Meyve sebze muhafaza yöntemlerinden en yaygınlarından birisi olan kurutma, gıda endüstrisinde enerji maliyeti yüksek uygulamalardan biridir. Kurutma teknolojisinde enerji maliyetini düşürmek, kurutma hızını azaltmak ve ürün kalitesini iyileştirmek için çeşitli ön işlemler ve kombine yöntemlerle ilgili arayışlar devam etmektedir. Darbeli Elektrik Alan (PEF) teknolojisi gıda teknolojisinde kuruma hızının arttırılması, biyoaktif bileşenlerin korunması gibi amaçlarla uygulanan yeni teknolojilerden bir tanesidir. Bu çalışmada kurutma öncesi ön işlem olarak PEF uygulaması ve kurutma sırasında PEF uygulamasının, ayva dilimlerinin kuruma özellikleri, kalite özellikleri ve renk özelliklerindeki etkilerinin belirlenmesi amaçlanmıştır. Ayvalar 4 mm kalınlığında dilimlenmiş ve üç kısıma ayrılmıştır. İlk grup herhangi bir işlem uygulanmaksızın 45, 60 ve 75°C sıcaklıklarda konvektif kurutulmuştur (C). Bir diğer gruba dilimleme sonrası 10 sn PEF islemi (20 kV voltaja, 10ms darbe genişliğine ve 50 Hz) uygulanmış, aynı sıcaklıklarda konvektif kurutma uygulanarak PEF ön işlemi uygulanmış örnekler elde edilmiştir (ptPEF). Son gruba ise kurutucu için tasarlanan bir düzenek ile sürekli PEF işlemi (dPEF) uygulanmış ve eş zamanlı olarak belirtilen sıcaklıklarda kurutma uygulanmıştır. Kurutma ayva dilimlerinin nem içeriği % 4±0.5 olana dek sürdürülmüştür Farklı muameleler uygulanarak kurutulmuş ayva dilimlerinin nem, aw, pH, renk gibi fizikokimyasal özellikleri ile toplam fenolik madde içeriği, antioksidan aktivite miktarları, fenolik bileşen kompozisyonu ve yapısal özellikleri belirlenmiştir. 45°C'de, 60°C'de ve 75°C'de konveksiyonel kurutulan, ptPEF ve dPEF uygulanan örneklerin nem içeriği sırasıyla %4.90-5.05, %4.26-4.67 ve %4.46-4.90 arasında bulunmuştur. ptPEF-75°C örnekleri en kısa kurutma süresi ve en yüksek kurutma hızına sahip örnekler olarak belirlenmiştir. pH değerleri arasındaki farklılık önemli bulunmuş (p<0.05), dPEF-75°C en düşük pH değerine (4.33) sahip bulunmuştur. ptPEF-75°C örneği diğer örneklerden önemli düzeyde düşük miktarda aw değerine (0.26) sahip bulunmuştur (p<0.05). Renk değerleri (L*, a*, b*, ∆𝐸) incelendiğinde, PEF ile muamele edilmiş örneklerin daha iyi bir renk kalitesine sahip olduğu görülmüştür. Tüm sıcaklık denemeleri ve yöntemleri arasında en yüksek toplam fenolik madde içeriği (2689.58 mg GAE/100g KM), 75°C'de dPEF ile konvektif kurutulan ayva diliminde bulunmuştur (p<0.05). Tüm sıcaklık denemeleri ve yöntemleri arasında en yüksek DPPH antioksidan aktivite değerine (3.56 mg TE/g KM) sahip olan ise 60°C'de dPEF ile konvektif kurutulmuṣ ayva dilimi örneği bulunmuştur (p<0.05). C-60°C örneği diğer yöntemlere kıyasla daha yüksek miktarda TEAC antioksidan aktivite değerine (47.11 mg TE/g KM) sahip olduğu bulunmuştur (p<0.05). Yapılan fenolik içerik analizi sonucunda kurutlan örneklerde yüksek miktarda klorojenik asit (ptPEF-60 °C) ve rutin (dPEF-75 °C) içerdiği bulunmuştur. Sonuç olarak, ayva kurutmada PEF uygulamasının konvektif kurutmada ön işlem olarak kullanılması, kurutma süresinin kısalması ve enerji maliyetlerinin düşürülmesi bakımından avantaj sağladığı bu araştırmada gösterilmiştir. Bunun yanı sıra fenolik içerik ve antioksidan özellikler bakımından sürekli PEF uygulanmış örnekler diğer örneklere göre daha üstün özellik sergilemiştir. Bu çalışmanın sonuçlarından yola çıkarak farklı gıdalarda kurutma etkinliğini arttırmak için PEF ön işlemi başka araştırmalarda kullanılabilir. Bunun yanında bu çalışmada ilk kez denenen kurutma sistemlerine entegre PEF düzeneklerinin geliştirilmesi ile kurutmada enerji maliyetlerinin düşürülmesi ve biyoaktif özelliklerinin geliştirilmesine yönelik çalışmalar