Bu tez çalışmasında muz dilimlerinin puf kurutulmasının optimizasyonu için Yanıt Yüzey Metodu kullanılmıştır. Bağımsız değişkenler ise hava kurutmada fırın sıcaklığı, (T:40-80°C), hava kurutma sonundaki ürünün nem değeri (M: %25-65), puf işlemi sırasındaki gösterge basınç değeri (P:0-4 bar), ve puf işlemi sırasındaki basıncın uygulanma süresi (Pt: 0-20 dk.) olarak belirlenmiştir. Yanıtlar ise kuruma süresi (KS, dk.), hammaddeye göre hacimsel küçülme (Vdeğişim, %), hammaddeye göre kalınlık değişimi (RI, %), hammaddeye göre çap değişimi (Sd, %), ∆E değeri, rehidrasyon kapasitesi (RK), kabuk sertliği, elastikiyet ve ekserji verimliliği (𝜂, %) olarak belirlenmiştir. Optimum noktada sıcaklık (T) 71°C, hava kurutma sonrası muz dilimlerinin nem içeriği (M) %54, puf kurutmada uygulanan gösterge basınç değeri (P) 0 bar ve basınç süresi (Pt) de 0 dk. olarak belirlenmiştir. Optimum puf kurutma ile kurutulan örneklerde yapılan analizler sonucunda KS, 115±5 dk., Vdeğişim (%), 20.74±2.13, RI (%) 122.42±2.78, ∆E değeri 9.42±1.03 ve 𝜂 (%) değeri de 77.06±0.20 Olarak belirlenmiştir. Bulunan bu değerlerin modelin %95 tahmin ve güven aralığında olduğu tespit edilmiştir (p<0.05). Bu nedenle optimizasyon için yapılan doğrulama işlemi başarılı olmuştur. Optimum koşullarda puf kurutma (PK) ile kurutulan muz dilimleri 40, 50, 60, 70 ve 80°C'de hava ile kurutulan (HK40, HK50, HK60, HK70, HK80) ve liyofilizasyon (LY) ile kurutulan muz dilimleri ile kuruma süresi, hammaddeye göre hacimsel küçülme, kalınlık oranı, çap değişimi, renk değişimi, rehidrasyon kapasitesi, kabuk direnci, elastikiyet ve spesifik enerji tüketimi açısından karşılaştırılmıştır. Bununla birlikte, bu kurutma işlemlerinin kurutma kinetiği de incelenmiş, SEM görüntüleri üzerinden porozite ve gözenek çapları hesaplanarak karşılaştırma yapılmıştır. Buna göre, LY işleminin en uzun süreye, 80°C'de hava kurutma ve optimum puf kurutma işleminin ise en kısa süreye sahip olduğu tespit edilmiştir (p<0.05). Kurutmalar sonunda başlangıç hacme göre en az değişim LY işlemi sonucunda tespit edilmiştir (p<0.05). En yüksek kalınlık oranı optimum PK işleminde, hemen ardından LY işleminde tespit edilmiştir (p<0.05). En yüksek çap değişimi optimum PK işleminde tespit edilirken, en az değişim ise LY, HK40, HK60 ve HK70 işlemlerinde tespit edilmiştir (p<0.05). En az ∆E renk değişimi optimum PK işleminde ve hemen ardından LY işleminde tespit edilirken, en yüksek ∆E değeri HK40 ve HK50 işlemlerinde bulunmuştur (p<0.05). En yüksek rehidrasyon kapasitesi değeri optimum PK ile kurutulan muz dilimlerinde tespit edilmiştir (p<0.05). Hemen ardından LY ile kurutulan muz dilimleri gelmektedir (p<0.05). En yüksek kabuk direnci değeri LY ile kurutulan muz dilimlerinde tespit edilmiştir (p<0.05). Hemen ardından optimum PK ile kurutulan muz dilimleri gelmektedir (p<0.05). En yüksek elastikiyet değeri LY ve optimum PK ile kurutulan muz dilimlerinde tespit edilmiştir (p<0.05). Kurutma işleminde sıcaklık arttıkça kW cinsinden enerji tüketiminin arttığı tespit edilmiştir (p<0.05). Buna karşın sıcaklık arttıkça kWh cinsinden enerji tüketimi kurutma süresinin kısalmasından dolayı azalmaktadır (p<0.05). HK70 ve HK80 kurutma işlemlerinin kWh cinsinden en az enerji tüketimine ve en düşük spesifik enerji tüketimine sahip olduğu belirlenmiştir (p<0.05). LY kurutma işlemi en yüksek kWh cinsinden enerji tüketimine ve en yüksek spesifik enerji tüketimi değerine sahiptir. Optimum PK kurutma işlemi en yüksek enerji tüketimine (kW cinsinden) sahiptir. Bununla birlikte kWh cinsinden enerji tüketimi ve spesifik enerji tüketimi açısından orta sıralardadır. Bu sonuçların PK cihazının yalıtımının henüz tam olarak iyi olmamasından kaynaklandığı düşünülmektedir. En yüksek porozite değerleri ve en yüksek ortalama gözenek çapı değerleri optimum PK ve LY işlemlerinde tespit edilmiştir. Bu tez çalışmasının sonucu olarak, optimum koşullarda PK yöntemiyle üretilen muz kurularının birçok kalite kriterinde LY ve kontrol gruplarından daha iyi olduğu ve bu çalışmanın sanayi ve literatüre önemli katkısının olacağı düşünülmektedir. In this thesis, Response