Kızılcık (Cornus Mas L.), askorbik asit, fenolik bileşen, antosiyanin ve antioksidanlarca zengin, bordo-kırmızı renkli bir meyvedir. Gıda endüstrisinde reçel, marmelat, şurup ve meyve suyu üretiminde kullanılan kızılcık meyvesi taze olarak tüketilebildiği gibi kuru halde veya konserve ve salamura halinde de tüketilebilmektedir. Çeşitli biyolojik ve farmakolojik etkilere sahip olduğu araştırmacalarla kanıtlanmış olan kızılcık meyvesi, içerdiği bileşenler sebebiyle potansiyel sağlığı teşvik edici bir gıda (nutrasötik) görülebilmektedir. Bu çalışmanın amacı kızılcık meyvesinin, köpük kurutma yöntemleri ile kurutulması ve elde edilen toz ürünün doğal bir gıda renklendirici olarak kullanılmasıdır. Kızılcık meyvesi sıcak suda bekletme işleminden sonra çekirdekleri ayrılmış püre haline getirilmiştir ve bu püreden köpük elde edilmiştir. Köpük oluşturmada (% 0.5) yumurta akı tozu kullanılmıştır. Elde edilen köpükler, kurutma tepsilerine yayılarak konvektif kurutucuda 60, 65 ve 70°C (FMD-60, FMD-65 ve FMD-70) sıcaklıklarda kurutulmuştur. Dondurarak köpük kurutma için (FMFD) elde edilen köpükler -20 C sıcaklıkta yaklaşık 4 saat dondurulmuş, dondurarak kurutma cihazında kurutulmuştur. FMD örneklerde nem %3, FMFD örneklerde %6,38 olarak tespit edilmiştir. Kurutulan köpükler öğütülerek toz haline getirilmiştir. Elde edilen toz ürünlerde fizikokimyasal analizler (pH, suda çözünür kuru madde tayini, nem, su aktivitesi, renk, toz analizleri (dağılabilirlik, higroskopite, kekleşme derecesi, rehidrasyon derecesi ve), biyoaktif özellikler (toplam monomerik antosiyanin, askorbik asit miktarı, toplam fenolik madde, antioksidan analizler (TEAC ve DPPH) gerçekleştirilmiştir Elde edilen tozların gıdalarda kullanım potansiyelini ve stabilitesini değerlendirmek amacıyla model gıda örneklerinde denemeler yapılmıştır. Model gıda örneği olarak seçilen yumuşak şeker ve kurabiye ürünlerinde yapay gıda boyası ile karşılaştırmalı olması amacıyla renk maddesi olarak ilave edilmiştir. Yumuşak şeker ve kurabiyeler duyusal analiz ile değerlendirilmiş, toplam renk değişimi (ΔE) sonuçları için kızılcık tozları, kızılcık püresi ile kıyaslanmıştır. Toplam renk değişimi (ΔE) en düşük FMD-60°C örneğinde görülmüştür. Örneklerde toplam fenolik madde miktarı 1662-2801 mg GAE/100 g kuru ağırlık aralığında değişmektedir. En yüksek toplam fenolik madde miktarı FMFD kurutulan örnekte en düşük değer ise FMD-70°C'de kurutulan örnekte olduğu görülmektedir. En yüksek antioksidan kapasite değerinin FMFD kurutulan örnekte olduğu görülmüş, FMD kurutulan örneklerin FMFD kurutulan örneğin antioksidan kapasite değerlerine yakın olduğu tespit edilmiştir. En yüksek DPPH değeri 60°C sıcaklıkta köpük kurutulan örneklerde görülmüştür. Toplam monomerik antosiyanin miktarı en düşük FMFD kurutulan örnekte olmakla birlikte en yüksek FMD-65°C kurutulan örnekte olduğu belirlenmiştir. En yüksek Askorbik asit miktarı FMFD kurutulan örnekte olduğu tespit edilmiştir. 60°C'de kurutulan tozlar model gıda örneği olan yumuşak şekerler ve kurabiye yapımına belirli oranlarda formülasyonlara eklenerek gıdalarda renklendirici olarak kullanımı değerlendirilmiştir. Gıda boyası içeren yumuşak şekerin TEAC değeri 6.2468 mM TE/g, kızılcık tozu katkılı yumuşak şekerin TEAC değeri ise 145.1455mM TE/g bulunmuştur. Gıda boyalı kurabiyelerin TEAC değeri 2.0658 mM TE/g, kızılcık tozu ilaveli kurabiyelerin TEAC değeri 1528.5288mM TE/g olarak bulunmuştur. Şekerlerde L değerleri arasındaki fark önemsiz bulunmuşken a ve b değerleri arasındaki fark önemli (p<0.05) bulunmuştur. Kurabiye örneklerinin iç ve dış kesitlerinde ise L ve b değerleri arasındaki fark önemli (p<0.05) bulunmuştur. Elde edilen bulgular doğrultusunda köpük kurutma yöntemi uygulanarak kurutulan kızılcık tozlarının doğal gıda renklendirici olarak kullanımı ve fonksiyonel gıda üretimine katkı sağlayabilmesi amacıyla çeşitli gıda sistemlerine dahil edilebileceği sonucuna ulaşılmıştır. This study aims to dry the cranberry fruit by foam drying methods and to use the obtained powder product as a natural food colorant. After soaking the cranberry fruit in hot water, its seeds were separated into puree, foam was obtained from this puree. Egg white powder (0.5%) was used to create foam. The foams obtained were spread on drying trays and dried in a convective dryer at temperatures of 60, 65 and 70°C (FMD-60, FMD-65 and FMD-70). The foams obtained for freeze-drying (FMFD) were frozen at -20°C for about 4 hours and then dried in a freeze-drying device. Moisture was found to be 3.01%±0.03% in FMD samples and 6.38%±0.85% in FMFD samples. The dried foams were ground into powder. In line with the findings, it was concluded that cranberry powders dried by applying the foam drying method can be included in various food systems to use them as natural food colorants and to contribute to functional food production.
