Günümüzde kurutma işlemi genellikle belli sıcaklık, bağıl nem ve akış hızına sahip sıcak hava yardımıyla gerçekleştirilmektedir. Sıcak hava ile kurutmada kurutma işlemi, suyun gıda yüzeyinden evaporasyonu ile gerçekleştirilir. Fakat sıcak hava yardımıyla yapılan kurutma işleminin birçok dezavantajları vardır. Katı madde hareketinden kaynaklanan yüzey sertleşmesi gerçekleşebilmekte, ürün üzerindeki stresten dolayı yapısal bozulma ve büzülme meydana gelebilmektedir. Koku ve aroma çoğunlukla değişmekte, ürünün rengi genellikle diğer kurutma yöntemleriyle yapılan kurutulmuş ürüne göre daha esmer renk alabilmektedir. Ayrıca kurutulan ürünün rehidrasyonu diğer yöntemlere göre daha düşük seviyede olabilmektedir. Sıcak havayla yapılan kurutma yöntemiyle oluşabilecek bu dezavantajlardan dolayı yeni kurutma yöntemleri geliştirilmektedir. Bu yeni yöntemler kurutma sonucu oluşan kalite kayıplarını en aza indirmek, besinsel içeriği en iyi şekilde korumayı amaçlamaktadır. Bu çalışmada elma konvansiyonel kurutmaya alternatif olarak puf yapı kazandırılarak kurutulmuş, puf kurutma yönteminde kaliteyi olumlu yönde etkilemesi amaçlanan farklı ve ilave edilen proseslerle klasik uygulanan puf yapı kurutmaya göre kalite kriterlerinin olumlu yönde geliştirilmesi amaçlanmıştır. Puf kurutma 2 aşamadan oluşmaktadır; 1. aşama nem seviyesinin belli düzeye düşürülmesi (ön kurutma), 2. aşama puf kurutma şartları altında kurutmanın sonlandırılmasıdır. Planlanan çalışma iki önemli bölümden meydana gelmektedir. İlk bölümde puf kurutmada 1. kurutma aşamasında nemin % 35'e düşürülmesinde kullanılan klasik kurutma (hava) yöntemi yerine liyofilizasyon, vakum, mikrodalga, mikrodalga-vakum kurutma yöntemleri kullanılarak nem % 35 civarına düşürülüp 2. aşamada genel puf kurutma şartları uygulanarak kurutma gerçekleştirilmiştir. Bu şekilde hava (AD), vakum (VD), liyofilizasyon (FD), mikrodalga (180, 360, 600MW), mikrodalga-vakum (0.9, 1.8, 2.7kW MWVD) ve puf kurutma (puf) yöntemleri kullanılarak 6 farklı kurutma sistemi ile 21 farklı kurutma işlemi gerçekleştirilmiştir. Kurutma sonrasında ürünlerin fizikokimyasal (nem miktarı (%), su aktivitesi, renk, rehidrasyon kapasitesi, hacim, büzülme, askorbik asit, fenolik madde, antioksidan aktivite analizleri), besinsel ve duyusal özelliklerinin değişimi belirlenmiştir. AD, VD, FD işlemleri sırasıyla 250, 220, 840 dakika; AD+puf, VD+puf, FD+puf işlemleri 180, 161, 750 dakika olarak belirlenmiştir. Puf kurutma AD, VD ve FD işlemlerinin süresini sırasıyla %28, 27 ve 29 oranında kısaltmıştır. Kurutulmuş örneklerin su aktivite değerleri 0.251-0.305 arasında tespit edilmiştir. Toplam renk değişimi (ΔE) değeri en yüksek 180MW, 180MW+puf, AD örneklerinde sırasıyla 33.43, 27.82, 27.72; en düşük FD, FD+puf, 600MW örneklerinde sırasıyla 7.20, 12.10 ve 15.98 ölçülmüştür. En düşük görünür hacim 180MW'de 1.45 mL olarak ölçülürken en yüksek görünür hacim FD' de 3.13 mL olarak ölçülmüştür. 180, 360 ve 600MW örneklerinin görünür hacimleri sırasıyla 1.45, 1.70 ve 1.76 mL; 0.9, 1.8, 2.7 kW MWVD örneklerinin görünür hacimleri sırasıyla 1.68, 1.83, 2.34 mL olarak ölçülmüştür. Mikrodalga gücü arttıkça puffing etkisi yarattığı ve ürünlerin şişerek hacimsel genişleme olduğu gözlemlenmiştir. Bu duruma ürün başına düşen mikrodalga güç yoğunluğu arttıkça materyal içerisindeki suyun sıcaklığının ve buhar basıncının artmasından dolayı bu ikili mekanizma şişirme işlemine katkıda bulunmuştur. AD örneklerinin görünür hacmi 1.54 mL, AD+puf örneklerin görünür hacimleri 1.85 mL ölçülerek tek başına AD ile kurutulmuş örneklere göre %20 daha fazla hacimli olduğu belirlenmiştir. AD+puf, 0.9, 1.8 ve 2.7kW MWVD örneklerinin görünür hacimleri AD' ye göre sırasıyla %20, 9, 17 ve 51 oranında daha fazla olduğu