Pankekler, geniş bir coğrafyada yaygın olarak tüketilen, kahvaltı ve tatlılarda tercih edilen popüler bir yiyecektir. Bu çalışmada, geleneksel pankeklerin içeriğinde bulunan yumurta, un, süt, şeker ve kabartma tozu gibi bileşenlerin yerine bitkisel bazlı alternatiflerin kullanımı araştırılmış ve glüten içermeyen, vegan bir pankek formülasyonunun geliştirilmesi amaçlanmıştır. Çalışmanın odak noktası, yumurta yerine nohut haşlama suyu (aquafaba) ve buğday unu yerine protein ve lif içeriği zengin badem, hindistan cevizi ve karabuğday ununun kullanım potansiyeli incelenmiştir. Araştırmanın ilk aşamasında, farklı sürelerde (30, 45 ve 60 dakika) ve nohut haşlama suyu oranlarıyla ((1:1, 1:2, 1:3 (w/v)) üretilen aquafabanın köpüklenme ve emülsiyon stabilitesi incelenmiş ve en iyi sonuçlar, düdüklü tencerede 30 dakika pişirme süresi ve 1:1 oranında elde edilmiştir. İkinci aşamada ise, nohut haşlama suyuyla farklı oranlardaki un karışımlarından yapılan pankeklerin fiziksel, kimyasal ve duyusal özellikleri değerlendirilerek, formülasyon optimize edilmiştir. Elde edilen sonuçlara göre pankek formülasyonlarında, toplam yağ (%), toplam protein (%) ve kül (%) değerleri glütenli-vegan pankek için sırasıyla 0.24, 7.75 ve 2.39, glütensiz vegan pankek için ise 14.38, 7.75 ve 4.01 olarak tespit edilmiştir. Çözünür ve çözünmez diyet lifi tayini (g/100g) ise AOAC 991.43 metodu ile yapılmış olup glütenli vegan ve glütensiz vegan pankekte sırasıyla 0.72 ve 5.29 olarak bulunmuştur. Üretilmiş olan tüm formülasyonlarda şeker yerine glisemik indeksi sıfır olarak nitelendirilen eritritol kullanılarak düşük karbonhidratlı pankek formülasyonları elde edilmiştir. Sonuç olarak; optimum şartlarda üretilen aquafabanın, yumurta ikamesi olarak glütensiz-vegan pankek üretiminde badem, hindistan ve karabuğday unları ile birlikte kullanılmasıyla elde edilen formülasyonun tüketici beğenilirliğinin yüksek olduğu saptanmıştır. Ayrıca tamamen bitkisel kaynaklı protein içeren, yüksek lif oranına sahip, şeker ilavesiz ve glüten içermeyen katma değeri yüksek bir ürün olarak tüketiciye ve ekonomiye kazandırılması sağlanmıştır. Pancakes are a popular food consumed widely in various regions, preferred for breakfast and desserts. This study aims to investigate the use of plant-based alternatives instead of traditional pancake ingredients such as eggs, flour, milk, sugar, and baking powder, with the goal of developing a gluten-free, vegan pancake formulation. The focus of the study is to examine the potential use of protein and fiber-rich almond, coconut, and buckwheat flours as substitutes for chickpea cooking water (aquafaba) and wheat flour as an egg replacement. In the initial stage of the research, aquafaba was produced using different cooking times (30, 45, and 60 minutes) and ratios of chickpea cooking water (1:1, 1:2, 1:3 w/v), and its foaming and emulsion stability were examined. The best results were obtained with a cooking time of 30 minutes in a pressure cooker and a 1:1 ratio. In the second stage, pancakes were prepared using various ratios of chickpea cooking water and flour mixtures, and their physical, chemical, and sensory properties were evaluated to optimize the formulation. According to the results, the total fat (%), total protein (%), and ash (%) values in the pancake formulations were determined as 0.24, 7.75, and 2.39, respectively, for the gluten-containing vegan pancakes, and 14.38, 7.75, and 4.01, respectively, for the gluten-free vegan pancakes. The determination of soluble and insoluble dietary fiber (g/100g) was performed using the AOAC 991.43 method, yielding values of 0.72 and 5.29 for the gluten-containing vegan and gluten-free vegan pancakes, respectively. All formulations were prepared using erithritol, characterized as a zero glycemic index sweetener, instead of sugar, resulting in low-carbohydrate pancake formulations. In conclusion, it was determined that aquafaba produced under optimal conditions, when used in conjunction with almond, coconut, and buckwheat flours as egg substitutes, resulted in a formulation for gluten-free vegan pancakes that was highly acceptable to consumers. Furthermore, the developed product, containing entirely plant-based protein, high fiber content, no added sugar, and being gluten-free, provides added value to consumers and the economy.
