Ülkemiz meyve ve sebze yetiştiriciliği çok çeşitli türü barındırmaktadır. Bunlardan biri de başta Kayseri olmak üzere farklı bölgelere yayılmış olan gilaburu meyvesidir. Gilaburu meyvesi içerdiği değerli besin öğeleri nedeniyle günümüzde meyve suyu, nektar, sirke ve reçel gibi farklı alanlarda kullanılmaktadır. Gilaburu meyvesi geleneksel tıpta böbrek kum ve/veya taşlarını eritmekte, bağışıklık sistemini güçlendirmekte, kolesterolü düşürmekte, yüksek tansiyon ve kalp hastalıklarının tedavisinde kullanılmaktadır. Meyve ve sebzelerde ürünlerin daha uzun süre muhafaza edilmesi ve bakteri, maya ve küf kaynaklı bozulmaların önlenmesi için ilk çağlardan bu yana kurutma işlemi uygulanmaktadır. Üreticilerin kullandığı geleneksel kurutma yöntemlerinin başında güneşte kurutma gelmektedir. Bu yöntem az maliyetli ve pratik olmasına karşın kurutulan üründe besin kayıplarına yol açması nedeniyle üreticileri alternatif kurutma yöntemlerine yönlendirmiştir. Bu çalışmada gilaburu meyveleri Kayseri'de yerel bir üreticinin bahçesinden tek seferde toplanıp, Süleyman Demirel Üniversitesi Gıda Mühendisliği Bölüm laboratuvarına getirilmiştir. Farklı kurutma yöntemleriyle (konveksiyonel, ohmik ısıtma ön işlemli konveksiyonel ve mikrodalga destekli) farklı parametrelerle kurutulmuştur. Gilaburu meyvesi konveksiyonel kurutma da 60, 70 ve 80℃'lerde, mikrodalga destekli kurutma da ise 180, 360 ve 540 W güçlerinde üç tekerrür halinde kurutulmuştur. Bununla birlikte 1, 2, 3 ve 5 dakika ohmik ısıtma ön işlemine beş tekerrürde tabi tutulduktan sonra 70℃ konveksiyonel kurutma da kurutma işlemi gerçekleştirilmiştir. Sonrasında farklı kurutma tekniklerinin kuruma karakteristikleri üzerindeki etkileri incelenmiştir. Farklı kurutma teknikleriyle elde edilen kuru gilaburu meyvesinin bazı fiziksel ve kimyasal özellikleri yapılan analizler ile belirlenmiştir. Yapılan analizlerden çıkan sonuçlarla kurutma tekniklerinin avantaj ve dezavantajları ortaya koyulmuştur. Gilaburu meyvesinin konveksiyonel olarak 60, 70 ve 80℃'lerde kurutulmasında kurutma süreleri sırasıyla 2663, 856 ve 420 dakika, 180, 360 ve 540 W güçlerinde mikrodalga destekli kurutulmasında sırasıyla 180, 85 ve 57 dakika olarak belirlenmiştir. Ohmik ısıtma ön işlemli 70℃ konveksiyonel kurutmalarda ise 1 dakikalık ön işlem sonrasında kurutma süresi 750 dakika sürerken, 5 dakikalık ön işlem uygulanan örneklerde bu süre 600 dakikaya kadar düşürülmüştür. Taze gilaburu meyvesine yapılan kurutma işlemleri ile birlikte suda çözünür kuru madde değerlerinin düştüğü gözlenmiştir. Bununla birlikte taze meyveye en yakın, renk değişim (ΔΕ) değeri en düşük örnekler 1 dakika ohmik ısıtma ön işlemli kurutma sonrasında elde edilmiştir. Yapılan kurutma işlemlerinin rehidrasyon oranına olan etkisi istatistiksel olarak önemsiz bulunmuştur. Toplam fenolik madde analizi sonucunda taze meyveye (45,46 mg GAE/g KM) en yakın değer 360 W mikrodalga gücünde kurutulan örneklerde (42,56 mg GAE/g KM) tespit edilmiştir. Askorbik asit miktarı en yüksek taze meyvede (5,14 mg AA/100 g KM), sonrasında ise mikrodalga destekli kurutma (1,54-1,60 mg AA/100 g KM) ile kurutulan örneklerde belirlenmiştir. Kuru gilaburu örneklerinin antioksidan aktivite değerlerinin yapılan kurutma işlemleriyle birlikte taze meyveye göre arttığı gözlenmiştir. Tüm kurutma yöntemlerinin sonunda kuru ürünlerde taze meyveye göre spektrofotometrik yöntem ile belirlenen antosiyanin içeriğinin 41,61 mg Cyn-3-glu/100 g KM'den 6,21 mg Cyn-3-glu/100 g KM'ye düştüğü tespit edilmiştir. Yapılan kurutma işlemleri ile en yüksek antosiyanin değerine (19,71 mg Cyn-3-glu/100 g KM) sahip kuru meyvenin 2 dakika ohmik ısıtma ön işlemli 70℃ kurutma ile elde edilen örnekler olduğu belirlenmiştir. Bununla birlikte en düşük antioksidan aktiviteye (72,77 mg TE/g KM) ve antosiyanin miktarına (6,21 mg Cyn-3-glu/100 g KM) sahip örnekler ise 60℃ konveksiyonel kurutma sonunda elde