Son yıllarda sağlık ve beslenme bilinci artan tüketicilerin gıda katkı maddeleri hakkındaki endişelerinin artmasıyla doğal ve "temiz etiketli" ürünlere olan ilgi giderek artmaktadır. Gıdalara renk vermek amacıyla kullanılan gıda boyaları, gıda katkı maddeleri grubunda değerlendirilmektedir. Bitkisel ürünlere kırmızı, mor-mavi renk veren antosiyaninler, yapay boyalara önemli bir alternatif oluşturmakta ve doğal gıda boyası olarak kullanılmaktadırlar. Antosiyaninlerin çarpıcı renkleri nedeniyle doğal gıda renklendiricisi olarak kullanımlarının yanı sıra antioksidan etkileri nedeniyle gıdalara eklenerek fonksiyonel gıda ürünleri geliştirme üzerine yapılan araştırmalar giderek artmaktadır. Köpük kurutma tekniği (Foam Mat Drying-FMD), kurutma hızının arttıran, kuruma süresini kısaltan ve kurutulan ürün kalitesini korumayı hedefleyen kurutma yöntemlerinden biridir. Bu çalışmada önemli bir antosiyanin kaynağı olan siyah havuçtan konvansiyonel köpük kurutma (FMD) ve dondurarak köpük kurutma tekniği (FMFD) ile siyah havuç tozları üretilmiştir. Üretilen tozlarda fizikokimyasal özellikler, renk ve antioksidan özellikler belirlenmiş, farklı ambalajlarda ve depolama sıcaklıklarında 90 gün süresince bu özelliklerindeki değişimler incelenmiş, model gıdalarda doğal gıda renklendirici olarak kullanım potansiyeli değerlendirilmiştir. Köpük oluşturmada karboksimetil selüloz (CMC-%0,5) ve yumurta akı (YA-%1) kullanılmıştır. FMD için köpükler kurutma tepsilerine yayılarak 65, 70 ve 75 ° C sıcaklıklarda kurutulmuştur. FMFD için, köpük dondurulmuş ve yaklaşık 100 Pa mutlak basınç altında liyofilize kurutulmuştur. Kurutma sonunda örnekler öğütücüde toz hale getirilmiştir. Elde edilen tozlarda nem, su aktivitesi, toplam çözünür kurumadde, higroskopisite, akabilirlik, rehidrasyon oranı, partikül yoğunluğu, renk değerleri ile toplam antosiyanin miktarı, toplam fenolik madde miktarı, antioksidan aktivite (TEAC ve DPPH) belirlenmiştir. Nem içeriği, FMD tozlarda %2,8±0,5; FMFD tozlarda %7,7±0,5 olarak tespit edilmiştir. Tozların siyah havuç pulpu ile kıyaslanan toplam renk değişimi (ΔE) en düşük FMD-65 örneklerinde belirlenmiştir. Toz örneklerde toplam antosiyanin miktarı 2296,0–3883,6 mg/ kg k.a., toplam fenolik madde değeri 12632,8-46945,6 mg/kg k.a., TEAC 165,17 – 240,9 mM/g k.a. ve DPPH değeri %51,41 – 75,31 aralığında bulunmuştur. FMD-65 örneğinde toplam antosiyanin miktarı, toplam fenolik madde miktarı, TEAC ve DPPH değerleri sırasıyla 3883,6 mg/kg k.a., 32432,9 mg/kg k.a., 165.17 mM/kg k.a. ve %58.51 olarak kaydedilmiştir. En yüksek TEAC değerine sahip örnek FMFD (240,9 mM/kg) iken en yüksek toplam antosiyanin miktarı FMD-65 örneğinde (3883,6 mg/kg k.a.) tespit edilmiştir. ΔE değerleri düşük ve TEAC değerleri yüksek olan FMD-65 örnekleri ile depolama çalışmasına devam edilmiştir. Siyah havuç tozları (FMD-65) 25 ve 4°C depolama sıcaklığında kağıt ve alüminyum ambalaj materyalleri kullanılarak 90 gün boyunca depolanmıştır. Depolama süresince tozların 2 haftalık periyotlarda fiziksel ve biyoaktif özellikleri analiz edilmiştir. Depolama sonunda siyah havuç tozlarının antioksidan değerlerinde (TEAC ve DPPH) azalma görülürken, renk değerleri büyük ölçüde korunmuştur. Siyah havuç tozlarının doğal gıda renklendirici olarak kullanılma potansiyeli yumuşak şeker ve yoğurt olmak üzere iki farklı model gıdada denenmiştir. Farklı oranlarda FMD yöntemi ile kurutulan siyah havuç tozları model gıdalara eklenerek ticari gıda renklendirici ile üretilen model gıdalar ile kıyaslanmıştır. Duyusal değerlendirmede, siyah havuç tozu eklenerek üretilen örneklerle ticari gıda boyası eklenerek üretilen örnekler arasında önemli bir fark bulunmamıştır. Toplam fenolik madde içeriği ve TEAC değerleri siyah havuç tozu ilave edilen model gıdalarda daha yüksek bulunmuştur. Elde edilen tüm bu bulgular doğrultusunda köpük kurutma yöntemi ile kurutulan siyah havuç tozunun renklendirme ve gıda ürünlerinin biyoaktif özelliklerini arttırmak amacıyla çeşitli gıda sistemlerine dahil edilebileceği sonucuna