Çilek (Fragaria ananassa L.) meyvesi zengin besinler ve biyoaktif bileşenler içerir. Olgunlaşma sürecinden kaynaklanan doku yumuşaması nedeniyle taze meyvelerin raf ömrü çok kısadır. Meyvelerin raf ömrünü uzatmak için endüstride farklı dondurma ve kurutma işlemleri uygulanmaktadır. Meyvelerin kurutma işlemi ağırlık ve hacim kaybına bağlı olarak nakliye, depolama ve raf ömrü gibi birçok avantaj sağlar. Karbonik maserasyon (CM), kurutma teknolojisinde ön işlem olarak uygulanan yeni bir tekniktir. Bu teknikte, sıcaklık ve basınç kontrollü sistem içerisinde kurutulacak olan tarımsal ürünler belirli sürelerde tutularak yapılarında değişimler sağlanmaktadır. Bu değişimler kurutma işleminde yüksek performans ve kalite kriterleri açısından daha iyi ürünler sağlamaktadır. Bu tez çalışmasında, yanıt yüzey metodolojisi (RSM) kullanılarak hem CM hem de havayla kurutma sisteminin proses koşullarının optimize edilmesi amaçlanmıştır. Ayrıca bu koşullar altında ön işlem uygulanan ve uygulanmayan örnekler kıyaslanmıştır. CM'de sıcaklık, CO2 basıncı ve zaman bağımsız değişkenler olarak seçilirken; havayla kurutma işleminde sadece sıcaklık bağımsız değişken olarak seçilmiştir. Her iki kurutma işleminde de modelde yanıt olarak kurutma süresi, askorbik asit miktarı, antioksidan madde miktarı ve hue açısı değeri kullanılmıştır. CM işlemi sonucunda yapıda meydana gelen değişimler kurutma performansında önemli düzeyde ilerleme sağlamış ve kurutma süresini kısaltmıştır. Küresel ısınma ve iklim değişikliğinin oldukça önemli hale geldiği dünyamızda, kurutma süresinin kısalması çevreye salınan atık sıcak havayı azaltacaktır. Aynı zamanda kurutma işleminin hızlanması kalite kriterleri açısından etkili olan sıcaklık-süre ikilisinin olumsuz etkilerini de azaltmış; nihai ürünlerin fiziksel ve kimyasal özellikleri taze çileğe yaklaşmıştır. Tez çalışmasında materyal olarak sertifikalı organik Albion çilek çeşidi kullanılmış ve materyaller Konya/TÜRKİYE'den temin edilmiştir (TR-OT-014-081/02-32). Çalışmada çileklerin endüstriyel olarak kurutulmasında alt yapı bilgileri oluşturulmuş ve uygulanan ön işlem sayesinde kuruma süresi kısaltılarak enerji tasarrufu sağlanmıştır. Sonuçlar hem yarı kuru hem de tam kuru ürünlerde kurutma sıcaklığı, CM basıncı, CM sıcaklığı ve CM süresinin optimum parametrelerinin sırasıyla 64.8 °C, 0.35 MPa, 4.2 °C ve 4 saat olduğunu göstermiştir. Kuruma süresi açısından, CM ön işlemi ile havayla kurutma. CM'siz kurutma işlemine göretam kuru ürünlerde %31.5, yarı kuru ürünlerde %7.5 avantaj sağlamıştır. CM. bazı renk parametrelerini (L* ve hue açısı) önemli ölçüde artırırken, kontrol örneklerine göre esmerleşme indeksini azaltmıştır. CM ile muamele edilmiş numunelerde askorbik asit içeriği ve antioksidan aktivite önemli derecede korunmuştur ve dokusal özellikler kontrol numunelerine kıyasla daha yumuşak bulunmuştur. Bununla birlikte pH, titrasyon asitliği ve su tutma kapasitesindeki farklılıklar önemsizdir. Kurutulmuş ve yarı kurutulmuş organik çilek örnekleri üzerinde depolama sürecinin etkilerinin belirlenmesine yönelik 6 ay farklı koşullarda depolama yapılmış ve örneklerin fiziksel, kimyasal ve mikrobiyolojik özelliklerindeki değişimler araştırılmıştır. Depolama sürecinde optimum şartlarda CM işlemi uygulanarak kurutulan ve kontrol örnekleri arasında esmerleşme indeksi ve mikrobiyal yük açısından önemli bir fark bulunmamıştır. Depolama süresinin 6. ayında renkte bozulmalar artmış, parlak kırmızı renk azot gazı altında tutulan örnekler hariç, mat kırmızıya dönmüştür. Azot gazı altında muhafaza edilen tüm örnekler, mikrobiyal yük, renk, askorbik asit içeriği, toplam fenolik madde içeriği ve antioksidan aktivite gibi kalite parametreleri açısından vakum paketlenen ve kapalı ambalajlarda saklanan örneklere göre daha başarılı bulunmuştur. 4 °C depolama sıcaklığına sahip numuneler, yukarıda belirtilen kalite parametreleri açısından oda sıcaklığında saklanan numunelere göre daha başarılı olmuştur. Sonuç olarak havayla kurutma işleminde kullanılan CM ön işlemi, kuruma süresini kısaltmak için oldukça etkili bir yöntemdir. CM ile kuruma süresinin azaltılması üreticiler için ekonomik bir avantaj sağlamaktadır. Kurutulmuş çileklerin besin değerini ve rengini koruyarak maksimum raf ömrü ile depolamak için CM ile ön işlem görmüş çilekler %10 nem altında kurutularak 4°C'de azot gazı altında saklanmalıdır.

