Gıda ürünlerinin tüketilmesinde, ürünün besin ve kalite özelliklerini yitirmeden raf ömürlerinin uzatılması için bazı işlemler uygulanmaktadır. Bu işlemlerin başında kurutma uygulamaları gelmektedir. Ürünlere kurutma uygulama yapılmasındaki amaç ürün içerisindeki su aktivitesinin (Aw) azaltılarak nem içeriğinin düşürülmesidir. Bunun yanında ürünün gerek taşınma gerek depolama koşullarında oluşabilecek mikrobiyal ve kimyasal bozulmaların minimum düzeye indirilmesi amacıyla sıcak hava ile kurutma yapılmaktadır. Endüstriyel olarak yapılan bu uygulamalar ürünün koruma metodu olarak ta tanımlanabilmektedir. Bu çalışmada, Antalya ilinde armut kurutma uygulamalarının yapıldığı kurutma sistemlerinin karşılaştırılması amacıyla kurutma denemeleri yapılmıştır. Geleneksel kurutma sistemi ve tasarımı yapılan kurutma sistemlerinde armut dilimleri numuneleri eş zamanlı şekilde kurutulmuştur. Tasarımı yapılan sistemin etkinliği ve kurutma kalitesi üzerindeki etkileri irdelenmiştir. Kurutulacak ürün bazında, tasarımı yapılan sistemde ürün özelliklerine uygun sıcaklık ve nem değerleri set edildiğinde kurutmanın stabilizasyonun ne yönde olacağı konusunda gözlemler yapılmıştır. Tasarımı yapılan sistemle yenilenebilir enerji kaynağı olan Güneş enerjisinden faydalanılarak meyve kurutmada, istenilen kalitede ve özelliklere uygun ürün elde edilmesi sağlanmıştır. Bu amaç doğrultusunda PLC ve Ardunio uygulamaları kullanılarak, tasarım sistemi için otomasyon kontrollü deney çalışmaları yapılmıştır. Kurutulan ürünlerde, kurutma sırasına gerçekleşen olayların ürünün içeriğine, duyusal özelliklerine ve kurutma performansına olan etkileri irdelenmiştir. Geleneksel kurutma ve yenilenebilir enerji kaynaklı tasarımı yapılan bu sistemde armut kurutulmuştur. Geleneksel kurutma sisteminde tepsiye dizilerek açık havada kurutma yapılmış ve ürün tartımları manuel şekilde ±0.01 g hassas terazi ile yapılmıştır. Geleneksel kurutmanın sonlandırılmasına, kurutma süresi kuruyan ürünün rengin ve ağırlık değişimine bakılarak karar verilmiştir. Denemelerde çapları 3 ile 6 mm arasına değişen kalınlıklarda armut dilimleri kurutulmuş ve kurutma performansları analiz edilmiştir. Denemeler boyunca tasarımı yapılan sistemde kurutucu kabin ve panel içerisine yerleştirilen sıcaklık ve sıcaklık-nem sensörleri ile değerler ölçülerek kaydedilmiş ve veri tabanına aktarılmıştır. Aynı zamanda sistem için yapılan otomasyon sistemi ile kurutma sırasında kabin ve panel sıcaklıkları ile kabin içi nem değerleri izlenip kontrol edilebilmiştir. Yenilenebilir enerji kaynaklı tasarımı yapılan sistemde kurutulan numunelerin kütle değişimleri her 1 dakikada ara ile ölçülmüştür. Deney çalışmalarında kabin içerisindeki nem %20-30 arasında set edilerek, kurutucu kabin içi nemin belli bir değere ulaşması sağlanmıştır. Nem değerinin belirlenen set değerleri dışına çıktığında klepe sistemi devreye girerek, kabin içerisinde oluşan nemin uzaklaştırılması sağlanmıştır. Kurutucu kabin içerisindeki nemin yükselmesi havanın neme doymasına ve ürün kurumasının yavaşlamasına sebep olacağından dolayı klepe sistemi kullanılmıştır. Tasarlanan sistemlerde kurutulan ürünlerin kuruma süreleri 4-6 saat arasında değişmektedir. Kurutma denemeleri sonucu kuruyan bazı armut numuneleri Süleyman Demirel Üniversitesi Gıda Mühendisliği'ne getirilerek su aktivitesi, nem tayini ve renk tayini gibi analizleri yapılmıştır. Bu çalışmalar sonucunda, geleneksel kurutma denemesi yapılan numuneler ile tasarımı yapılan Yenilenebilir Enerji Kaynaklı Kurutma denemesinde kuruyan numunelerin karşılaştırmaları yapılmıştır. Her iki sistemde kuruyan numunelerin nem tayinlerinin %17 altında çıkmasından dolayı kuru madde olarak kabul edilebileceği sonucuna varılmıştır. Ancak kurutma kalitesinin performansının değerlendirilmesinde, tasarımı yapılan Yenilenebilir Enerji Kaynaklı Kurutma sisteminde kuruyan numunelerin renk ve duyusal bazda özelliklerine bakılarak, her