Bu çalışmasının amacı Antalya'da dört ve beş yıldızlı otel işletmelerinde çalışan yöneticilerin ve personelin gıda güvenliği yönetim sistemleri hakkındaki bilgi ve uygulama seviyelerini değerlendirmektir. Araştırma kapsamına alınan 153 otel işletmesinin; 65'i dört yıldızlı, 88'i beş yıldızlıdır. Araştırma verileri Eylül-Kasım 2021 döneminde toplanmıştır. Araştırmada yöneticilere 4 tanesi kişisel soru olmak üzere 24 soru, personele 5'i kişisel soru olmak üzere 30 soru yöneltilmiştir. Toplanan veriler istatistik paket programı SPSS 28.0 ile analiz edilmiştir. Verilere frekans testleri ve Ki-Kare testleri uygulanmıştır. Çalışmaya katılan otel yöneticilerinin tamamı, işletmelerinin ISO 22000 (HACCP) Gıda Güvenliği Yönetim Sistemine sahip olduğunu bildirmiştir. Yönetici düzeyinde çalışan personelin HACCP sisteminin uygulanması esnasında en çok zorlandıkları basamağın kayıt ve dökümantasyon basamağı olduğu belirlenmiştir. Çalışmada işletmelerin gıda güvenliğinin yenilenme sıklığının %31.4'ü her ay, %2.6'sı üç ayda bir defa, %10.5'i altı ayda bir defa, %49'u her yıl %6.5'inin hiç yenilemediği tespit edilmiştir. Yöneticilerin HACCP sistemi ile ilgili yasal mevzuat hakkındaki bilgi düzeyleri incelendiğinde yöneticilerin %54.2'sinin "bilgim var" cevabını verdiği saptanmıştır. Otel işletmelerinin %89.5'inin HACCP planı ve ekibi var iken, %10.5'inin HACCP ekibi ve planının olmadığı tespit edilmiştir. İşletmelerin çoğunluğunun HACCP ekibinde gıda mühendisi ve aşçıbaşı olduğu tespit edilmiştir. İşletmelerin %67.3'ünün danışmanlık hizmeti alarak, HACCP sistemlerinin kurduğu belirlenmiştir. HACCP sistemine sahip otellerde yönetici pozisyonunda çalışan personelin hijyen-sanitasyon ve gıda güvenliği konusunda bilgi sahibi olduğu görülmüştür. Beş yıldızlı otel işletmelerinin pandemi ekibi oluşturmasında ve pandemi için alınan önlemlerin uygulanmasında daha çok dikkat ettikleri tespit edilmiştir. Otel işletmelerinde çalışan personelin yarısının 20-30 yaş arasında olduğu tespit edilmiştir. Çalışmaya katılan personelin %19.2'sinin aşçıbaşı, %36.5'inin başaşçı yardımcısı, %13.5'inin soğuk şefi, %7.7'sinin sıcak şefi olduğu belirlenmiştir. Personelin tamamının gıda güvenliği ve hijyen konusunda bilgilerinin olduğu tespit edilmiştir. Otel işletmelerinde çalışan mutfak personelinin %96.2'si düzenli hizmetiçi eğitim almaktadır. Personelin tamamı işe başlamadan önce sağlık kontrollerinden geçmekte olup, personelin %57.7'sinin yılda bir defa sağlık kontrolleri yenilenmektedir. The aim of the study is to evaluate the levels of knowledge and implementation on food safety management systems of managers and staff in four and five-star hotel enterprises in Antalya. The research was included 153 hotel businesses; 65 of them are four-star, 88 of them are five-star. Research data were collected in September-November 2021 period. In the research, 4 of which are individual questions, were asked to the managers 24 questions and 5 of which were individual questions were asked to the personnel 30 questions. The collected data was analyzed with statistical package program SPSS 28.0. Frequency tests and Chi-Square tests were applied to data. All of the hotel managers participating in the study reported that their businesses had ISO 22000 (HACCP) Food Safety Management System. It has been determined that the most uncomfortable step working as manager, during the implementation of the HACCP system is the registration and documentation in phase. In the study, the frequency of food safety renewal of enterprises; It was determined that 31.4% of them every month, 2.6% of them every three months, 10.5% of them every six months, 49% of them every year, 6.5% of them never are not renewed. When the knowledge level of the managers about the legal legislation related to the HACCP system was examined, it was found that 54.2% of the managers gave the answer "I have knowledge". It was determined that 89.5% of the hotel businesses had a HACCP plan and team, while 10.5% didn't have a HACCP team and plan. It has been determined that the majority of the enterprises are food engineers and chefs in the HACCP groups. It was detected that 67.3% of the enterprises were established HACCP systems by receiving consultancy services. It was observed that the personnel working in managerial positions in hotels with HACCP system have knowledge about hygiene-sanitation and food safety. It was determined that five-star hotel businesses pay more attention to the creation of a pandemic team and the implementation of the measures taken for the pandemic. Half of the personnel working in hotel businesses are between the ages of 20-30 has been determined. It was detected that 19.2% of the personnel participating in the study were head chef, 36.5% assistant head chef, 13.5% cold chef, 7.7% hot chef. All of the staff were found to have information on food safety and hygiene. In hotel businesses, 96.2% of the kitchen staff working were regularly in service training. All of the staff undergo health checks before starting work, and 57.7% of the staff renew their health checks once a year.