The shelf life of fresh fruits is very short due to the softening of the tissue resulting from the ripening process. To extend shelf life and storage of the fruit, different freezing and drying processes are being applied in the industry. Drying process of fruits provides several advantages such as transportation, storage, and increased shelf life based on weight and volume lose. The carbonic maceration (CM) is a new and limited technique applied as pre-treatment process at drying technology. In this technique, agricultural products to be dried in a temperature and pressure-controlled system are kept for certain periods and changes in their structures are derived. These changes provide better products in terms of high performance and quality criteria in the drying process. In this study, it was aimed to optimize process conditions of both CM and air-drying system using response surface methodology (RSM). In addition, those conditions were compared with and without pre-treatment applications. Temperature, CO2 pressure, and time period were chosen as the independent variables in CM, whereas only temperature was chosen in air drying process. The same model responses were used i.e., drying time, ascorbic acid, antioxidant activity and hue angle value in both drying processes. Changes in the texture because of the CM process provided a significant improvement in drying performance and a faster drying. In today's world, where global warming and climate change have become very important, shortening the drying time will reduce the waste hot air released into the environment. The changes in the structure as a result of the CM process provided a significant improvement in the drying performance and shortened the drying time. At the same time, the acceleration of the drying process also reduced the negative effects of the temperature-time couple, which is effective in terms of quality criteria, and the physical and chemical properties of the final products approached those of fresh strawberries. Certificated organic Albion variety were provided from Konya/ TÜRKİYE as strawberry material (TR-OT-014-081/02-32). Infrastructure information in the industrial drying of organic strawberries was created in the study and energy savings were achieved by shortening the drying time due to the applied pre-treatment. Results showed that the optimum parameters of drying temperature, maceration pressure, maceration temperature and maceration time for drying conditions were 64.8 °C, 0.35 MPa, 4.2 °C and 4 hours respectively in both semi-dry and fully dried products. Air drying with CM pre-treatment provides %31.5 advantage in fully dried products and %7.5 in semi-dryed products compared to drying without CM. CM significantly increased some color parameters (L* and hue angle) whereas it decreased browning index compared to control samples. Ascorbic acid content and antioxidant activity were significantly preserved in CM-treated samples, and the textural properties were weaker than control samples. On the other hand, differences in pH, titration acidity and water holding capacity were insignificant. In order to determine the effects of the storage processes on dried organic strawberry samples, samples were stored under different storage conditions for 6 months. Changes in the physical, chemical, and microbiological properties of the samples were investigated.There was no significant difference between the control samples and dried by applying CM treatment under optimum conditions in terms of browning index and microbial load during storage. In the 6th month of the storage period, color deterioration increased, and the bright red color turned to dull red, except for the samples kept under nitrogen gas. All samples stored under nitrogen gas were found more successful in terms of quality parameters i.e., microbial load, color, ascorbic acid content, total phenolic substance content and antioxidant activity than those of stored in vacuum packaging and sealed packaging. Samples with a storage temperature of 4 °C were more successful than samples stored at room temperature in terms of quality parameters mentioned above. As a result, the CM pre-treatment used in the air-drying process was a very effective method to shorten the drying time. Decreasing the drying time with carbonic maceration provides an economic advantage for the manufacturers. In order to preserve the nutritional value and colour of dried organic strawberries and store them with a maximum shelf life, CM pre-treated organic strawberries should be dried under 10% humidity and stored at 4°C under nitrogen gas.
