Bu çalışmada; %0.5 ve %1.5 oranlarında buğday lifi, %0.25 ve %1.0 oranlarında bambu lifi içeren düşük yağlı probiyotik Beyaz peynirlerin telemesinden peynir cipsi üretme olanakları araştırılmıştır. Buğday ve bambu lifinin, peynir cipslerinin kimyasal, tekstürel mikrobiyolojik ve duyusal özellikleri üzerine etkisinin belirlenmesi bu çalışmanın amacını oluşturmaktadır. Çalışmada cips örneklerinin buğday veya bambu lifi oranı arttıkça kuru madde, yağ, tuz ve su aktivitesi değerlerinin azaldığı, kül değerinin arttığı belirlenmiştir. Peynir cipslerinin laktik asit (%) değerlerinin %0.85-%0.86 ve bambu liflerinin laktik asit değerlerinin %0.96-%1.15 aralığında olduğu saptanmıştır. Buğday lifini %1.5 oranında içeren örneklerin yapılan renk analiziyle daha parlak ve sarı renkte olduğu, tekstür analiziyle daha yüksek sertlik değerine sahip olduğu tespit edilmiştir. Bambu lifi içeren örneklerde ise %1.0 lif içeren örneklerin daha parlak olduğu gözlenmiştir. Peynir cipsi örneklerinde maya küf ve koliform grubu bakterilerin gelişimine rastlanmamıştır. Buğday lifi (%1.5) içeren peynir cipslerinin yapı gevreklik ve tat koku duyusal parametrelerinin diğer cipslerden daha yüksek puanlarda olduğu, ancak renk görünüş ve genel kabul edilebilirlik duyusal parametrelerinin daha düşük puanlarda olduğu belirlenmiştir. Bambu lifi içeren örneklerde, %1.0 lif içeren örneklerde benzer nitelikler saptanmıştır. Peynir cipslerinde lif kullanımının su aktivitesini düşürdüğü tespit edilmiştir. Yapılan duyusal analiz sonuçlarına göre %0.25 oranında buğday lifi içeren peynir cipsi, %1.5 oranında buğday lifi içeren üründen daha fazla beğenildiği tespit edilmiştir. Bambu lifli ürünler arasında ise %0.25 oranında bambu lifi içeren ürünün %1.0 bambu lifi içeren üründen daha çok beğenildiği gözlenmiştir. Diyet lifi içeren ürünlerde bambu lifi içeren örneklerin genel olarak kabul edilebilirlik puanları, buğday lifi içeren örneklere kıyasla daha yüksek olarak gözlenmiştir. In this study; The possibilities of producing cheese chips from the teleme of low-fat probiotic white cheeses containing 0.5%-1.5% wheat fiber and 0.25%-1.0% bamboo fiber were investigated. The aim of this study is to determine the effects of wheat and bamboo fiber on the chemical, textural, microbiological and sensory properties of cheese chips. In the study, it was determined that as the wheat or bamboo fiber ratio of the samples increased, the dry matter, fat, salt and water activity values decreased and the ash value increased. It was determined that the lactic acid values (%) of cheese chips were between 0.85% and 0.86%, and the lactic acid values of bamboo fibers were between 0.96% and 1.15%. It was found that the samples containing 1.5% wheat fiber were brighter and more yellow in color with the color analysis, and had a higher hardness value with the texture analysis. In the samples containing bamboo fiber, it was observed that the samples containing 1.0% fiber were brighter. Yeast-mold and coliform group bacteria were not found in cheese chips samples. It was determined that the structure, crispness and taste, odor sensory parameters of the cheese chips containing wheat fiber (1.5%) were higher than the other chips, but the sensory parameters of color, appearance and general acceptability were lower. In the samples containing bamboo fiber, similar qualities were detected in the samples containing 1.0% fiber. It was determined that the use of fiber in cheese chips reduced water activity. According to the results of the sensory analysis, it was determined that the cheese chips containing 0.25% wheat fiber were liked more than the product containing 1.5% wheat fiber. Among the bamboo fiber products, it was observed that the product containing 0.25% bamboo fiber was more liked than the product containing 1.0% bamboo fiber. In the products containing dietary fiber, the general acceptability scores of the samples containing bamboo fiber were observed to be higher than the samples containing wheat fiber.
