Bu çalışmada, ozon gazının sert buğdayın depolanma sırasındaki mikrobiyel değişim üzerindeki etkisi değerlendirilmiştir. Dört ayrı deneysel buğday grubu (doğal, doğal ozon, temizlenmiş ve temizlenmiş ozon) oluşturulmuştur. Her iki grup, 1 saat boyunca 3 ppm konsantrasyonda ozon gazı ile muamele edilmiştir. Gruplar daha sonra hava geçirmez cam kavanozlara yerleştirililmiş ve 6 ay boyunca 24.7 oC ila 34.8 oC arasındaki değişken sıcaklıklarda depolanmışlardır. Depolama sıcaklıkları olarak Mayıs-Ekim ayları arasında Bağdat, Irak'ta gerçekleşen ortalama hava sıcaklıkları seçilmiştir. Safsızlıkların ozonun etkinliği üzerindeki etkisini araştırmak için iki grup ayrı daha oluşturulmuştur. Bu denemede de 3 ppm konsantrasyonlu ozon gazı 1 saat süreyle % 0.0 ve % 3.8 oranında safsızlık içeren buğday numunelerine uygulanmış ve üç ay boyunca 24.7 oC ila 33.3 oC arasındaki sıcaklıklarda depolanmışlardır. Depolama başında ve 6 aylık depolama süresince mikrobiyolojik analizler (bakteri, maya, küf ve koliform bakteri sayımı) yapıldı. Ayrıca örneklerde nem içeriği, kül ve renk (L *, a *, b *) değerleri aylık olarak belirlenmiştir. Ozon uygulaması istatistiksel olarak bakteri, maya, küf ve koliform bakteri sayısında önemli bir azalmaya neden olmuştur. Ozon uygulaması, yıkama işlemi ve depolama sıcaklığı, mikrobiyal sayıları etkileyen ana faktörlerdir. Safsızlıkların giderilmesi, mikroorganizma sayısında ilave bir azalmaya neden olmuştur. Bu sonuç, safsızlık miktarının ozon gazının etkinliği için önemli olduğunu göstermektedir. Ozon muamelesinden sonra numunelerin nem ve kül içeriğinde anlamlı bir fark tespit edilmemiştir. Bununla birlikte, yıkama işlemi, nem içeriğinde % 2.8 gibi bir artışa neden olmuştur. Renk ölçüm sonuçları, buğday örneklerinin renk değerlerinin ozon arıtımından, depolanmasından ve yıkanmasından etkilendiğini göstermiştir,ozon muamelesinin tüm numunelerde L *, b * değerlerinde artışa a * değerlerinde azalmaya neden olduğunu göstermiştir. In the present study, the effect of ozone treatment on the microbial status of hard wheat during storage was evaluated. Four experimental groups of wheat (natural, natural ozone, cleaned and cleaned ozone) were formed. Two groups were treated with ozone gas at three ppm concentration for an hour. Groups were then placed in air-tight glass jars and stored for six months at variable temperatures between 24.7oC to 34.8oC. The storage temperatures were chosen as average temperatures in Baghdad, Iraq from May to October. In order to investigate the effect of impurities on the effectiveness of ozone two more groups were constructed. Ozone gas at three ppm concentration was applied for an hour to the wheat samples containing 0.0 % and 3.8 % impurity and stored for three months at temperatures between 24.7oC to 33.3oC. At the beginning and during 6 months of storage, microbiological analyses (enumeration of bacteria, yeast, molds and coliform bacteria) were done. In addition, moisture content, ash content and color (L*,a*, b*) values of samples were determined monthly. Ozone application statistically caused a significant reduction in the numbers of bacteria, yeast, molds and coliforms. Ozone application, washing process and storage temperature were the major factors affecting the microbial counts. Removal of impurities caused a further reduction in the number of microorganisms, which shows that the amount of impurities was important for the effectiveness of ozone gas. Insignificant differences were determined in moisture and ash contents of samples after ozone treatment. However, washing caused a slight increase in the moisture content about 2.8%. The color measurement results showed that color values of wheat samples were affected by ozone treatment, storage and washing, ozone treatment caused an increase in L*, b* values in all samples and decrease in a* values.