Surface Method was used to optimize the puff drying of banana slices. The independent variables were oven temperature during air drying (T: 40-80°C), moisture value of the product at the end of air drying (M: 25-65%), gauge pressure value during the puff process (P: 0-4 bar), and the time of application of pressure during the puff process (Pt: 0-20 min.). Responses were determined as drying time (KS, min.), volumetric reduction with respect to raw material (Vchange, %), thickness change with respect to raw material (RI, %), diameter change with respect to raw material (Sd, %), ∆E value, rehydration capacity (RK), shell hardness, elasticity and exergy efficiency (𝜂, %). At the optimum point, the temperature (T) was 71°C, the moisture content (M) of banana slices after air drying was 54%, the indicative pressure value (P) applied in puff drying was 0 bar and the pressure duration (Pt) was 0 min. As a result of the analysis of the samples dried with optimum puff drying, KS was determined as 115±5 min, VChange (%), 20.74±2.13, RI (%) 122.42±2.78, ∆E value 9.42±1.03 and 𝜂 (%) value 77.06±0.20. These values were found to be within the 95% prediction and confidence interval of the model (p<0.05). Therefore, the validation process for optimization was successful. Banana slices dried by puff drying (PK) under optimum conditions were compared with banana slices dried by air drying at 40, 50, 60, 70 and 80°C (HK40, HK50, HK60, HK70, HK80) and lyophilization (LY) in terms of drying time, volume reduction, thickness ratio, diameter change, color change, rehydration capacity, peel resistance, elasticity and specific energy consumption. In addition, the drying kinetics of these drying processes were also examined, and porosity and pore diameters were calculated from SEM images and compared. Accordingly, it was found that the LY process had the longest time, while air drying at 80°C and optimum puff drying had the shortest time (p<0.05). At the end of the drying processes, the least change in the initial volume was determined as a result of the LY process (p<0.05). The highest thickness ratio was found in the optimum PK treatment, followed by the LY treatment (p<0.05). The highest diameter change was found in the optimum PK treatment, while the least change was found in the LY, HK40, HK60 and HK70 treatments (p<0.05). The lowest ∆E color change was found in the optimum PK treatment followed by the LY treatment, while the highest ∆E value was found in the HK40 and HK50 treatments (p<0.05). The highest rehydration capacity value was found in banana slices dried with optimum PK (p<0.05). It was followed by banana slices dried with LY (p<0.05). The highest peel resistance value was found in banana slices dried with LY (p<0.05). It was followed by banana slices dried with optimum PK (p<0.05). The highest elasticity value was found in banana slices dried with LY and optimum PK (p<0.05). It was determined that energy consumption in kW increased as the temperature increased in the drying process (p<0.05). On the other hand, as the temperature increases, energy consumption in kWh decreases due to the shortening of the drying time (p<0.05). It was determined that HK70 and HK80 drying processes had the lowest energy consumption in kWh and the lowest specific energy consumption (p<0.05). LY drying process has the highest energy consumption in kWh and the highest specific energy consumption value. The optimum PK drying process has the highest energy consumption (in kW). However, it ranks in the middle in terms of energy consumption in kWh and specific energy consumption. These results are thought to be due to the fact that the insulation of the PK device is not yet fully good. The highest porosity values and the highest average pore diameter values were found in the optimum PK and LY processes. As a result of this thesis study, it is thought that the dried bananas produced by PK method under optimum conditions are better than LY and control groups in many quality criteria and this study will make a significant contribution to the industry and literature.