varılmıştır. In recent years, the interest in natural and "clean label" products has been increasing with the increasing concerns of consumers who have increased health and nutrition awareness about food additives. Food dyes used to give color to foods are evaluated in the food additives group. Anthocyanins, which give red, purple-blue colors to herbal products, are an important alternative to artificial dyes and are used as natural food dyes. In addition to the use of anthocyanins as natural food colorants due to their striking colors, research on the development of functional food products by adding them to foods due to their antioxidant effects is increasing. The foam mat drying technique (FMD) is one of the drying methods that increase the drying speed, shortens the drying time and aims to preserve the quality of the dried product. In this study, black carrot powders were produced from black carrot, which is an important anthocyanin source, by conventional foam mat drying (FMD) and foam mat freeze drying technique (FMFD). The physicochemical properties, color and antioxidant properties of the produced powders were determined, the changes in these properties were examined in different packages and storage temperatures for 90 days, and the potential for use as a natural food colorant in model foods was evaluated. Carboxymethyl cellulose (0.5%) and egg white powder (1%) were used for foaming. For FMD, the foams were spread on drying trays and dried at 65, 70 and 75 °C. For FMFD, the foam was frozen and lyophilized under an absolute pressure of about 100 Pa. At the end of drying, the samples were pulverized in a grinder. Moisture, water activity, total soluble solids, hygroscopicity, flowability, rehydration rate, particle density, color values and total anthocyanin content, total phenolic content and antioxidant activity (TEAC and DPPH) were determined in the powders. Moisture content in FMD and FMFD powders were found to be 2.8±0.5% and 7.7±0.5%, respectively. The total color change (ΔE) of the powders compared with black carrot pulp was determined as the lowest in the FMD-65 samples. In powder samples, total anthocyanin amounts, total phenolic contents, TEAC values and DPPH values were in the range of 2296.0-3883.6 mg/kg d.w., 12632.8-46945.6 mg/kg d.w., 165.17 – 240.9 mM/g d.w. and 51.41 – 75.31%, respectively. Total anthocyanin content, total phenolic substance content, TEAC and DPPH values in the FMD-65 sample were recorded as 3883.6 mg/kg d.w., 32432.9 mg/kg d.w., 165.17 mM/kg d.w. and 58.51%, respectively. The sample with the highest TEAC value was FMFD (240.9 mM/kg d.w.), while the highest total amount of anthocyanin was detected in the FMD-65 sample (3883,6 mg/kg d.w.). Storage study continued with FMD-65 samples with low ΔE values and high TEAC values. The black carrot powders (FMD-65) were stored for 90 days using paper and aluminum packaging materials at 25 and 4°C storage temperatures. The physical and bioactive properties of the powders were analyzed in 2 week periods during storage. It was observed that the anthocyanin values of the powders stored in paper packaging were higher at 2, 4 and 6 weeks compared to the anthocyanin values of the powders stored in aluminum packaging. At the end of storage, the antioxidant values (TEAC and DPPH) of black carrot powders decreased, while the color values were largely preserved. The potential of using black carrot powders as a natural food colorant has been tested in two different models of food: jelly candy and yogurt. Black carrot powders dried by the FMD method at different rates were added to the model foods and compared with the model foods produced with commercial food colorant. Total phenolic content and TEAC values were higher in model foods with black carrot powder. In line with all these findings, it was concluded that black carrot powder dried by foam mat drying method can be included in various food systems to increase the coloring and bioactive properties of food products.