belirlenmiştir. FD, MW, MWVD ve puf kurutma işlemlerinde büzülme olayı daha az gerçekleşmiştir. Farklı kurutma yöntemleriyle kurutulmuş elma dilimlerinin porozite (gözeneklilik) değerleri 0.38-0.82 arasında bulunmuştur. En düşük porozite 180MW, en yüksek porozite FD örneklerinde bulunmuştur. AD, MW, MWVD ve VD kurutma sonrası uygulanan puf kurutma işlemi örneklerin gözenekliliğini artırmıştır. Benzer şekilde AD sonrası uygulanan MWVD işlemide ürünlerin porozite değerini artırmıştır. Örneklerin rehidrasyon oranları %310-405 aralığında ölçülmüştür. En düşük rehidrasyon oranları 180MW ve AD örneklerinde sırasıyla %308 ve 310 olarak ölçülmüştür. En yüksek rehidrasyon oranı FD örneklerinde %405 ölçülmüştür. Gözeneklilik miktarı en fazla FD örneklerinde tespit edildiğinden dolayı, en yüksek rehidrasyon oranı FD örneklerinde ölçülmüştür. 180, 360, 600MW ve 0.9, 1.8, 2.7KW MWVD örneklerinin rehidrasyon oranları sırasıyla %307, 320, 336 ve 332, 340, 349 olarak tespit edilmiştir. Hem MW hem de MWVD kurutmada ürün başına düşen güç yoğunluğu artışıyla üründe gözenekliliğin artmasından dolayı rehidrasyon artışına katkısı olmuştur. En düşük askorbik asit (AA) miktarı 180MW, 180MW+puf ve AD örneklerinde sırasıyla 4.40, 5.71 ve 6.12 mg/100g km; en yüksek AA miktarı FD, 2.7kW ve 1.8 kW MWVD örneklerinde 14.45, 13.87 ve 13.04 mg/100g km tespit edilmiştir. AD, 180MW, 360MW ve 600MW örneklerinde TFM miktarı sırasıyla 249.02, 256.15, 263.66 ve 411.37 mg GAE/100g km ölçülürken AD+puf, 180W+puf, 360W+puf ve 600W+puf örneklerinde TFM miktarı sırasıyla 269.55, 308.45, 368.22 ve 421.09 mg GAE/100g ölçülmüştür. Burada puf kurutma işleminin kombineli kullanımıyla TFM miktarı artışı olmuştur. Bu durumun sebebi puf işlemi sırasında sıcaklık ve basınç, şişirilmiş materyalin kimyasal bileşiminde bir değişikliğe neden olmuştur. DPPH değeri en düşük AD, 180MW ve 180MW+puf örneklerinde sırasıyla 13.67, 13.87 ve 14.22 µmol TE/g km; en yüksek FD, FD+puf ve 2.7kW MWVD örneklerinde 32.53, 26.77 ve 26.38 µmol TE/g km olarak belirlenmiştir. ABTS değeri en düşük 180MW, 180MW+puf ve AD örneklerinde sırasıyla 9.48, 10.27 ve 12.66 µmol TE/g km; en yüksek FD, FD+puf ve 2.7kW MWVD örneklerinde sırasıyla 27.25, 20.78 ve 18.93 µmol TE/g km olarak belirlenmiştir. Sertlik değeri en fazla AD örneklerinde 5647 g, en düşük sertlik değeri FD örneklerinde 1602 g olarak ölçülmüştür. Kurutma sonrası örneklerin sertlik değerleri arasındaki fark istatistiksel olarak önemli bulunmuştur (p<0.05). Mikrodalga-vakum kurutma ve puf kurutmanın kombineli kullanımı tekstür açısından olumlu sonuçlar vermiştir. Her iki yöntemde rehidrasyona karşı bir bariyer olarak bilinen doku sertleşmesini azaltarak daha yumuşak dokulu ürün elde edilmesini sağlamaktadır. Puf kurutma ile yapılan çalışmalarda genellikle 1, 2, 3 bar basınçta kurutmalar yapıldığı görülmüş, daha üst bir basınçtaki çalışmalara rastlanmamıştır. Çalışmamızda 6 bar kullanılmıştır ve bu basınç değeri ile yapılan puf kurutma işlemi literatürde bir ilk olma özelliğini taşımaktadır. Hava+mikrodalga-vakum ve hava+puf kurutma kombineli yöntemlerinin karşılaştırılması literatürde mevcut değildir, çalışmamızda bu kıyaslama yapılmıştır. Literatürde tek başına mikrodalga-vakum kurutma ve mikrodalga-vakum+puf kurutma işlemlerinin kıyaslanması da çalışmamızla birlikte literatüre kazandırılmıştır. Çalışma ile ülkemizde en çok üretilen meyvelerin başında gelen elma meyvesinin farklı yöntemler ile kurutularak, elde edilen kurutulmuş elma meyvelerinin kalite kriterlerinin belirlenmesi esas alınarak daha nitelikli ürün elde edilebilmesi konusunda kurutma sanayine yol gösterici bilgiler sunulması amaçlanmıştır. Bölgemizde ekonomik öneme sahip elma meyvesinin kurutulmasıyla elde edilen ürünün bazı kalite