<p>Gastronomi kavramı, son zamanlarda hem kültürel hem de bilimsel alanda çok popüler bir konu haline gelmiştir. Gastronomi kavramı önceleri turizm içinde bir faaliyet olarak anılırken, zamanla gastronomi turizmi ismiyle bir turizm türü olarak yazında yerini almıştır Çalışmanın amacı, Türkiye’de gastronomi turizmi alanında gerçekleştirilen bilimsel çalışmaları bibliyometrik olarak incelemek, gelişim ve yönelimlerini ortaya koymaktır. Araştırmanın evrenini, Türkiye’de lisans (fakülte/yüksekokul) ve ön lisans (meslek yüksekokulu) düzeyinde öğretim verilen üniversitelerdeki akademisyenlerin bilimsel çalışmaları oluşturmaktadır. Bu kapsamda Yüksek Öğretim Kurulu (YÖK) Akademik veri tabanında “gastronomi turizmi” konu başlığında 1990-2019 tarih aralığında yapılan çalışmalara yönelik tarama gerçekleştirilmiş ve konuyla ilgili çalışmalara ilişkin verilere ulaşılmıştır. Bu kapsamda yer alan bilimsel çalışmalar; araştırma alanları, yıllara göre yayın sayıları, yayın türleri, yayın dilleri, veri tabanları, yayınlandığı dergi ve yayınlandığı ülke vb. ölçütlere göre incelenmiştir. Geçekleştirilen analiz sonuçlarına göre, Türkiye’de “Gastronomi Turizmi” başlığı kapsamında 2019 yılı sonu itibariyle araştırmacılar tarafından kaleme alınmış 17 proje, 268 bildiri, 161 makale, 18 kitap, 47 tez ve 1 adet sanatsal faaliyet tespit edilmiştir. Gastronomi turizmi ile ilgili bilimsel yayın faaliyetlerinin en fazla sosyal bilimler alanında kaleme alındığı, bununla birlikte, Türkiye’de Gastronomi Turizmi kapsamında gerçekleştirilen çalışmaların ağırlıklı olarak makale ve bildiri türünde kaleme alındığı görülmüştür. </p> |

<p>The concept of gastronomy has recently become a very popular subject in both cultural and scientific fields. While the concept of gastronomy was previously mentioned as an activity within tourism, it has taken its place in the literature as a tourism type with the name of gastronomy tourism over time. The aim of this study is to analyze and demonstrate the development and orientations of the scientific studies which have been carried out in the field of gastronomy tourism in Turkey. The study population made up of scientific studies of academics teaching at graduate (faculty or college) and undergraduate (vocational high schools) level departments of universities in Turkey. In this context, a litarature review was carried out under the title of “gastronomy tourism” in the academic database of the Council of Higher Education (YÖK) for studies conducted between years 1990-2019 and data on the studies related to the subject were obtained. Scientific studies within this scope are examined according to criteria such as research areas, number of publications by year, types of publications, publication languages, databases, the magazine it is published in and the country it is published. With respect to the bibliometric analysis, in Turkey "gastronomic tourism" under the heading drafted by the researchers by the end of 2019, 17 projects, 268 proceedings, 161 articles, 18 books, 47 dissertations and 1 art activities have been identified. According to the analysis results, it was determined that scientific publication activities related to gastronomy tourism were mostly written in the field of social sciences. Additionally, the scope of scientific studies performed in the field of Gastronomy Tourism in Turkey has been found to be mainly of articles and congress proceedings. </p> |
