Bu tez çalışması kapsamında içerdiği punisik asit ve trienoik asit gibi yağ asitleri sayesinde çok düşük dozlarda dahi antikarserojenik özelliğe sahip olan, tanin ve antosiyaninler gibi güçlü antioksidanların yanında çok sayıda çeşitli bioflavonoidleri içeren ancak atıl olarak kalarak yeterince değerlendirilmeyen nar çekirdeklerinin değerlendirilmesi amacıyla nar çekirdeklerinden soğuk pres tekniğiyle elde edilen yağın sucuk üretiminde sodyum nitrite alternatif olarak kullanılabilme olanakları araştırılmıştır. Aynı zamanda sucuğa fonksiyonel bir özellik kazandırma olanakları değerlendirilmiştir. Bu amaçla nar çekirdek yağı içermeyen sodyum nitritli ve sodyum nitritsiz kontrol örnekleri ile yine sodyum nitrit içermeyen ancak %0.5, %1, %2 ve %3 konsantrayonlarda nar çekirdek yağı içeren sucuk üretimi gerçekleştirilmiştir. Sucuk örnekleri +4ºC'de 30 gün süre ile depolanmıştır. Üretim ve depolama süresince sucuk örneklerinde fizikokimyasal (renk, ağırlık kaybı, protein, kül, yağ, pH, su aktivitesi, tbars), mikrobiyolojik (maya ve küf, laktik asit bakterisi, toplam mezofil aerobik sayısı, koliform, Listeria monocytogenes, E. coli O157:H7, Salmonella spp.) ve fermentasyon sonrasında duyusal analizler gerçekleştirilmiştir. Araştırmamız sonucunda sucuk içeriğindeki nar çekirdek yağı miktarının artmasıyla, TBARS değeri, b* değeri, toplam mezofil bakteri sayısı ve laktik asit bakteri sayısı artarken, duyusal özellikleri azalmıştır. Bu nedenle bu tez çalışması kapsamında nar çekirdek yağının sodyum nitrite alternatif olarak kullanılamayacağı ve yüksek konsantrasyonlarda kullanılması durumunda duyusal ve oksidatif açıdan problem oluşturacağı düşünülmektedir. In current study, Pomegranate seeds, which have anticarcerogenic properties even at very low doses thanks to fatty acids such as punicic acid and trienoic acid, powerful antioxidants such as tannins and anthocyanins, a large number of various bioflavonoids, but remain inactive and not adequately evaluated, were evaluated. For this purpose, the possibilities of using the oil obtained from pomegranate seeds by cold pressing technique as an alternative to sodium nitrite in sucuk production were investigated. At the same time, the possibilities of giving a functional feature to the sucuk were evaluated. For this purpose, control samples with and without sodium nitrite, which do not contain pomegranate seed oil, and sucuk production that does not contain sodium nitrite, but contains pomegranate seed oil in 0.5%, 1%, 2% and 3% concentrations were carried out. Sucuk samples were stored at +4ºC for 30 days. During production and storage, physicochemical (color, weight loss, protein, ash, oil, pH, water activity, tbars), microbiological (yeast and mold, lactic acid bacteria, total mesophilic aerobic count, coliform, Listeria monocytogenes, E. coli O157:H7, Salmonella spp.) in sucuk samples and sensory analyzes were performed after fermentation. As a result of our research, with the increase in the amount of pomegranate seed oil in the sucuk content, TBARS value, b* value, total mesophilic bacteria count and lactic acid bacteria count increased, while sensory properties decreased. Therefore, within the scope of this thesis, it is thought that pomegranate seed oil cannot be used as an alternative to sodium nitrite and if it is used in high concentrations, it will cause sensory and oxidative problems.
