Türkiye'de yerel halkın geleneksel yöntemlerle evsel ihtiyaçlarını gidermek için ürettiği bazı ürünler vardır. Bu ürünlerden olan kuşburnu ürünlerine olan talep son yıllarda beklenenin üzerinde artmış, endüstrileşme yoluna girmiştir. Bu nedenle geleneksel kuşburnu gıdalarının geliştirilmesine ve yeni ürünler bulunmasına ihtiyaç duyulmuştur. Bu tez çalışmasının en önemli amacı; Kurburnu (Rosa L. spp.) adı ile bilinen bitkilerden fonksiyonel ürünler elde etmek için üretim metotları bulmak ve bilinen geleneksel metotları geliştirmektir. Çalışmamıza gerekli olan kuşburnu meyveleri büyük ölçüde Süleyman Demirel Üniversitesi Botanik Bahçesi'nde bulunan Rosaryum parsellerinde sergilenmekte olan bitkilerden uygun dönemlerde hasat edilerek temin edilmiştir. Çalışmalarımıza da kullanılan örneklerin ait olduğu türler şöyledir: Rosa canina, R. dumalis, R. beggeriana, R. alba, R. gallica ve R. phoenicia' ya ait 19 genotip üzerinde çalışmalar yapılmıştır. Bu genotiplerden herbaryum örnekleri alınmış, tarafımızdan teşhis edilmiş ve GUL Herbaryumu'nda koruma altına alınmıştır. Tüm çalışmalardan fotoğraflar çekilerek önemli görülenler teze eklenmiştir. Üretilen fonksiyonel kuşburnu ürünleri; gıda ve kozmetik ve ham madde ürünleri olmak üzere 3 gruptur: Gıda kapsamında; Kuşburnu tarhanası, sirkesi, pestil ve sucuğu, şerbeti, kahvesi ve çayı. Kozmetik kapsamında; Kuşburnu masaj kremi, losyonu, yanık kremi ve ham madde kapsamında Kuşburnu yağlı suyu, tozu, kuşburnu çekirdek yağı ve tozu elde edilmiştir. Soğuk sıkımla elde edilen çekirdek yağı en düşük R, alba'da (%1,35), en yüksek R. canina'da (%4,38) elde edilmiştir. Yağ oranı genotipe göre değişmekle beraber yağın rengi ve kokusu fazla değişmemektedir. R. alba'nın çekirdekleri daha iri ve sert olduğundan makinayı zorlamaktadır. Kozmetik sektörü ise ihtiyacını çekirdekleri ezip kimyasal çözücülerle yağı elde edebilmektedir. Yağı alınmış çekirdekten kahve tozu üretimi daha kolay ve içimi daha uygun olmaktadır. R. alba' da meyvalar en iri, R. phoenicia' da ise en küçüktür. Meyve irileştikçe ve bitkide dikensizlik arttıkça meyvelerinin bozulması/çürümesi daha erken olmaktadır. Tezde uygulanan tüm metotlar tarafımızdan oluşturularak üretimde başarı ile uygulanmıştır. Bu çalışma, esasen 2021-2023 yılları arasında SDÜ. FEF. Biyoloji Bölümü'ndeki 'Ekolojik Ürünler Laboratuvarı'nda gerçekleştirilmiştir. Laboratuvarda bulunanlar laboratuvar imkânlarından; diğer materyaller piyasadan temin edilmiştir. Ürünler tüketici tercihine sunulmuş, anket metoduyla ürünün kalitesi anlaşılmaya çalışılmıştır. Ürünlerin çoğu hakkında raf ömrü deneyimimiz bulunmamaktadır. Duyusal analizlere göre; 6 ay geçmesine rağmen ürünlerde bozulma olmamıştır. Pestil, sucuk, tarhana, çay, sirke ve kremde marmelatta üretim metodu tasarımında başarımızın yüksek; kahvede başarımızın düşük olduğu kanaatindeyiz. Ürünleri geliştirme, raf ömrü belirleme ve ürünlerin kimyasal özellikleri ve kalitesi üzerine çalışmalarımız devam etmektedir. Beğenilen fonksiyonel kuşburnu ürünlerinin ticarileştirilme ve patent alma imkanı bulunmaktadır. There are some products produced by local people in Turkey to meet their domestic needs using traditional methods. The demand for rosehip products, which is one of these products, has increased more than expected in recent years and has entered the path of industrialization. For this reason, there was a need to develop traditional rosehip foods and find new products. The most important aim of this thesis is; it is to find production methods to obtain functional products from plants known as Kurburnu (Rosa L. spp.) and to develop known traditional methods. The rosehip fruits required for our study were largely obtained by harvesting at appropriate periods from the plants exhibited in the Rosarium plots in the Botanical Garden of Süleyman Demirel University. The species used in our studies belong to the following species: Studies were carried out on 19 genotypes belonging to Rosa canina, R. dumalis, R. beggeriana, R. alba, R. gallica and R. phoenicia. Herbarium samples of these genotypes were taken, identified by us and protected in the GUL Herbarium. Photographs were taken from all studies and those deemed important were added to the thesis. Functional rosehip products produced; There are 3 groups: food, cosmetics and raw material products: Within the scope of food; Rosehip tarhana, vinegar, fruit pulp and sausage, sherbet, coffee and tea. Within the scope of cosmetics; Rosehip oily water, powder, rosehip seed oil and powder were obtained within the scope of rosehip massage cream, lotion, burn cream and raw materials. The lowest R of seed oil obtained by cold pressing was obtained from alba (1.35%) and the highest was obtained from R. canina (4.38%). Although the oil content varies depending on the genotype, the color and smell of the oil do not change much. Since the seeds of R. alba are larger and harder, they strain the machine. The cosmetics industry can crush the seeds and obtain the oil using chemical solvents. Coffee powder production from defatted beans is easier and more convenient to drink. The fruits are the largest in R. alba and the smallest in R. phoenicia. As the fruit becomes larger and the spinelessness of the plant increases, the fruit spoils/decays earlier. All methods applied in the thesis were created by us and successfully applied in production. This study mainly covers SDU between 2021-2023. FEF. It was carried out in the 'Ecological Products Laboratory' in the Department of Biology. Those in the laboratory benefit from laboratory facilities; Other materials were obtained from the market. The products were presented to the consumer's choice, and the quality of the product was tried to be understood through the survey method. We do not have shelf life experience on most of the products. According to sensory analysis; Even after 6 months, the products have not deteriorated. We have high success in the production method design of fruit pulp, sausage, tarhana, tea, vinegar and cream and marmalade; We believe that our success in coffee is low. Our work on product development, shelf life determination, and chemical properties and quality of products continues.
