Bu tez çalışmasında aspir, elemi ve kenevir yağları jelatin, sodyum aljinat ve arap zamkı polimerleriyle oluşturulan yanıt yüzey metodolojisi şartlarında enkapsüle edilmiştir. Üretilen mikrokapsüllerin verim hesabı yapılarak merkezi kompozit tasarım ile yanıt yüzey metodolojisinden elde edilen sonuçlar maksimize olarak optimize edilmiştir. Optimize edilen parametreler yardımıyla tekrar üretilen mikrokapsüllerin istatistiksel ve deneysel parametreleri hesaplanmıştır. Optimize edilen parametreler yardımıyla üretilen mikrokapsüllerin salınım özellikleri UV-Vis cihazında hekzan ortamında incelenmiştir. Kenevir yağı-JE/ALJ mikrokapsülleri için maksimize edilen teorik değer %EV=63,491 (deneysel %EV=62,780), kenevir yağı-JE/AZ mikrokapsülleri için maksimize edilen teorik değer %EV=72,026 (deneysel %EV=71,351) olarak bulunmuştur. Kenevir Yağı-JE/AZ mikrokapsüllerinin 1. dakikada %0,289 olarak hesaplanan kümülatif salınım değeri, 60. dakikada %26,128 olarak, 360. dakikada %49,319 olarak ve 2160. dakikada %67,282 olarak bulunmuştur. Kenevir Yağı-JE/ALJ mikrokapsüllerinin 1. dakikada %9,515 olarak hesaplanan kümülatif salınım değeri, 60. dakikada %55,005 olarak, 360. dakikada %82,194 olarak ve 720. dakikada %83,406 olarak bulunmuştur. Elemi yağı-JE/ALJ mikrokapsülleri için maksimize edilen teorik değer %EV=54,748 (deneysel %EV=53,294); elemi yağı-JE/AZ mikrokapsülleri için maksimize edilen teorik değer %EV=59,750 (deneysel %EV=58,386) olarak bulunmuştur. In this thesis, safflower, elemi and hemp oils were encapsulated under the conditions of response surface methodology formed by gelatin, sodium alginate and gum arabic polymers. By calculating the efficiency of the produced microcapsules, the results obtained from the central composite design and the response surface methodology were maximized. Statistical and experimental parameters of the regenerated microcapsules were calculated with the help of optimized parameters. The release properties of the microcapsules produced with the help of optimized parameters were investigated in the UV-Vis device in hexane medium. Maximized theoretical value for hemp oil-JE/ALJ microcapsules was found to be EE%=63.491 (experimental EE%=62.780), while for hemp oil-JE/AZ microcapsules the maximized theoretical value was found to be EE%=72.026 (experimental EE%=71.351). The cumulative release value of hemp oil-JE/AZ microcapsules, which was calculated as 0.289% at the 1st minute, was found to be 26.128% at the 60th minute, 49.319% at the 360th minute and 67.282% at the 2160th minute. The cumulative release value of hemp oil-JE/ALJ microcapsules, which was calculated as 9.515% at the 1st minute, was found to be 55.005% at the 60th minute, 82.194% at the 360th minute and 83.406% at the 720th minute. Maximized theoretical value for elemi oil-JE/ALJ microcapsules EE%=54,748 (experimental EE%=53,294); Maximized theoretical value for elemi oil-JE/AZ microcapsules was found to be EE%=59,750 (experimental EE%=58.480). The cumulative release value of elemi oil-JE/AZ microcapsules, which was calculated as 3.239% at the 1st minute, was found to be 36.126% at the 60th minute, 57.547% at the 360th minute and 57.990% at the 720th minute. The cumulative release value of elemi oil-JE/ALJ microcapsules, which was calculated as 5.049 at the 1st minute, was 72.144% at the 60th minute, 77.909% at the 360th minute and 78.968% at the 2160th minute. Maximized theoretical value for safflower oil-JE/ALJ microcapsules EE%=57.770 (experimental EE%=57.280); The maximum theoretical value for safflower oil-JE/AZ microcapsules was found to be EE%=62.984 (experimental EE%=61,420). The cumulative release value of safflower oil-JE/AZ microcapsules, which was calculated as 4.354% at the 1st minute, was 29.79% at the 60th minute, 44.692% at the 360th minute and 58.100% at the 1440th minute. The cumulative release value of safflower oil-JE/ALJ microcapsules, which was calculated as 8.378% at the 1st minute, was found to be 39.549% at the 60th minute, 63.384% at the 360th minute and 75.621% at the 720th minute.