kriterleri ve özelliklerindeki değişimlerin belirlenmesi ve besin öğelerinde meydana gelebilecek kayıplara rağmen yüksek kalorili yağ ve tuz içeren çerezlere (patates ve mısır cipsi) alternatif olan kurutulmuş meyvelerdeki değişimlerin tespiti sağlıklı beslenme açısından önemli olacağı sonucuna varılmıştır. Bölgemiz ve ülkemiz için meyve kurutma üzerine çalışmak isteyen girişimcilerin üretimde karşılaşabilecekleri sorunlara yönelik önemli bilgiler elde edileceği, farklı yapıdaki (puf yapı kazandırılmış) elma kurularının tüketici ilgisini çekerek yeni ve farklı bir ürün geliştirilerek, mevcut kuru ürün çeşitliliğine katkıda bulunulması hedeflenmiştir. Today, the drying process is generally carried out with the help of hot air with a certain temperature, relative humidity and flow rate. In hot air drying, the drying process is carried out by the evaporation of water from the food surface. However, drying with the help of hot air has many disadvantages. Surface hardening may occur due to solid material movement, structural deterioration and shrinkage may occur due to stress on the product. Smell and aroma often change, and the color of the product can generally be darker than the dried product made by other drying methods. In addition, the rehydration of the dried product may be at a lower level than other methods. New drying methods are being developed due to these disadvantages that may occur with the drying method with hot air. These new methods aim to minimize the quality losses caused by drying and to preserve the nutritional content in the best way. In this study, it is aimed to improve the quality criteria in a positive way according to the classically applied puff drying with different and added processes that are aimed to affect the quality positively in the puff drying method. Puff drying consists of 2 stages; The first stage is to reduce the humidity level to a certain level (pre-drying), the second stage is to end the drying under puff drying conditions. The planned study consists of two important parts. In the first part, instead of the classical drying (air) method used to reduce the humidity to 35% in the pre-drying stage in puff drying, lyophilization, vacuum, microwave, microwave-vacuum drying methods were used to reduce the humidity to around 35%, and in the second stage, general puff drying conditions were applied. In this way, air (AD), vacuum (VD), lyophilization (FD), microwave (180, 360, 600MW), microwave-vacuum (0.9, 1.8, 2.7kW MWVD) and puff drying (puff) methods 21 different drying processes were carried out with 6 different drying systems. After drying, the changes in the physicochemical (moisture content (%), water activity, color, rehydration capacity, volume, shrinkage, ascorbic acid, phenolic substance, antioxidant activity analysis), nutritional and sensory properties of the products were determined. AD, VD, FD process are 250, 220, 840 minutes respectively; AD+puff, VD+puff, FD+puff process are determined as 180, 161, 750 minutes. Puff drying shortened the duration of AD, VD and FD processes by 28, 27 and 29%, respectively. The water activity values of the dried samples were determined between 0.251-0.305. The highest total color change (ΔE) values were 33.43, 27.82, 27.72 in 180MW, 180MW+puff, AD samples, respectively; the lowest total color change FD, FD+puff, 600MW samples were measured 7.20, 12.10 and 15.98, respectively. The lowest apparent volume was measured as 1.45 mL at 180MW, while the highest apparent volume was measured as 3.13 mL at FD. The apparent volumes of 180, 360 and 600MW samples were 1.45, 1.70 and 1.76 mL, respectively; the apparent volumes of 0.9, 1.8, 2.7 kW MWVD samples were measured as 1.68, 1.83, 2.34 mL, respectively. It