Bu çalışmada; nohuttan elde edilen leblebi üretimi sırasında yan ürün olarak açığa çıkan gerek ekonomik anlamda gerekse tüketici tercihi bakımından daha düşük değer gören kırık lebelebinin un haline getirildikten sonra glutenli ve glutensiz mufin üretiminde kullanılabilirliğinin araştırılması amaçlanmıştır. Buğday unu ve glutensiz mufin unu (mısır ve patates nişastası, mısır unu ve pirinç unu) karışımı ile yerdeğiştirme prensibine göre %0, %10, %20 ve %30 oranlarında kırık leblebi unu (KLU) ilave edilerek üretilen glutenli ve glutensiz mufinlerin bazı kimyasal, fiziksel, tekstürel, yapısal ve duyusal özellikleri incelenmiştir. KLU oranı arttıkça mufinlerin protein, mineral madde ve toplam diyet lif içerikleri artmış, iç renk ve kek ağırlık değerlerinde istatistiksel olarak değişiklikler saptanmış ve hacim, spesifik hacim, simetri indeksi gibi yapısal nitelikleri ile dış renk değerlerinde önemli bir değişiklik meydana gelmemiştir. %20 KLU kullanım düzeyine kadar kadar mufinlerin tekstürel ve duyusal özelliklerinde olumsuz bir etki saptanmamış, hatta KLU ilavesinin mufinlere hoşa giden bir tat ve lezzet kazandırdığı belirlenmiş ancak %30 düzeyine çıkıldığı zaman bu özelliklerde sınırlı düzeyde bir gerileme tesbit edilmiştir. Başlıca hedef kitle olan çölyak hastaları ve baklagil tüketimi az olan çocuklar ve gençlere yönelik olarak %20 oranında KLU ilavesi ile glutensiz ve glutenli fonksiyonel mufin üretimi gerçekleştirilebileceği sonucuna ulaşılmıştır. Böylece ülkemizde üretimi ve tüketimi yüksek, geleneksel bir ürün olan leblebi için yeni bir kullanım alanı oluşturulabilecek ve özellikle kırık leblebilerin katma değerinin artmasına katkıda bulunulabilecektir. During the production of leblebi (roasted chickpea) the process damaged roasted chickpeas (DRC) are obtained as a by-product. In this study, it was aimed to investigate the use of DRC as a flour in the production of mufin and gluten-free mufin as it has a low economical value and consumer interest. The muffins were prepared by replacing wheat flour or gluten-free muffin flour (mixture of corn and potato starch, corn flour, and rice flour) with DRC flour at 0%, 10%, 20% and 30% levels. After that their chemical, physical, textural, structural and sensory properties was investigated. As the DRC flour ratio increased, the protein, mineral substance and total dietary fiber contents of the muffins was also increased, also in the inner color and cake weight values were statistically changed. However, in the structural features such as volume, specific volume, symmetry index and outer color values were not nd no significantly change. Sensory analysis were indicated that the use of DRC flour up to 20% did not effect the textural and sensory properties in the muffins beside it was found that the muffins has a pleasant taste and flavor. On the other hand it was seen that these properties were decresed by the use of 30% DRC flour. It could be concluded that gluten-free and gluten-containing functional muffins can be produced with the addition of 20% BRC flour for celiac patients who are the main target group, children and young people with low legume consumption. Therefore it may be possible to use the waste of roasted chickpeas in new areas that is obtained from chickpea and a traditional product with high production and consumption in our country and this may contribute to the increase in the added value of process damaged roasted chickpeas.