yapılabilir. Drying, one of the most common fruit and vegetable preservation methods, is one of the most energy-costing applications in the food industry. In drying technology, searches for various pre-treatments and combined methods continue to reduce energy costs, reduce drying speed and improve product quality. Pulsed Electric Field (PEF) technology is one of the new technologies applied in food technology for purposes such as increasing the drying speed and protecting bioactive components. In this study, it was aimed to determine the effects of PEF application as a pre-treatment before drying and PEF application during drying on the drying characteristics, quality characteristics and color characteristics of quince slices. Quinces were sliced 4 mm thick and divided into three parts. The first group was convectively dried at temperatures of 45, 60 and 75°C (C) without any treatment. PEF treatment (20 kV voltage, 10 ms pulse width and 50 Hz) was applied to another group for 10 seconds after slicing, and samples with PEF pre-treatment were obtained by applying convective drying at the same temperatures (ptPEF). In the last group, continuous PEF process (dPEF) was applied with a mechanism designed for the dryer and drying was applied simultaneously at the specified temperatures. Drying was continued until the moisture content of the quince slices was 4±0.5%. Physicochemical properties such as moisture, aw, pH, color, total phenolic substance content, antioxidant activity amounts, phenolic component composition and structural properties of dried quince slices were determined by applying different treatments. The moisture content of the samples convectionally dried at 45°C, 60°C, and 75°C and treated with ptPEF and dPEF was determined to be between 4.90-5.05%, 4.26-4.67%, and 4.46-4.90%, respectively. ptPEF-75°C samples were determined as the samples with the shortest drying time and highest drying speed. The difference between pH values was found to be significant (p<0.05), and dPEF-75°C was found to have the lowest pH value (4.33). The ptPEF-75°C sample was found to have a significantly lower aw value (0.26) than the other samples (p<0.05). When the color values (L*, a*, b*, ∆𝐸) were examined, it was seen that the samples treated with PEF had a better color quality. Among all temperature experiments and methods, the highest total phenolic substance content (2689.58 mg GAE/100g DM) was found in quince slice convectively dried with dPEF at 75°C (p<0.05). Among all temperature experiments and methods, the quince slice sample convectively dried with dPEF at 60°C had the highest DPPH antioxidant activity value (3.56 mg TE/g DM) (p<0.05). C-60°C sample was found to have a higher TEAC antioxidant activity value (47.11 mg TE/g DM) compared to other methods (p<0.05). As a result of the phenolic content analysis, it was found that the dried samples contained high amounts of chlorogenic acid (ptPEF-60 °C) and rutin (dPEF-75 °C). As a result, it has been shown in this research that using PEF in quince drying as a pre-treatment in convective drying provides advantages in terms of shortening drying time and reducing energy costs. In addition, samples with continuous PEF application showed superior properties than other samples in terms of phenolic content and antioxidant properties. Based on the results of this study, PEF pretreatment can be used in other studies to increase the drying efficiency of different foods. In addition, studies can be carried out to reduce energy costs in drying and improve bioactive properties by developing PEF mechanisms integrated into drying systems, which were tried for the first time in this study.