was observed that as the microwave power increased, it created a puffing effect and the products swelled and expanded. This dual mechanism contributed to the swelling process due to the increase in the temperature of the water in the material and the vapor pressure as the microwave power density per product increased. The apparent volume of AD samples was measured as 1.54 mL and the apparent volume of AD+puff samples was measured as 1.85 mL and it was determined that they were 20% more voluminous than samples dried with AD alone. The apparent volumes of AD+puff, 0.9, 1.8 and 2.7kW MWVD samples were determined to be 20, 9, 17 and 51 percent higher than AD, respectively. Shrinkage occurred less in FD, MW, MWVD and puff drying processes. Porosity values of apple slices dried with different drying methods were found between 0.38-0.82. The lowest porosity was 180MW and the highest porosity was found in FD samples. Puff drying after AD, MW, MWVD and VD drying increased the porosity of the samples. Similarly, the MWVD treatment applied after AD increased the porosity value of the products. The rehydration rates of the samples were measured in the range of 310-405%. The lowest rehydration rates were measured as 308% and 310 in 180MW and AD samples, respectively. The highest rehydration rate was measured at 405% in FD samples. Since the amount of porosity was determined the most in FD samples, the highest rehydration rate was measured in FD samples. Rehydration rates of 180, 360, 600MW and 0.9, 1.8, 2.7KW MWVD samples were determined as 307%, 320, 336 and 332, 340, 349, respectively. In both MW and MWVD drying, the increase in power density per product contributed to the increase in rehydration due to the increase in porosity in the product. The lowest amount of ascorbic acid (AA) was 4.40, 5.71 and 6.12 mg/100g km in 180MW, 180MW+puff and AD samples, respectively; the highest amount of AA was determined in FD, 2.7kW and 1.8 kW MWVD samples at 14.45, 13.87 and 13.04 mg/100g km. In AD, 180MW, 360MW and 600MW samples, the TFM amount is determined as 249.02, 256.15, 263.66 and 411.37 mg GAE/100g km, respectively, while the TFM amount in AD+puff, 180W+puff, 360W+puff and 600W+puff samples 269.55, 308.45, 368.22 and 421.09 mg GAE/100g were determined, respectively. Here, the amount of TFM increased with the combined use of puff drying process. This is because the temperature and pressure during the puff process caused a change in the chemical composition of the blown material. AD, 180MW and 180MW+puff samples with the lowest DPPH values were 13.67, 13.87 and 14.22 µmol TE/g km, respectively; the highest FD was determined as 32.53, 26.77 and 26.38 µmol TE/g km in FD+puff and 2.7kW MWVD samples. The lowest ABTS values were 9.48, 10.27 and 12.66 µmol TE/g km in 180MW, 180MW+puf and AD samples, respectively; the highest ABTS values were determined as 27.25, 20.78 and 18.93 µmol TE/g km in FD, FD+puff and 2.7kW MWVD samples, respectively. The highest hardness value was 5647 g in AD samples, and the lowest hardness value was 1602 g in FD samples. The difference between the hardness values of the samples after drying was found to be statistically significant (p<0.05). Combined use of microwave-vacuum drying and puff drying gave positive results in terms of texture. In both methods, it provides a softer textured product by reducing tissue hardening, which is known as a barrier against rehydration. With the study, it is aimed to provide guidance to the drying industry in terms of obtaining more qualified products based on the determination of the quality criteria of the dried apple fruits obtained by drying the apple fruit, which is one of the most produced fruits in our country, with different