Hazır ve kolay tüketilebilir gıdalara olan talep doğrultusunda sağlıklı beslenmenin de ön planda tutulduğu günümüzde değişen tüketici istekleri ile gıda sektörü son yıllar içerisinde hazır toz gıda ürünleri üzerinde inovatif çalışmalar gerçekleştirmektedir. Toz ürünlerin üretilmesi farklı kurutma yöntemleri ile gerçekleştirilebilmektedir. Köpük kurutma tekniği gıdaların köpük haline getirilerek kurutma yüzey alanının arttırılması ve kuruma süresinin kısaltılmasını sağlayan bir teknik olarak son yıllarda artan bir ilgi görmektedir. Bu çalışmada dünyada ve ülkemizde yaygın olarak üretilen, besleyici özelliği yüksek ve içerdiği β-karoten sebebiyle dikkat çekici renge sahip bir sebze olan havuçtan konvektif tabaka köpük kurutma ve liyofilizasyon ile tabaka köpük kurutma yöntemleri ile elde edilen havuç tozlarının fizikokimyasal ve biyoaktif özelliklerinin belirlenmesi amaçlanmıştır. Yapılan ön denemeler sonunda köpük analizleri yapılarak köpürtme ajanı olarak %10 maltodekstrin (MD) ve %1 yumurta akı tozu (YA) kullanımının uygun olduğu belirlenmiştir. Belirtilen oranlarda MD ve YA havuç sularına ilave edilmiştir. El tipi karıştırıcı kullanılarak elde edilen köpükler farklı sıcaklıklarda (55, 60 ve 65°C) kurutulmuştur. Elde edilen havuç tozlarının nem içeriği, su aktivitesi, pH, toplam çözünür kuru madde, yığın ve sıkıştırılmış yoğunluk, higroskopisite değerleri; rehidrasyon oranı, renk değerleri ve biyoaktif özellikleri (toplam fenolik madde, antioksidan aktivite ve toplam karoten miktarı) belirlenmiştir. Havuç tozlarının su aktivitesi değerleri ve nem içerikleri 0,19-0,25 ve % 3,06-4,90 değerleri arasında bulunmuştur. Toz örneklerde higroskopisite değerleri 0,70-1,19 arasında bulunurken, liyofilizasyon ile köpük kurutulmuş örnekler en yüksek higroskopisiteye sahip bulunmuştur. Havuç tozlarının pH değerleri 6,3-7,10 arasında bulunmuştur. Liyofilizasyon köpük kurutulmuş örnekler en yüksek pH değerine sahip iken diğer örneklerin pH değerleri birbirine benzer bulunmuştur. Toz örneklerin toplam çözünür kuru madde içerikleri ise % 7,02-10,05 aralığındadır. Rehidrasyon oranları arasında 4 ve 25 ˚C sıcaklıklarda önemli bir farklılık bulunmazken; 80 ˚C sıcaklıkta konvektif dilim kurutulmuş örneklerden elde edilen tozlar (CD-S) ile MD kullanılarak 65 ˚C sıcaklıkta köpük kurutma uygulanan tozların (FMC-MD-65) rehidrasyon oranı arasındaki farklılık önemli bulunmuştur. Bu durum özellikle köpük kurutma ile elde edilen tozların, geleneksel kurutma ile elde edilen tozlara göre sıcak ürünlerde kullanımında avantaj oluşturacağını düşündürebilir. Renk değerleri ise 60°C sıcaklıkta yapılan kurutma sonunda yüksek havuç tozu elde edilmiştir. Yumurta akı tozu kullanılarak liyofilize köpük kurutulan örneklerin L değeri diğer örneklerin L değerinden önemli düzeyde düşük bulunmuş, en yüksek L değerini ise MD kullanılarak üretilen liyofilize köpük kurutulmuş örnekler sergilemiştir. Delta E (ΔE) değerlerine göre en yüksek renk değişimi FMF-MD örneğinde, en düşük renk değişimi ise CD-S örneğinde bulunmuştur. MD kullanılan örneklerde 65 °C sıcaklıkta üretilen örneklerdeki renk değişimi dondurarak köpük kurutma uygulanan örneklerdeki renk değişiminden önemli düzeyde düşük bulunmuştur. Dilim kurutma sonrası toz haline getirilen örneklerin ΔE değeri 60 °C sıcaklıkta MD kullanılarak köpük kurutulan örneklerden önemli düzeyde düşük bulunmuştur. Kurutma işleminde kullanılan köpürtme ajanı nedeniyle havuç tozlarının renk değerlerini olumlu yönde etkilediği düşünülmektedir. Dilim havuçta ise köpürtme ajanı kullanılmadığı için ∆E değeri diğerlerinden düşük bulunmuştur. Toz örneklerin sarılık indeksi 46,92-64,18 olarak bulunmuştur. En yüksek sarılık indeksi CD-S örneğinde bulunmuştur. Örneklerde toplam fenolik madde miktarı 490-3180 mg GAE/kg arasında değişmektedir. Toplam fenolik madde tabaka köpük kurutma FMC WE 60˚C'de en yüksek bulunurken 60˚C 'de kurutulan havuç dilimlerinden elde edilen havuç tozlarında ise en düşük bulunmuştur. Tabaka köpük kurutma yöntemiyle kurutulan havuç tozlarının liyofilizasyon ile köpük kurutma yapılan örneklere göre antioksidan aktivitesi yüksek bulunmuştur. Liyofilİzasyon ile yapılan kurutma sonunda yüksek karoten içeren toz ürünler elde edilmiştir. Bu çalışmanın sonucunda elde edilen bulgular ışığında, kolay uygulanabilir ve ekonomik bir yöntem olan tabaka köpük kurutma teknolojisi ile üretilen, fizikokimyasal ve biyoaktif özellikleri yüksek havuç tozları, gıda