliğinin arttırılması da iş yerinde uygun çalışma koşullarının oluşturulmasına bağlıdır. Otel işletmelerinin, yiyecek içecek departmanında çalışan personel, çalıştıkları ortamın atmosferinden olumlu veya olumsuz etkilenebilmektedir. Gerek fiziksel unsurlar olan; çalıştıkları ortamın ısı, aydınlatma, zemin, düzen, koku, renk, müzik gibi unsurları; gerekse sosyal unsurlar olan çalışma arkadaşları ve yöneticileri çalışanların iş performansları üzerinde etkiye sahiptir. Bu unsurların, çalışanların iş performansını olumlu yönde etkileyebilmesi adına otel işletmelerinin gerekli koşulları sağlaması, işletmelerin hedeflerine ulaşmasında da etkili olacaktır. Bu çalışmanın amacı; otel işletmelerinin yiyecek içecek departmanındaki atmosferin, bir başka deyişle fiziksel ve sosyal unsurların, çalışanların iş performansını ne doğrultuda etkilediğini ölçmektir. Literatür taramasından elde edilen bilgiler doğrultusunda bir anket formu geliştirilmiştir. Araştırmada, 2017 yılının Mayıs-Eylül aylarında Muğla ilinin Marmaris ilçesinde bulunan beş yıldızlı konaklama işletmelerinin yiyecek içecek departmanında çalışan 313 otel personelinden toplanan verilerin analizi SPSS programı ile yapılmıştır. Bu analizler içerisinde araştırma ölçeklerinin güvenilirliğini test etmek üzere güvenilirlik analizi yapılmıştır. Veri setinin faktör analizi için uygunluğunu değerlendirmek amacıyla gerçekleştirilen Bartlett ve Kaiser-Meyer-Olkin testleri sonucunda veri setinin faktör analizi için uygun olduğu görülmüştür. Gerçekleştirilen faktör analizi sonucunda; "iş performansı" tek faktör ve iş performansını etkilediği değerlendirilen "renk, koku, müzik, ısı, aydınlatma, zemin, düzen ve çalışma ortamı " olmak üzere toplam sekiz faktörün oluştuğu görülmüştür. Araştırmanın amacına yönelik değişkenlerin boyutları arasındaki ilişkileri belirlemek amacıyla korelasyon analizi yapılmıştır. Yapılan korelasyon analizi sonucunda, atmosfer boyutları ile iş performansı boyutu arasında pozitif yönlü orta, zayıf ve çok zayıf düzeyde ilişkiler olduğu saptanmıştır. Araştırma hipotezlerini test etmek amacıyla regresyon analizi gerçekleştirilmiştir. Yapılan regresyon analizleri sonucunda "renk, müzik, zemin, düzen, çalışma ortamı '' faktörlerinin tek boyuttan oluşan ve bağımlı değişken olan iş performansı faktörünü anlamlı bir şekilde etkilediği görülmüştür. Diğer yandan, "aydınlatma, koku ve ısı'' faktörlerinin tek boyuttan oluşan ve bağımlı değişken olan iş performansı faktörünü anlamlı bir şekilde etkilemediği tespit edilmiştir. Bu çalışma yiyecek içecek departmanındaki atmosferin çalışanların iş performansını ölçen ilk araştırma olması nedeniyle özgün bir çalışmadır. Today, the intense competition and economic conditions push the enterprises to use the production tools effectively. In order to achieve the economic goals of their enterprises, employees must demonstrate the expected efficiency. In tourism, which is a service sector, human resources have a significant impact on achieving business objectives. The completion of the works at the desired quality and time is an indicator of the productivity of the employees. Increasing employee productivity also depends on the creation of appropriate working conditions at the workplace. Personnel working in the food and beverage department of hotel establishments may be positively or negatively affected by the atmosphere of the environment in which they work. Both are physical elements; elements such as heat, lighting, floor, order, smell, color, music; and social factors, both colleagues and managers, have an impact on the work performance of employees. The fact that these elements provide the necessary conditions for the hotel companies in order to have a positive effect on the work performance of the employees will also be effective in achieving the targets of the enterprises. The aim of this study; to measure how the atmosphere in the food and beverage department of hotel establishments, in other words, physical and social factors, affect the work performance of employees. A questionnaire was developed based on the information obtained from the literature review. In the research, the data collected from 313 hotel staff working in the food and beverage department of five star accommodation establishments located in Marmaris district of Muğla province in May-September 2017 were analyzed with SPSS program. Reliability analysis was conducted to test the reliability of the research scales. As a result of Bartlett and Kaiser-Meyer-Olkin tests conducted to evaluate the suitability of the data set for factor analysis, the data set was found to be suitable for factor analysis. As a result of the factor analysis performed; "Work performance" was found to be a single factor and color, smell, music, heat, lighting, floor, layout and working environment toplam were found to be eight factors. Correlation analysis was conducted to determine the relationships between the dimensions of the variables for the purpose of the study. As a result of the correlation analysis, it was found that there were positive, medium, weak and very weak relations between atmosphere dimensions and work performance dimension. Regression analysis was performed to test the research hypotheses. As a result of the regression analysis, it was found that, color, music, background, layout, working environment '' factors had a significant effect on one-dimensional and dependent variable job performance factor. On the other hand, it was found that "lighting, odor and heat edi anlamlı factors did not significantly affect the work performance factor, which is a one-dimensional dependent variable. This is an original study because the atmosphere in the food and beverage department is the first to measure the job performance of employees.