methods. It has been concluded that the determination of the changes in some quality criteria and properties of the product obtained by drying the apple fruit, which has economic importance in our region, and the determination of the changes in dried fruits, which are an alternative to high-calorie oil and salt-containing cookies (potato and corn chips) despite the losses that may occur in nutritional elements, will be important in terms of healthy nutrition. . It is aimed to contribute to the existing dry product variety by developing a new and different product by attracting the attention of the consumers who want to work on fruit drying for our region and our country. AD, 180MW, 360MW ve 600MW örneklerinde TFM miktarı sırasıyla 249.02, 256.15, 263.66 ve 411.37 mg GAE/100g km ölçülürken AD+puf, 180W+puf, 360W+puf ve 600W+puf örneklerinde TFM miktarı sırasıyla 269.55, 308.45, 368.22 ve 421.09 mg GAE/100g ölçülmüştür. Burada puf kurutma işleminin kombineli kullanımıyla TFM miktarı artışı olmuştur. Bu durumun sebebi puf işlemi sırasında sıcaklık ve basınç, şişirilmiş materyalin kimyasal bileşiminde bir değişikliğe neden olmuştur. DPPH değeri en düşük AD, 180MW ve 180MW+puf örneklerinde sırasıyla 13.67, 13.87 ve 14.22 µmol TE/g km; en yüksek FD, FD+puf ve 2.7kW MWVD örneklerinde 32.53, 26.77 ve 26.38 µmol TE/g km olarak belirlenmiştir. ABTS değeri en düşük 180MW, 180MW+puf ve AD örneklerinde sırasıyla 9.48, 10.27 ve 12.66 µmol TE/g km; en yüksek FD, FD+puf ve 2.7kW MWVD örneklerinde sırasıyla 27.25, 20.78 ve 18.93 µmol TE/g km olarak belirlenmiştir. Sertlik değeri en fazla AD örneklerinde 5647 g, en düşük sertlik değeri FD örneklerinde 1602 g olarak ölçülmüştür. Kurutma sonrası örneklerin sertlik değerleri arasındaki fark istatistiksel olarak önemli bulunmuştur (p<0.05). Mikrodalga-vakum kurutma ve puf kurutmanın kombineli kullanımı tekstür açısından olumlu sonuçlar vermiştir. Her iki yöntemde rehidrasyona karşı bir bariyer olarak bilinen doku sertleşmesini azaltarak daha yumuşak dokulu ürün elde edilmesini sağlamaktadır. Puf kurutma ile yapılan çalışmalarda genellikle 1, 2, 3 bar basınçta kurutmalar yapıldığı görülmüş, daha üst bir basınçtaki çalışmalara rastlanmamıştır. Çalışmamızda 6 bar kullanılmıştır ve bu basınç değeri ile yapılan puf kurutma işlemi literatürde bir ilk olma özelliğini taşımaktadır. Hava+mikrodalga-vakum ve hava+puf kurutma kombineli yöntemlerinin karşılaştırılması literatürde mevcut değildir, çalışmamızda bu kıyaslama yapılmıştır. Literatürde tek başına mikrodalga-vakum kurutma ve mikrodalga-vakum+puf kurutma işlemlerinin kıyaslanması da çalışmamızla birlikte literatüre kazandırılmıştır. Çalışma ile ülkemizde en çok üretilen meyvelerin başında gelen elma meyvesinin farklı yöntemler ile kurutularak, elde edilen kurutulmuş elma meyvelerinin kalite kriterlerinin belirlenmesi esas alınarak daha nitelikli ürün elde edilebilmesi konusunda kurutma sanayine yol gösterici bilgiler sunulması amaçlanmıştır. Bölgemizde ekonomik öneme sahip elma meyvesinin kurutulmasıyla elde edilen ürünün bazı kalite kriterleri ve özelliklerindeki değişimlerin belirlenmesi ve besin öğelerinde meydana gelebilecek kayıplara rağmen yüksek kalorili yağ ve tuz içeren çerezlere (patates ve mısır cipsi) alternatif olan kurutulmuş meyvelerdeki değişimlerin tespiti sağlıklı beslenme açısından önemli olacağı sonucuna varılmıştır. Bölgemiz ve ülkemiz için meyve kurutma üzerine çalışmak isteyen girişimcilerin üretimde karşılaşabilecekleri sorunlara yönelik önemli bilgiler elde edileceği, farklı yapıdaki (puf yapı kazandırılmış) elma kurularının tüketici ilgisini çekerek yeni ve farklı bir ürün geliştirilerek, mevcut kuru ürün çeşitliliğine katkıda bulunulması hedeflenmiştir. Today, the drying