Ekonomik faaliyetlerin büyük oranını oluşturan gıda sektörüne yönelik çalışmalar yapılması, sektöre yönelik politikalar ortaya konması, gıda güvencesinin sağlanması ve gıda sektörünün rekabetçi bir yapıya kavuşturulması, sektörde faaliyet gösteren tüm aktörlerin kalkınmasının sağlanması bakımından önemlidir. Gıda sanayi içinde un ve unlu mamuller sektörü Türkiye'de oldukça önemli olup TR52 bölgesi ilgili sektörde öncü konumdadır. Sektörün rekabetçiliğini sağlayarak ülke ekonomisine olan katkıları için işletmelerin yenilik faaliyetlerini ne ölçüde uyguladıklarının belirlenmesi önem arz etmektedir. Bu bağlamda ilgili çalışmada, TR52 bölgesi unlu mamuller sektöründeki bisküvi ve kek alt grubunda faaliyet gösteren işletmelerin ürün, hizmet, süreç ve pazarlama inovasyonları ile organizasyonel inovasyonların ve bu inovasyonları etkileyen faktörlerin analiz edilmesi amaçlanmıştır. Araştırma bölgesindeki firmalarla yapılan anketler sonucunda ilgili sektörde faaliyet gösteren işletmelerin %94'ünün ürün inovasyonu, %36'sının hizmet ve süreç inovasyonu, %84'ünün pazarlama inovasyonu %55'inin ise organizasyonel inovasyon gerçekleştirdikleri belirlenmiştir. İşletmelerin ürün inovasyonuna yönelik hipotez test sonuçlarına göre, çalışma kapsamında test edilen tüm değişkenlerin ürün inovasyonu gerçekleştirmede etkili olmadığı belirlenmiştir. Hizmet inovasyonu ile faaliyet süresi, başka ülkede faaliyette bulunma ve patent başvurusunda bulunma değişkenleri arasında istatistiksel olarak anlamlı bir fark olduğu belirlenmiştir. Süreç inovasyonuna ilişkin hipotez tez sonuçlarına göre; faaliyet süresi, Ar-Ge biriminin varlığı, patent başvurusu ve ihracat yapma değişkenleri ile süreç inovasyonu gerçekleştirme oranı arasında istatistiksel olarak anlamlı bir fark vardır. Pazarlama inovasyonuna ilişkin bulgular incelendiğinde, işletmelerin pazarlama inovasyonu gerçekleştirme oranları ile yalnızca Ar-Ge biriminin varlığı ve ihracat yapma değişkenleri arasında anlamlı bir ilişki olduğu tespit edilmiştir. Organizasyonel inovasyon gerçekleştirme oranları ise faaliyet süresi, Ar-Ge biriminin varlığı ve ihracat yapıp yapmama değişkenleri ile anlamlı bir ilişki içindedir. Öte yandan inovasyon gerçekleştirme kabiliyeti ile işletmelerin iç ve dış bilgi kaynaklarını kullanabilme oranları arasındaki bağın zayıf olduğu görülmüştür. It is important to carry out for the food sector, which constitutes the majority of economic activities, to put forward policies fort the sector, to ensure food security and to bring the food sector to a competitive structure and to ensure the development of all actors operating in the sector. The flour and bakery products sector within the food industry is very important in Turkey and the TR52 region is pioneer in the relevant sector. It is important to determine the extent to which enterprises implement innovation activities in order to contribute to the country's economy by ensuring the competitiveness of the sector. In this context, it is aimed to analyze the product, service, process and marketing innovations and organizational innovations and the factors affecting these innovations of the enterprises operating in the biscuit and cake sub-group in the bakery products sector of the TR52 region. As a result of the surveys conducted with the companies in the research region, it was determined that 94% of the enterprises operating in the relevant sector carried out in product innovation, 36% in service and process innovation, 84% in marketing innovation and 55%in organizational innovation. According to the hypothesis test results of enterprises for product innovation, it was determined that not all the variables tested within the scope of the study were effective in realizing product innovation. It was determined that there was a statistically significant difference between the variables of service innovation and duration of activity, operating in an other country and applying for a patent. According to the hypothesis results on process innovation; There is a statistically significant difference between the activity period, existence of R&D unit, the patent application and export variables and the rate of innovation. When the findings related to marketing innovation were examined, it was determined that there was a significant relationship between the rates of realization of marketing innovation of enterprises and the existence of only the variables of R&D unit and the exporting. Organizational innovation realization rates have a significant relationship the variables of the duration of activity, the precence of the R&D unit and whether to export or not. On the other hand, it was seen that the link between the ability to innovate and the rates of use of internal and external information resources by enterprises was weak.
