Opuntia ficus indica (O. ficus indica) en çok üretilen, dağıtılan ve tüketilen kaktüs türlerinden biridir. Kaktüs kladodları 3 farklı kurutma tekniği (konveksiyonel kurutma, mikrodalga kurutma, ultrason ön uygulamalı vakum destekli konveksiyonel kurutma) ile kurutulmuştur. Kurutulmuş ve taze örneklerin toplam fenolik, flavonoit ve flavonol içeriği, fenolik profil analizi, askorbik asit içeriği, antioksidan kapasite, renk, doku değerleri, toplam şeker içeriği ölçülmüş ve ürünün mikro yapısı SEM analizi ile belirlenmiş, değerler istatistiksel olarak değerlendirilmiştir. Kurutma işlemi fenolik bileşikler üzerinde etkilidir ve bu etki istatistiksel olarak anlamlı olarak bulunmuştur. Ultrason ön işlemi, toplam fenolik bileşik korunması için önemli olmuştur. Kurutulmuş numuneler arasında en yüksek toplam fenolik bileşen içeriği 70 °C ultrason ön uygulamalı vakum destekli konveksiyonel kurutma numunelerinde görülmüştür. Saf suda yapılan ultrason ön uygulamalı kurutma yönteminde örneklerin flavonoit ve C vitamini miktarlarında önemli düşüşler gözlenmiştir. Fenolik profil analizi sonucunda 8'i fenolik asit (gallik asit, protokateşik asit, sirinjik asit, ellajik asit, m-kumarik asit, kafeik asit, p-kumarik asit, ferulik asit) ve 1'i flavonoit (krisin) olmak üzere toplam 9 bileşen tespit edilmiştir. Biyoaktif bileşiklerin antioksidan kapasitesi, farklı kurutma proseslerine ve kurutma parametrelerine göre istatistiksel olarak önemli bir değişim göstermemiştir. Ayrıca flavonol miktarları kurutma işlemlerinden etkilenmemiştir. Konveksiyonel kurutma işleminde sıcaklığın artmasıyla ve mikrodalga kurutma işleminde Watt gücünün artmasıyla toplam şeker içeriği artmıştır. Konveksiyonel kurutulmuş örneklere kıyasla ultrason ön uygulamalı vakum destekli konveksiyonel kurutulmuş örneklerin kül içeriğinin daha düşük olduğu görülmüştür. Kurutma işlemleri ile ΔE değerlerinde önemli bir değişim olmamıştır. Kabuk dayanımı değerindeki değişim konveksiyonel kurutma ve mikrodalga kurutma uygulamalarında istatistiki olarak önemsiz bulunmuştur. SEM analizinde farklı kurutma tekniklerinin ve kurutma tekniklerinde kullanılan parametrelerin ürün dokusuna etkileri ortaya konmuştur. Farklı kurutma teknikleri ile kurutulan örneklerin analiz sonuçlarına göre belirlenen 70 ⁰C'de konveksiyonel olarak kurutulmuş, 720 W güçte mikrodalgada kurutulmuş ve yine 70 ⁰C'de ultrason ön uygulamalı vakum destekli konveksiyonel kurutulmuş örnekler depolanmıştır. 720 Watta mikrodalgada kurutulmuş örneklerin toplam fenolik bileşen, flavonoit içeriği ve antioksidan kapasitesi değerleri depolama süresi artışına karşı diğer iki teknikle kurutulan örneklere kıyasla daha stabil kalmıştır. Opuntia ficus indica (O. ficus indica) is one of the most produced, distributed and consumed cactus species. Cactus cladodes were dried with 3 different drying techniques (convectional drying, microwave drying, ultrasound pre-treatment vacuum assisted convectional drying). Total phenolic, flavonoit and flavonol content, phenolic profile analysis, ascorbic acid content, antioxidant capacity, color, texture values, total sugar content of dried and fresh samples were measured and the microstructure of the product was determined by SEM analysis, and the values were evaluated statistically. Drying process is effective on phenolic compounds and this effect was found to be statistically significant. Ultrasound pretreatment has been important for total phenolic compound preservation. Among the dried samples, the highest total phenolic content was observed in vacuum assisted convection drying samples with 70 °C ultrasound pretreatment. Significant decreases were observed in the flavonoit and vitamin C amounts of the samples in the ultrasound pre-applied drying method in pure water. As a result of the phenolic profile analysis, a total of 9 components were determined, 8 of which are phenolic acid (gallic acid, protocatechic acid, syringic acid, ellagic acid, mcoumaric acid, caffeic acid, pcoumaric acid, ferulic acid) and 1 of them is flavonoit (chrysin). has been done. The antioxidan capacity of bioactive compounds did not show a statistically significant change according to different drying processes and drying parameters. In addition, flavonol amounts were not affected by drying processes. Total sugar content increased with increasing temperature in convection drying process and with increasing Watt power in microwave drying process. Compared to the convection dried samples, the ash content of the vacuum assisted convection dried samples with ultrasound pre-treatment was lower. There was no significant change in ΔE values with drying processes. The change in the shell strength value was found to be statistically insignificant in convection drying and microwave drying applications. In the SEM analysis, the effects of different drying techniques and the parameters used in drying techniques on the product texture were revealed. According to the analysis results of the samples dried with different drying techniques, convectionally dried at 70 ⁰C, microwaved at 720 W power, and convectionally dried samples with ultrasound pre-applied vacuum assisted at 70 ⁰C were stored. The total phenolic component, flavonoit content and antioxidant capacity values of the microwave dried samples at 720 W remained more stable against the increase in storage time compared to the samples dried with the other two techniques.