process is generally carried out with the help of hot air with a certain temperature, relative humidity and flow rate. In hot air drying, the drying process is carried out by the evaporation of water from the food surface. However, drying with the help of hot air has many disadvantages. Surface hardening may occur due to solid material movement, structural deterioration and shrinkage may occur due to stress on the product. Smell and aroma often change, and the color of the product can generally be darker than the dried product made by other drying methods. In addition, the rehydration of the dried product may be at a lower level than other methods. New drying methods are being developed due to these disadvantages that may occur with the drying method with hot air. These new methods aim to minimize the quality losses caused by drying and to preserve the nutritional content in the best way. In this study, it is aimed to improve the quality criteria in a positive way according to the classically applied puff drying with different and added processes that are aimed to affect the quality positively in the puff drying method. Puff drying consists of 2 stages; The first stage is to reduce the humidity level to a certain level (pre-drying), the second stage is to end the drying under puff drying conditions. The planned study consists of two important parts. In the first part, instead of the classical drying (air) method used to reduce the humidity to 35% in the pre-drying stage in puff drying, lyophilization, vacuum, microwave, microwave-vacuum drying methods were used to reduce the humidity to around 35%, and in the second stage, general puff drying conditions were applied. In this way, air (AD), vacuum (VD), lyophilization (FD), microwave (180, 360, 600MW), microwave-vacuum (0.9, 1.8, 2.7kW MWVD) and puff drying (puff) methods 21 different drying processes were carried out with 6 different drying systems. After drying, the changes in the physicochemical (moisture content (%), water activity, color, rehydration capacity, volume, shrinkage, ascorbic acid, phenolic substance, antioxidant activity analysis), nutritional and sensory properties of the products were determined. AD, VD, FD process are 250, 220, 840 minutes respectively; AD+puff, VD+puff, FD+puff process are determined as 180, 161, 750 minutes. Puff drying shortened the duration of AD, VD and FD processes by 28, 27 and 29%, respectively. The water activity values of the dried samples were determined between 0.251-0.305. The highest total color change (ΔE) values were 33.43, 27.82, 27.72 in 180MW, 180MW+puff, AD samples, respectively; the lowest total color change FD, FD+puff, 600MW samples were measured 7.20, 12.10 and 15.98, respectively. The lowest apparent volume was measured as 1.45 mL at 180MW, while the highest apparent volume was measured as 3.13 mL at FD. The apparent volumes of 180, 360 and 600MW samples were 1.45, 1.70 and 1.76 mL, respectively; the apparent volumes of 0.9, 1.8, 2.7 kW MWVD samples were measured as 1.68, 1.83, 2.34 mL, respectively. It was observed that as the microwave power increased, it created a puffing effect and the products swelled and expanded. This dual mechanism contributed to the swelling process due to the increase in the temperature of the water in the material and the vapor pressure as the microwave power density per product increased. The apparent volume of AD samples was measured as 1.54 mL and the apparent volume of AD+puff samples was measured as 1.85 mL and it was determined that they were 20% more voluminous than samples dried with AD alone. The apparent volumes of AD+puff, 0.9, 1.8 and 2.7kW MWVD samples were determined to be 20, 9, 17 and 51 percent higher than AD, respectively. Shrinkage