Kurutma işlemi, besin maddelerinde bulunan su miktarının belirli bir seviyeye kadar azaltılarak gıdanın bozulmasının önlenmesi işlemidir. Buradaki amaç ise mikroorganizmaların gelişimini azaltarak, ürünün raf ömrünü arttırmaktır. Nane kurutma işleminde ise kurutulan nanenin hacim ve ağırlık azalışı, kullanım alanı ve pişirme yöntemine göre tat ve lezzet katışı, hasat dışı zamanlarda bile kullanılışı, depolanabilme kolaylığı, taşıma ve nakliye maliyetinin daha az olması gibi etkenler gibi olumlu özelliklere sahiptir. Bu çalışmada taze nane yaprakları sekiz farklı yöntem kullanılarak kurutulmuş ve kurutulan nanelerin kurutma yöntemine göre kuruma süresi, bazı kalite özellikleri incelenmiştir. Nane kurutma işlemi öncesinde ve sonrasında belirli duyusal analizlerle kurutma sıcaklığı ve mikrodalga gücü belirlenmiştir. Yapılan ön denemelerde naneye, 55 °C sıcak hava kurutma (SHK) , 360 W mikrodalga fırında kurutma (MK), 0,9 bar basınçta 60 °C’ de vakumlu kurutma (VK), -60 °C’de, 100 militorr vakumda dondurarak kurutma (liyofilizasyon) (LK), 60 °C’de infrared kurutma (IK), mikrodalga kurutma sonrası infrared kurutma (MKIK), infrared kurutma sonrası mikrodalga kurutma (IKMK) ve gölgede kurutma (GK) işlemi uygulanmıştır. Kurutma sırasında numunelerin ağırlık değişimleri düzenli aralıklarla ölçülmüştür. Taze nane örneklerinde ve kurutulmuş örneklerde kuruma süresi, toplam kuru madde, su aktivitesi (aw), toplam fenolik madde, antioksidan kapasitesi, renk analizi, esmerleşme indeksi, toplam flavanoid, toplam karotenoid, klorofil a ve klorofil b, aroma bileşenlerindeki değişimler ve kurutma sonrası duyusal özellikler incelenmiştir. Kurutma süresi en yüksek 7200 dakika ile gölgede kurutma işleminde, en düşük ise 8 dk ile mikrodalga kurutucuda gerçekleşmiştir. Kurutma sonrası nanenin su aktivite değeri 0,34-0,42 aralığında ölçülmüştür. Kurutma işleminden sonra C.I.E. L*, a*, b* değerleri ölçülmüştür ve değerler bazı gruplar arasında farklılıklar göstermiştir. Renk değişimi (ΔE) 28,75-35,30 arasındadır. Renk değişimi en fazla infrared sonrası mikrodalga kurutmada olmuştur. Renk değişimi en az ise mikrodalga sonrası infrared kurutma yönteminde gözlenmiştir. Esmerleşme indeksi (BI) 22,53-39,98 aralığında değişmektedir. En yüksek değer gölgede kurutma yönteminde gözlenmiştir. Toplam fenolik madde içeriği 2,55-9,78 mg GAE/g KM arasında değişmektedir. Fenolik madde en fazla gölgede kurutma yönteminde görülmüştür. En az fenolik madde ise infrared kurutma yönteminde görülmüştür. Antioksidan aktivite değeri 10,07-61,33 µmol T.E./g KM aralığında değişmektedir. Antioksidan aktivite değeri en yüksek kurutma şekli gölgede kurutmada belirlenmiştir. En düşük antioksidan değeri ise mikrodalga sonrası infrared kurutmada tespit edilmiştir. Kurutulmuş örneklerin klorofil a değeri 0,39-0,52 mg/g aralığında bulunmuştur. En yüksek klorofil a değeri vakumda kurutma yönteminde gözlenmiştir. Klorofil b değerleri ise 0,19-0,81 mg/g aralığında bulunmuştur. Toplam flavonoid miktarı 0,55-1,13 mg/g KM aralığında bulunmuştur. Kurutma sonrası toplam karotenoid miktarı ise 9,43-12,11 mg/100g KM aralığında bulunmuştur. Aroma bileşenleri analizinde ise taze nanelerde ve kuru nanelerde en çok karvon ve limonen bileşiği tespit edilmiştir. Duyusal olarak değerlendirme analizinde ise panel grubundaki panelistler farklı yöntemlerle kuruyan naneleri koku, renk ve genel izlenim olarak duyusal değerlendirme formuna göre değerlendirmişlerdir. Renk olarak en fazla beğenilen gölgede kurutma, koku olarak en fazla beğenilen gölgede kurutma, genel izlenim olarak ise gölgede kurutma örnekleri duyusal olarak beğenilmiştir. Drying is the process of preventing food spoilage by reducing the amount of water in foodstuffs to a certain level. The aim here is to increase the shelf life of the product by reducing the development of microorganisms. In the mint drying process, the dried mint has positive features such as volume and weight reduction, adding taste and flavor according to the area of use and cooking method, use even in non-harvest times, ease of storage, less transportation and transportation costs. In this study, fresh mint leaves were dried using eight different methods and the drying time and some quality characteristics of the dried mint were examined according to the drying method. Drying temperature and microwave power were determined by certain sensory analyzes before and after the mint drying process. In the preliminary experiments, hot air drying at 55 °C (SHK), 360 W microwave oven drying (MK), vacuum drying at 60 °C at 0.9 bar pressure (VK), freeze drying (lyophilization) at -60 °C in 100 millitorr vacuum (LK), infrared drying at 60 °C (IK), infrared drying after microwave drying (MKIK), microwave drying after infrared drying (IKMK) and shade drying (GK) were applied to the mint. The weight changes of the samples were measured at regular intervals during drying. Drying time, total dry matter, water activity (aw), total phenolic matter, antioxidant capacity, color analysis, browning index, total flavanoids, total carotenoids, chlorophyll a and chlorophyll b, changes in aroma components and sensory properties after drying were investigated in fresh and dried mint samples. The highest drying time was 7200 minutes in the shade drying process and the lowest was 8 minutes in the microwave dryer. The water activity value of mint after drying was measured in the range of 0.34-0.42. C.I.E. L*, a*, b* values were measured after drying and the values showed differences between some groups. Color change (ΔE) was between 28.75-35.30. The color change was the highest in microwave drying after infrared. The least color change was observed in infrared drying method after microwave drying. Browning index (BI) varies between 22,53-39,98. The highest value was observed in shade drying method. Total phenolic matter content varied between 2.55-9.78 mg GAE/g KM. The highest phenolic content was observed in shade drying method. The lowest phenolic content was observed in infrared drying method. Antioxidant activity value ranged between 10.07-61.33 µmol T.E./g KM. The highest antioxidant activity value was determined in shade drying. In the analysis of aroma components, the most carvone and limonene compounds were detected in fresh and dried mints. In the sensory evaluation analysis, the panelists in the panel group evaluated the dried mints with different methods according to the sensory evaluation form as smell, color and general impression. Shade drying was the most appreciated in terms of color, shade drying was the most appreciated in terms of odor, and shade drying samples were sensory appreciated in terms of general impression.