edilmiştir. Our country has many species in fruit and vegetable cultivation. One of them is the gilaburu fruit, which has spread to different regions, especially in Kayseri. Due to the valuable nutrients it contains, gilaburu fruit finds use in different industries such as fruit juice, nectar, vinegar and jam. Thanks to the nutrients it contains, gilaburu fruit is used in traditional medicine to dissolve kidney sand and / or stones, strengthen the immune system, lower cholesterol, and treat high blood pressure and heart diseases. Drying process, has been applied since ancient times to prevent deterioration caused by bacteria, yeast and mold and prolong shelf-life of fruits and vegetables products. Sun drying is one of the traditional drying methods used by manufacturers. Although this method is less costly and practical, it causes nutrient losses in the dried product. For this reason, manufacturers have been lead to convectional drying or its alternatives. In this study, gilaburu fruits were collected in one go from the garden of a local producer in Kayseri and brought to the Food Engineering Department laboratory of Süleyman Demirel University. Drying process was carried out by different drying methods (convectional drying, convectional drying with ohmic heating pretreatment, microwave assisted drying) with different parameters. Gilaburu fruit was dried in convectional drying at 60, 70 and 80 ℃, and in microwave assisted drying at 180, 360 and 540 W powers, for each as three paralel. In addition, gilaburu fruits were subjected to five replications for 1, 2, 3 and 5 minutes ohmic heating pretreatment, and then conventional drying was carried out at 70 ℃. Afterwards, the effects of different drying techniques on drying characteristics were investigated. The physical and chemical properties of dried gilaburu fruit obtained by different drying techniques were determined by the relevant analyzes. The advantages and disadvantages of drying techniques were determined and revealed with the results of the analyzes. In convectional drying of gilaburu fruit at 60, 70 and 80°C, the drying times were 2663, 856 and 420 minutes, respectively. It was determined that the drying times of the fruit in microwave assisted drying at 180, 360 and 540 W powers were 180, 85 and 57 minutes. In 70 ℃ convectional drying with ohmic heating pretreatment, the drying time took 750 minutes after 1 minute of pretreatment, while this time was reduced to 600 minutes in samples that were pretreated for 5 minutes. It was observed that the water-soluble dry matter values decreased with the drying processes applied to the fresh gilaburu fruit. On the other hand, drying samples with the lowest color change (ΔΕ) values and closest to fresh fruit were obtained after the convectional drying process (70°C) with 1 minute of ohmic heating pretreatment. It was determined that the effect of drying processes on rehydration rates was statistically insignificant. As a result of the total phenolic substance analysis, it was found that the closest value compared to the fresh fruit (45,46 mg GAE/g DM) was for the samples dried at 360 W microwave power (42,56 mg GAE/g DM). After fresh fruit (5,14 mg AA/100 g DM), the highest amount of ascorbic acid was obtained in samples dried by microwave assisted drying (1,54-1,60 mg AA/100 g DM). It was observed that the antioxidant activity values of dried gilaburu samples increased with the drying processes compared to the fresh fruit. Compared to value which fresh samples have, anthocyanin content of all gilaburu fruits dried by all studied techniques reduced from 41,61 mg Cyn-3-glu/100 g DM to 6,21 mg Cyn-3-glu/100 g DM. With the drying processes, it was determined that the dried fruit with the highest anthocyanin value was in the samples obtained with 2 minutes ohmic heating pretreatment and drying at 70 ℃ (19,71 mg Cyn-3-glu/100 g DM).