occurred less in FD, MW, MWVD and puff drying processes. Porosity values of apple slices dried with different drying methods were found between 0.38-0.82. The lowest porosity was 180MW and the highest porosity was found in FD samples. Puff drying after AD, MW, MWVD and VD drying increased the porosity of the samples. Similarly, the MWVD treatment applied after AD increased the porosity value of the products. The rehydration rates of the samples were measured in the range of 310-405%. The lowest rehydration rates were measured as 308% and 310 in 180MW and AD samples, respectively. The highest rehydration rate was measured at 405% in FD samples. Since the amount of porosity was determined the most in FD samples, the highest rehydration rate was measured in FD samples. Rehydration rates of 180, 360, 600MW and 0.9, 1.8, 2.7KW MWVD samples were determined as 307%, 320, 336 and 332, 340, 349, respectively. In both MW and MWVD drying, the increase in power density per product contributed to the increase in rehydration due to the increase in porosity in the product. The lowest amount of ascorbic acid (AA) was 4.40, 5.71 and 6.12 mg/100g km in 180MW, 180MW+puff and AD samples, respectively; the highest amount of AA was determined in FD, 2.7kW and 1.8 kW MWVD samples at 14.45, 13.87 and 13.04 mg/100g km. In AD, 180MW, 360MW and 600MW samples, the TFM amount is determined as 249.02, 256.15, 263.66 and 411.37 mg GAE/100g km, respectively, while the TFM amount in AD+puff, 180W+puff, 360W+puff and 600W+puff samples 269.55, 308.45, 368.22 and 421.09 mg GAE/100g were determined, respectively. Here, the amount of TFM increased with the combined use of puff drying process. This is because the temperature and pressure during the puff process caused a change in the chemical composition of the blown material. AD, 180MW and 180MW+puff samples with the lowest DPPH values were 13.67, 13.87 and 14.22 µmol TE/g km, respectively; the highest FD was determined as 32.53, 26.77 and 26.38 µmol TE/g km in FD+puff and 2.7kW MWVD samples. The lowest ABTS values were 9.48, 10.27 and 12.66 µmol TE/g km in 180MW, 180MW+puf and AD samples, respectively; the highest ABTS values were determined as 27.25, 20.78 and 18.93 µmol TE/g km in FD, FD+puff and 2.7kW MWVD samples, respectively. The highest hardness value was 5647 g in AD samples, and the lowest hardness value was 1602 g in FD samples. The difference between the hardness values of the samples after drying was found to be statistically significant (p<0.05). Combined use of microwave-vacuum drying and puff drying gave positive results in terms of texture. In both methods, it provides a softer textured product by reducing tissue hardening, which is known as a barrier against rehydration. With the study, it is aimed to provide guidance to the drying industry in terms of obtaining more qualified products based on the determination of the quality criteria of the dried apple fruits obtained by drying the apple fruit, which is one of the most produced fruits in our country, with different methods. It has been concluded that the determination of the changes in some quality criteria and properties of the product obtained by drying the apple fruit, which has economic importance in our region, and the determination of the changes in dried fruits, which are an alternative to high-calorie oil and salt-containing cookies (potato and corn chips) despite the losses that may occur in nutritional elements, will be important in terms of healthy nutrition. . It is aimed to contribute to the existing dry product variety by developing a new and different product by attracting the attention of the consumers who want to work on fruit drying for our region and our country.
