Gün içinde bireyler birçok gıdadan antioksidan sağlasa da, vücudun ihtiyacı olan miktar karşılanmıyor olabilir. Bunun yanı sıra hep benzer besinler tüketen bireyler, aynı antioksidanları vücutlarına alacak ve daha karmaşık yapıdaki moleküllerin sentezi gerçekleşmeyecektir. Bu tez çalışmasında, fonksiyonel bileşenlere sahip alkolsüz içecek üretimi ve üretilen numunelerin bazı özelliklerinin karakterizasyonu gerçekleştirilmiştir. İçeceklerdeki polifenol bileşen çeşidi ve miktarının maksimum seviyede olması ve içeceklerin farklı aromalara sahip olması amacıyla toplamda sekiz farklı bitkisel materyalden polifenol ekstraksiyonu işleminin tekli ve çoklu optimizasyonu gerçekleştirilmiştir. Tekli optimizasyonu gerçekleştirilen yedi farklı bitkide en uzun sürenin 50 dakika, en yüksek sıcaklığın 50°C ve en fazla bitkisel materyalin 1 g olarak seçilmesi ise kısa süre, düşük sıcaklık ve minimum materyalle doğal bitkisel içeriklerin ekstrakste edilebilirliğini göstermektedir. Elde edilen konsantrasyonlar büyükten küçüğe sırasıyla tarçın, narçiçeği, papatya, kırmızıbiber, zencefil, biberiye ve kırmızı pancar şeklindedir. Bu deneylerde parametrelerin sadece tekli etkileri incelenebildiğinden, çoklu etkileri araştırılmak üzere deney bulgularıyla her bir bitkinin ekstraksiyonunun çoklu optimizasyonu gerçekleştirilmiştir. Çoklu optimizasyonu yapılan yedi bitkisel materyal için de en uygun modelin indirgenmiş kübik model olduğuna karar verilmiştir. Ekstraksiyon verimine etki eden parametre kombinasyonlarının ise en fazla 55°C, 60 dakika, 1,5/40 g/ml ve 150 rpm karıştırma hızında ulaşıldığı tespit edilmiştir. Çoklu optimizasyon sonucunda ise narçiçeği ve tarçın, papatya bitkisinden sonra yüksek polifenol konsantrasyonlarına ulaşmışlardır. Tarçın bitkisini, polifenol miktarları bakımından sırasıyla kırmızıbiber, zencefil, biberiye ve kırmızı pancar takip etmektedir. Aynı miktarda sodyum kazeinat, sükroz ve bitkisel özüt eklenmesine rağmen, özütlerin içerdiği fenolik madde miktarları ve çeşitlerinin farklı olması içecek numunelerinin vizkozitelerinin, peynir altı suyu vizkozitesinden daha düşük olmasına neden olmuştur. Hafif nahoş tadıyla da bilinen narçiçeği bitkisinden hazırlanan içeceğin gerek pH analizi gerekse toplam asitlik değeri, peynir altı suyu ve diğer içeceklere göre daha asidik, şeker miktarı ise yüksek bulunmuştur. 200 ml olarak hazırlanan alkolsüz içecekler kapakları açılıp oda sıcaklığına gelmesi beklenip analizlenmelerine ve katkısız olmalarına karşın üç gün bozulmadan kalabildikleri gözlemlenmiştir. Bu hacimdeki içeceklerin çok çabuk tüketileceği de göz önüne alındığında oldukça makul bir süre olduğu çıkarımı yapılmıştır. Duyusal analizlerde panelistlerin görüşleri doğrultusunda tarçın, narçiçeği ve papatya bazlı içeceklerin diğerlerine oranla daha büyük beğeni ile tercih edildiği tespit edilmiştir. Üretilen alkolsüz içecek numuneleri, kişilere gün içerisinde gerekli antioksidan miktarını ve vücudun ihtiyacı olan farklı fenolik bileşenleri sağlama ve de gün içinde alınan antioksidan miktarını tespit etmekte bir referans oluşturması bakımından hayatımıza öncülük edecektir. Atık olarak kullanılan peynir altı suyunun gıda endüstrisinde geri dönüştürülebileceğini göstermek adına örnek bir görüş oluşturmakta ve fonksiyonel gıda endüstrisine de alternatif bir bakış açısı sağlamaktadır. Bu tez çalışması çiftçisinden öğrencisine; doktorundan sporcusuna her kesime hitap ederken, bulgularıyla Türkiye'nin fonksiyonel gıda pazarında bir ilki başarması ve ülkede üretim sektörünün genişleyip istihtam sağlamasına da olanak sağlayacağı öngörülmektedir. Although individuals provide antioxidants from different foods in a day, the amount needed by the body may not be met. In addition, individuals who always consume similar foods will take the same antioxidants into their bodies and the synthesis of more complex molecules will not occur. In this thesis, the production of soft drinks with functional components and the characterization of some properties of the produced samples were carried out. In order to maximize the variety and amount of polyphenol components in the beverages and to have different flavors in the beverages, single and multiple optimization of the polyphenol extraction process from eight different plant materials were carried out. Selecting the longest duration as 50 minutes, the highest temperature as 50°C and the maximum plant material as 1 g in seven different plants for which single optimization was performed approved the extractability of natural herbal ingredients within a short time, low temperature and minimum material usage. The resulting concentrations were, in descending order, cinnamon, pomegranate flower, chamomile, capsicum, ginger, rosemary, and beetroot. Since only the single effects of the parameters could be studied in those experiments, multiple optimization of the extraction of each plant was carried out with the experimental findings to investigate the multiple effects. It was decided that the most suitable model for the seven plant materials was the reduced cubic model. It was determined that the parameter combinations affecting the extraction efficiency were reached generally at 55°C, 60 minutes, 1,5/40 g/ml and 150 rpm stirring speed. As a result of multiple optimization, pomegranate flower and cinnamon reached higher polyphenol concentrations after chamomile plant. Cinnamon was followed by red pepper, ginger, rosemary and red beet in terms of polyphenol amounts, respectively. Despite the addition of the same amount of sodium caseinate, sucrose and herbal extract, different amounts and types of phenolic substances contained in the extracts caused the viscosity of the beverage samples to be lower than the viscosity of the whey. The pH analysis and total acidity value of the drink prepared from the pomegranate plant, which is also known for its slightly unpleasant taste, was found to be more acidic than whey and other beverages, and the amount of sugar was higher. It has been determined that additive-free soft drinks prepared in 200 ml remain intact for three days, even though the lids are opened and allowed to temperature changes because of analysis. Considering that beverages of this volume will be consumed very quickly, it has been deduced that this is a very reasonable period of time. In the sensory analysis, it was determined that cinnamon, pomegranate and chamomile-based drinks were preferred with greater appreciation than the others, in line with the opinions of the panelists. The soft drink samples produced will lead our lives in terms of providing the necessary amount of antioxidants and different phenolic components that the body needs during the day, as well as being a reference in determining the amount of antioxidants taken during the day. It creates an exemplary view to show that the whey used as waste can be recycled in the food industry and provides an alternative perspective to the functional food industry. From the farmer to the student of this thesis; While addressing all segments of society, from doctors to athletes, it is anticipated that Turkey's findings will break new ground in the functional food market and that the production sector in the country will expand and provide larger employment.