iki sistemdeki bulgularla ilgili karşılaştırmalar yapılarak değerlendirmelerde bulunulmuştur. In the consumption of foods, some processes are not carried out to extend the shelf life without losing the product and quality characteristics. At the beginning of these processes, drying should be performed. The purpose of drying the product is to reduce the moisture content by decreasing the water activity in the outcome. In addition to that, the product is dried with hot air in order to minimize the microbial and chemical deterioration that may occur during transportation and storage conditions. These industrial technics can also be defined as the protection method for the product. In this study, drying experiments were achieved in order to compare the drying systems in which pear drying practices are made in Antalya. The pear slice samples were dried simultaneously in the conventional drying system and the designed drying system. The efficiency of the designed system and its effects on the drying quality were examined during this experiment. On the basis of the product to be dried, when the temperature and humidity values suitable for the product. With the designed system, it has been ensured that products of the desired quality and specifications are obtained in the fruit drying process by making use of solar energy, which is a renewable energy source. For this purpose, automation-controlled experiments were performed for the design system by using PLC and Arduino practices. In dried products, the effects of events during drying on the content, organoleptic properties, and drying performance of the product were examined. In this system, which is designed with traditional drying and renewable energy sources, pears are dried. In the traditional drying system, drying was done in the open air by arranging it on the tray and the product was weighed manually with a ±0.01 gr precision scale. It was decided to terminate the traditional drying by looking at the color and weight change of the drying time of the dried product. In the experiments, pear slices with diameters varying between 3 and 6 mm were dried and their drying performance was analyzed. During the trials in the designed system, the values were recorded and transferred to the database after they were measured with the temperature and temperature-humidity sensors placed in the dryer cabinet and the panel. The changes in the mass of the samples dried in the system designed with renewable energy sources were measured every 1 minute. In the experimental studies, the humidity in the dryer cabinet was ensured to reach a certain value by setting the humidity in the cabinet between 20-30%. When the humidity value exceeds the determined values, the valve system is activated in order to remove the moisture that formed in the cabin. The valve system is used because the increase in the humidity level in the dryer cabinet will cause the air to become saturated with moisture and that could slow down the drying process of the product. The drying times of the products which dried in the designed systems vary between 4-6 hours. Some pear samples that were dried as a result of drying experiments were brought to "Süleyman Demirel University" Food Engineering Department to be analyzed for water activity, moisture and color determination. As a result of these studies, comparisons were made between the samples in the conventional drying trial and the designed system with the Renewable Energy Source trail. It was concluded that the dried samples in both systems could be considered dry matter since their moisture levels are determined below 17%. In addition, in the evaluation of the performance of the drying quality, the color and organoleptic characteristics of the samples dried in the designed system with Renewable Energy Source were evaluated by the comparisons made with the findings in both systems.