endüstrisinde ara ürün olarak ya da tüketici için alternatif doğal katkı maddesi olarak kullanımının mümkün olabileceği düşünülmektedir. In line with the demand for ready-to-eat and easy-to-consume foods with healthy nutrition, the food industry has been carrying out innovative studies on ready-made powdered food products in recent years, with today's changing consumer demands. Different drying methods can produce powder products. The foam mat drying technique has attracted increasing attention in recent years as a technique that enables foods to be foamed, increasing the drying surface area and shortening the drying time. This study aimed to determine the physicochemical and bioactive properties of carrot powders obtained by convective layer foam drying, lyophilization, and layer foam drying methods from carrot, a vegetable with high nutritional properties and striking color due to its β-carotene content. At the end of the preliminary trials, foam analysis was performed, and determined that 10% maltodextrin (MD) and 1% egg white powder (YA) were suitable as foaming agents. MD and YA were added to carrot juices at the specified rates. The foams obtained using a hand mixer were dried at different temperatures (55, 60, and 65°C). Moisture content, water activity, pH, total soluble solids, bulk, compacted density, and hygroscopicity of the carrot powders were obtained; rehydration rate, color values, and bioactive properties (total phenolic substance, antioxidant activity, and total carotene content) were determined. The carrot powders' water activity values and moisture contents were between 0.19-0.25 and 3.06% and 4.90%. While hygroscopicity values were found between 0.70-1.19 in powder samples, foam-dried samples with lyophilization had the highest hygroscopicity. The pH values of carrot powders were between 6.3-7.10. While the lyophilization foam dried samples had the highest pH value, the other samples' pH values were similar. The total soluble dry matter content of the powder samples is in the range of 7,02-10,05%. While there was no significant difference between the rehydration rates at 4 and 25 ˚C temperatures; The difference between the rehydration rate of the powders (CD-S) obtained from convective slice-dried samples at 80 ˚C, and the powders that were foam-dried at 65 ˚C using MD (FMC-MD-65) was found to be significant. The powders obtained by foam drying will be advantageous in using hot products compared to powders obtained by conventional drying. Carrot powder with high color values was obtained after drying at 60°C. The L value of the lyophilized foam dried samples using egg white powder was significantly lower than the L value of the other samples, while the lyophilized foam dried samples produced using MD showed the highest L value. According to Delta E (ΔE) values, the highest color change was found in the FMF-MD sample, and the lowest color change was found in the CD-S sample. In the MD samples, the color change produced at 65 °C was significantly lower than the change in the samples using freeze foam drying. The ΔE value of the powdered samples after slice drying was significantly lower than the foam-dried samples using MD at 60 °C. It is thought that the color values of carrot powders have a positive effect due to the foaming agent used in the drying process. In sliced carrots, ∆E value was lower than the others since no foaming agent was used. The yellowness index of the powder samples was found to be 46.92-64.18. The highest jaundice index was found in the CD-S sample. The total amount of phenolic substances in the samples varied between 490-3180 mg GAE/kg. While the total phenolic content was found to be highest in layer foam drying FMC WE 60˚C, it was found the lowest in carrot powders obtained from carrot slices dried at 60˚C. The antioxidant activity of the carrot powders dried by the layer foam drying method was higher than the foam dried by lyophilization samples. After drying with lyophilization, powder products containing high carotene were obtained. In the light of the findings obtained as a result of this study, it is thought that it may be possible to use carrot powders with high physicochemical and bioactive properties, produced by sheet foam drying technology, which is an easy-to-apply and economical method, as an intermediate product in the food industry or as an alternative natural additive for the consumer.
